2 pounds grape tomatoes, halved
2 romaine hearts, quartered lengthwise and chopped
1/4 cup fresh basil leaves
1/4 cup Kalamata olives, chopped
8 ounces fresh mozzarella, cubed
2 tablespoons olive oil
1 clove garlic, minced
1 tablespoon red wine vinegar
Salt and pepper

Steps:

  • Add the tomatoes, romaine, basil, olives, mozzarella, olive oil and garlic to a large salad bowl. Dress with red wine vinegar and season with salt and pepper to taste. Toss well.

The presentation is beautiful and tastes so good! I teach my children, presentation is everything in cooking. At least I try, doesn't always come out the way I like. Anyhoo, this is a lovely, fresh, healthy salad. Did I say it is pretty too? ;)

1 - large red tomato, sliced (round slices)
1 - large yellow tomato, sliced (round slices )( or two red )
1 - medium cucumber, sliced (round)
8 ounce(s) fresh mozzarella cheese, sliced (round)
2 tablespoon(s) extra-virgin olive oil
1 tablespoon(s) lemon juice ( squeezed fresh )
1/8 teaspoon(s) fresh ground pepper
1/8 teaspoon(s) salt
1/3 cup(s) coarsely chopped fresh basil or lemon basil

Steps:

  • On a large serving platter, arrange slices to make four colums, vertically, overlapping slightly in a single row. Red tomatoe slices - one row, cucumber slices - next row, yellow tomatoe slices -another row, and mozzarella slices outside row. Or if you have a good eye, mix them up - whatever looks good to you.
  • In a small bowl, combine oil, lemon juice, salt and pepper, mix well. Drizzle over salad. Sprinkle basil on top. Serve.

1 cup diced English cucumber
1/2 cup fresh basil leaves, torn

1/2 small red onion, thinly sliced and rinsed under cold water
1/4 cup mascarpone cheese, at room temperature
2 teaspoons champagne vinegar, white wine vinegar or apple cider vinegar

1/2 teaspoon kosher salt

Steps:

  • For the salad: In a medium bowl, combine the arugula, tomatoes, strawberries, cucumbers, basil, mint, salt and onion. Toss gently to combine. Pile the salad onto a platter.
  • For the dressing: Using the same bowl, combine the mascarpone, vinegar, Dijon, salt and 2 teaspoons water. Whisk well until smooth. Spoon the creamy dressing over the salad and serve.

Your own take can be a variation on this one: Feel free to use large tomatoes, chop the vegetables as small or large as you like (roughly chopped has its charms), add other herbs like basil, mint or dill, or swap the feta for mozzarella.

1 cup diced red onion
2 garlic cloves, smashed to a paste with a little salt
3 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
2 roasted peppers, preferably orange or yellow, chopped
3 cups halved cherry tomatoes
3 cups chopped thin-skinned cucumber, such as Persian, skin on, in 1/2-inch cubes
1/2 cup chopped celery hearts, plus leaves
Kosher salt and black pepper
3 tablespoons roughly chopped flat-leaf parsley
4 ounces feta or queso fresco, crumbled (about 1 cup)

Steps:

  • Put onion, garlic, vinegar and olive oil in a large mixing bowl. Let macerate for 10 minutes.
  • Add roasted peppers, cherry tomatoes, cucumbers and celery. Season to taste with salt and pepper, and toss well. Let macerate for at least 20 minutes, tossing several times with the dressing. You can also prepare the ingredients in advance, and assemble the salad up to 1 hour before serving.
  • To serve, toss once more and transfer to a deep platter or wide bowl. Sprinkle with parsley and feta.

1 1/2 lbs grape tomatoes, cut in half lengthwise
2 romaine lettuce hearts, quartered lengthwise and cut into 1/2 inch pieces (12 ounces)

  • 1. Combine mozzarella, oil, shallot, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl. Coarsely shop half of basil leaves and add to mozzarella mixture; set aside while preparing tomatoes. Combine tomatoes and 1 teaspoon salt in separate bowl; transfer to colander set in sink and let drain for 15 minutes, stirring occasionally. (Tomatoes can be prepared up to an hour in advance).
  • 2. Tear remaining basil leaves into 1/2-inch pieces. Gently toss tomatoes, romaine, olives, vinegar, mozzarella mixture, and basil together in large bowl. Season with salt and pepper to taste, serve.
