CROWD-PLEASING CHICKEN SALAD



Crowd-Pleasing Chicken Salad image

I combined parts of several recipes to come up with this one. I'm a busy mother of five and like to fix meals that are quick and easy. I've served this salad at banquets and received many requests for the recipe.

Number Of Ingredients 14

3 cups cubed cooked chicken or turkey
1 cup mayonnaise
1/4 cup sour cream
1/4 teaspoon salt
Dash pepper
2 cups cooked rice
1 cup chopped celery
1/2 cup chopped green pepper
1/4 cup chopped onion
1 can (20 ounces) pineapple tidbits, drained
1 can (8 ounces) sliced water chestnuts, drained
1 cup shredded cheddar cheese
1/2 cup sliced almonds, toasted, optional
Cantaloupe, optional

Steps:

  • In a large bowl, combine the first five ingredients. Fold in rice, celery, green pepper, onion, pineapple, water chestnuts and cheese. Add almonds just before serving if desired. Serve on cantaloupe halves or wedges if desired, or use as a sandwich spread.

Chunky Chicken Salad is creamy and crunchy and full of flavor.

3 lbs. boneless chicken breasts (or prepared rotisserie chicken)
4 medium apples (gala or fuji), chopped
1 medium red onion, chopped
1 cup chopped celery
1 cup chopped walnuts OR pecans
1 cup mayonnaise
1/4 cup brown mustard
salt and pepper to taste

Steps:

  • If you're using boneless chicken breasts, place chicken in a large stockpot and cover with water.
  • Bring to a boil over medium-high heat. Reduce heat to low and cover.
  • Cook for 20 minutes or until no longer pink.
  • Chop or shred chicken.
  • In a large bowl, mix chicken with apple, onion, celery, walnuts, salt, and pepper. Toss with mayonnaise and mustard.
  • Store in the fridge.

A sweet, but healthy chicken salad. The sweet secret is dried cranberries. Awesome on homemade bread or on crackers. I spread cream cheese on the bread or crackers, and top with chicken salad.

  • Without breaking up large chicken pieces, empty canned chicken into medium bowl. Stir in mayonnaise, pickle, onion, sunflower seeds, and cranberries; mix until well blended and very large chicken chunks are broken up.

2 stalks celery, chopped
3 tablespoons mayonnaise
½ onion, finely diced
2 dill pickles, chopped
¼ teaspoon garlic powder

  • Combine the chicken, celery, mayonnaise, onion and pickle; mix well.
  • Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

1 medium red onion
1 bunch celery
1 cup walnuts

  • Cook chicken.
  • Chop coarsely.
  • Wash all fruits and vegetables.
  • Chop them all coarsely.

I have made this for bridal & baby showers and the women love it. I serve it on a mini croissant with fancy lettuce. It can also be served on a bed of fancy lettuce greens topped with crispy Chinese style noodles and fresh fruit on the side. Just lovely. When I make it just for the family I wing the amounts (approx. 1/4 to 1/2 chicken breast per person). UPDATE: 8/9/08 Purchasing several rotisserie chickens makes this even MORE tasty! OR be sure to season the water chicken bouillon when simmering the chicken breasts

18 lbs chicken, bone in, boiled, season water with several teaspoons of chicken flavored bouillon
2 2/3 cups mayonnaise, can use light, not fat free
1 cup half-and-half cream
2 small sweet onions, minced
1/2 teaspoon white pepper (to taste)
4 cups celery, thinly sliced
2 teaspoons beau monde seasoning, substitute celery salt
2 bunches green leaf lettuce, any fancy lettuce
2 cups iceberg lettuce, thinly shredded (optional)
40 croissants

Steps:

  • Boil the chicken breasts until no longer pink. Cool completely and cube or shred.
  • Peel and mince onion. Can use small to medium size.
  • Clean and thinly slice celery.
  • Combine mayonnaise, half and half, white pepper and Beau Monde. NOTE: *I add enough Beau Monde to see scant color in the mayonnaise, chill and let rest while the chicken is cooling. This will allow the flavors to blend.
  • Combine all ingredients with the chicken and cover and refrigerate over night.
  • Next Morning:.
  • Taste test for additional Beau Monde.
  • Add more half & half or milk to thin and make creamier if desired.
  • OPTIONAL: Finely shred iceberg lettuce and add to the chicken mixture. This stretches the amount of chicken salad and makes it lighter in texture.

1 tablespoon lime juice
2 teaspoons olive oil
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
3 boneless skinless chicken breast halves (4 ounces each)
SALAD:
1/2 cup diced apple
2 tablespoons orange juice
1/4 cup fat-free plain yogurt
1/4 cup fat-free mayonnaise
1/8 teaspoon pepper
1 cup diced cantaloupe
1 medium peach, peeled and diced
1 celery rib, diced
1/4 cup raisins
1/4 cup chopped walnuts, toasted
1 green onion, chopped
4 lettuce leaves

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add chicken. Seal bag and turn to coat. Refrigerate for 20 minutes. , Meanwhile, in a small bowl, toss apple with orange juice; set aside. In a large bowl, whisk the yogurt, mayonnaise and pepper until blended. Stir in the cantaloupe, peach, celery, raisins, walnuts, onion and apple mixture. Cover and refrigerate. , Drain chicken if necessary, discarding any excess marinade. Lightly oil the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°. , Dice chicken and stir into yogurt mixture. Serve over lettuce leaves.
