One 14-ounce can whole-berry cranberry sauce
3/4 cup granulated sugar
2 tablespoons all-purpose flour
5 medium Granny Smith apples, peeled, cored and sliced into 1/4-inch slices
1 cup quick-cooking oats
1/3 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1/4 cup (1/2 stick) salted butter, melted
1/4 cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • For the filling: Preheat the oven to 375 degrees F. Coat a 9-inch pie dish with the softened butter. Set aside.
  • In a large mixing bowl, stir together the cranberry sauce, granulated sugar and flour. Add the apples to the cranberry mixture, tossing to coat, and pour the mixture into the prepared pie dish.
  • For the crumb topping: In the same mixing bowl, stir together the oats, flour, brown sugar, melted butter, pecans and cinnamon. Sprinkle the mixture over the apples in the dish.
  • Bake until golden brown, 35 to 40 minutes. Serve warm or at room temperature.

¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg

¼ cup butter, cut into pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.

3/4 cup old fashioned oats
1 lb cranberries, fresh or frozen
1 1/4 cups granulated sugar, divided
1/4 cup water
1 1/2 ounces crystallized ginger, diced fine (about 5 large slices) (optional)
1/4 cup cranberry wine (optional) or 1/4 cup sweet dessert wine (optional)
2 1/2 lbs granny smith apples, peeled, cored, and cut into 1/2-inch pieces (6 to 8 apples)
2 1/2 lbs braeburn apples (6 to 8 apples) or 2 1/2 lbs golden delicious apples, peeled, cored, and cut into 1/2-inch pieces (6 to 8 apples)
1 cup dried sweetened cranberries
3 tablespoons minute tapioca

Steps:

  • In a food processor, combine flour, brown sugar, white sugar, cinnamon and cold butter. Pulse until a coarse mixture is formed, and no pieces are larger than a pea, about 12 1-second pulses. Add oats and toss to combine, pressing pieces together with fingertips. Cover with plastic wrap and refrigerate.
  • In a Dutch oven, combine cranberries with 3/4 c sugar, water, and, if using, crystallized ginger and wine. Cook over medium heat about 10 minutes, until cranberries break down and the sauce becomes jammy (20 minutes if cranberries are still frozen). Transfer cranberries to a bowl and set aside.
  • Add the apples to the same hot Dutch oven. Add remaining 1/2 c sugar and dried cranberries. Stir over medium heat 5 minutes, until apples release their juices. Add tapioca and cooked cranberries to Dutch oven and stir well to combine. Pour mixture into 9x13" baking dish and spread out evenly. Place dish on a large rimmed baking sheet to catch any bubble-overs.

If you prefer yours a bit sweeter then you should use a sweeter apple or add another half cup sugar to the fruit. One thing I love about this recipe is how versatile it is! I'll switch out what fruit I'm using just based on what I have on hand. Yummm! This is also a healthier "Crisp" recipe than the average. There is more fruit and less crisp... I enjoy the taste of the ratio as well as the lower fat content of the ratio. ;) Try it- I bet you'll enjoy it!

2 cups fresh cranberries (I try to buy a bag that has smaller cranberries than average)
1/2 cup sugar
1/4 cup flour
1 -2 teaspoon cinnamon
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup flour
1/4 cup softened butter

Steps:

  • Combine fruit, sugar, flour, and cinnamon and put into 8" square glass baking dish.

I found this recipe in of all places....the Air Miles magazine. Turns out it's from Chatelaine magazine. This is baked in individual serving sizes, but I expect it could also be made in a 9 or 10 inch casserole dish. Either way...nothing says comfort quite like a fruit crisp. This one especially. Would be wonderful to top off your Thanksgiving or Christmas dinner. I used orange juice in place of the liqueur. Use Granny Smith or any other firm apple because of the long baking time. Individual serving dishes should have a 1-1/2 cup capacity. Oh....don't forget the whipping cream on top ;)
