COLA-BRAISED POT ROAST

4 1/2 pound boneless chuck roast
3 1/2 teaspoons kosher salt, divided
2 teaspoons freshly ground black pepper
2 tablespoons minced garlic
2 teaspoons minced fresh rosemary leaves
2 tablespoons vegetable oil
2 cups beef stock or low-sodium canned beef broth
12 ounces cola soda
2 tablespoons tomato paste
2 1/2 tablespoons flour

Steps:

  • Preheat the oven to 325 degrees F.
  • Season the roast well on all sides with 2 teaspoons of the salt and the pepper. On a cutting board combine the remaining salt, minced garlic and rosemary and, using the side of a knife, mash against the board repeatedly to form a paste. Using a small paring knife, make thin slits into the roast on all sides, about 2 inches apart, and fill the holes with the garlic-rosemary paste. Repeat until you have used all of the paste.
  • Heat a Dutch oven over high heat and add the oil. When the oil is hot, add the roast and cook until very well browned on all sides, 10 to 12 minutes. Add the beef stock and cola and bring to a boil, scraping the bottom of the pan with a wooden spoon to release any browned bits. Add the tomato paste and stir to blend. The liquid should be about 1/2 way up the sides of the roast. Cover the Dutch oven, place in oven, and roast until the meat is fork-tender, about 3 1/2 hours, turning the meat every hour and adding extra water if necessary to keep the liquid level at about 1/3 up the sides of the roast.
  • When the meat is fork-tender, remove the roast from the oven and carefully transfer the roast to a serving platter. Cover loosely to keep warm.
  • Skim off as much of the fat from the surface of the cooking liquid as possible. Reserve 2 tablespoons of the fat in a small bowl and add the flour. Stir to make a smooth paste. Add 1/2 cup of the hot cooking liquid to the bowl and whisk to combine. Slowly whisk this mixture into the hot cooking liquid that remains in the Dutch oven and place over high heat on the stovetop. Cook, whisking frequently, until mixture comes to a boil and thickens. Continue to cook for about 5 minutes, or until the sauce is thick enough to coat the back of a spoon and any floury taste is gone. Taste and adjust seasoning, if necessary.
  • Serve the roast with the hot gravy.

There are lots of cola/meat recipes on this site, this one is a little different. I found this in a crockpot cookbook that my folks gave me for Christmas. I tweaked it a bit, but still--great stuff!

3 -4 lbs roast (I used boneless pork shoulder tonight)
1 (1 1/4 ounce) package onion soup mix
1 cup Coca-Cola Classic (caffeine-free will do in a pinch, but diet is horrible!)
salt and pepper

Steps:

  • Rub the roast with salt and pepper then place it in the crockpot.
  • Add soup mix and coke.
  • Cook on low 8 hours or high for 4.
  • Before serving dump liquid from crockpot into a pot.
  • Skim fat.
  • To the remaining juices add salt and pepper to taste and a dash of Kitchen Bouquet.
  • Bring mixture to a boil.
  • Remove a cup of the liquid and add corn starch to thicken.
  • Add corn starch mixture to the rest of the juices.
  • Cook until it reaches desired consistency.
  • WONDERFUL GRAVY!

1 pound pork tenderloin, cut into 1-inch cubes
1/2 teaspoon salt
1/2 teaspoon pepper
5 tablespoons all-purpose flour, divided
1 tablespoon olive oil
16 ounces assorted frozen vegetables
1-1/2 cups reduced-sodium chicken broth
2 garlic cloves, minced
2 teaspoons stone-ground mustard
1 teaspoon dried thyme
2 tablespoons water

Steps:

  • Sprinkle pork with salt and pepper; add 3 tablespoons flour and toss to coat. In a large skillet, heat oil over medium heat. Brown pork. Drain if necessary. Stir in vegetables, broth, garlic, mustard and thyme. Bring to a boil. Reduce heat; simmer, covered, until pork and vegetables are tender, 10-15 minutes., In a small bowl, mix remaining flour and water until smooth; stir into stew. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes.

1 cup cola-flavored carbonated beverage
2 tablespoons brown sugar
8 pork chops
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the ketchup, cola and brown sugar.
  • Place pork chops into a baking pan and pour cola mixture over, coating well. Sprinkle with salt and pepper.
  • Bake for about one hour depending on the thickness of the pork chop.

1 tablespoon vegetable oil
2 pounds boneless country-style pork ribs, excess fat trimmed, cut into 1 1/2- to 2-inch cubes
2 cups cola (do not use diet cola)
6 garlic cloves, minced
3 tablespoons soy sauce
2 tablespoons chopped peeled fresh ginger
1 bunch green onions, chopped

Steps:

  • Heat oil in large pot over high heat. Add half of pork; sauté until brown on all sides, about 8 minutes. Transfer pork to bowl. Repeat with remaining pork. Return pork to pot. Turn off heat and pour cola slowly into pot. Bring to boil. Reduce heat to medium-low, cover, and simmer 30 minutes. Add garlic, soy sauce, ginger, and half of green onions. Cover and simmer until pork is tender, about 50 minutes longer. Uncover and simmer until sauce is slightly thickened, about 10 minutes. Season stew with salt and pepper. Transfer to bowl; sprinkle with remaining green onions.

.1 tablespoon dark sesame oil 1
(3 1/2-pound) bone-in pork shoulder (Boston butt), trimmed
1/2 teaspoon kosher salt
1 tablespoon minced peeled fresh ginger
4 garlic cloves, minced
2 cups cola (such as Coca-Cola)
1/2 cup hoisin sauce
1/4 cup rice vinegar
1/4 cup lower-sodium soy sauce
1 cup diagonally sliced green onions

Steps:

  • 1. Preheat oven to 300°. 2. Heat a Dutch oven over medium-high heat. Add oil to pan. Sprinkle pork evenly with salt. Add pork to pan; sauté for 8 minutes, turning to brown all sides. Remove pork. Add ginger and garlic; sauté for 1 minute, stirring constantly. Stir in cola and the next 3 ingredients (through soy sauce); bring to a boil. Return pork to pan; cover. Bake at 300° for 1 hour and 50 minutes or until tender, turning occasionally. Remove pork from pan, and let stand for 10 minutes. Shred pork with 2 forks. Skim fat from cooking liquid. 3. Place pan over medium-high heat; bring cooking liquid to a boil. Cook 15 minutes or until reduced to about 2 cups, stirring occasionally. Combine pork and 3/4 cup sauce in a bowl; toss to coat. Top with green onions. Serve pork with remaining 1 1/4 cups sauce.
