VEGAN CORN CASSEROLE
This easy vegan corn casserole requires only a few simple ingredients. Stir everything together in a bowl, pop it in the oven, and you have a crowd pleasing side dish for potlucks, holiday gatherings, and more!

- Preheat oven to 350 degrees F. In a large mixing bowl, combine corn muffin mix, creamed corn, whole corn, chopped onion, vegan butter, and plain dairy free yogurt. Stir until combined.
- Transfer to a 2 1/2 qt baking dish greased with coconut oil. Using your spatula, evenly spread across the top.
- Bake for 1 hour at 350 degrees F. Allow to cool for 10 minutes before serving. Top with fresh herbs. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch square baking dish.
- Combine whole corn, creamed corn, sour cream, melted butter, and eggs in a medium bowl.
- Combine flour, cornmeal, sugar, baking powder, and salt in a separate bowl. Stir cornbread mixture into the corn mixture. Spoon into the prepared dish.
- Bake in the preheated oven until the top is golden brown, about 45 minutes.

COLORFUL CORN & VEGGIE CASSEROLE
This is an easy side or vegetarian main. Lots of vegetables and gooey cheese baked into a yummy casserole. I use a frozen mixed vegetable with corn, diced carrots, peas, & green beans. This is good served with roasted chicken or baked fish. Add a green salad & dinner is ready!

Steps:
- Heat oven to 350. Spray rectangular glass casserole pan with cooking spray.
- Place margarine & frozen mixed vegetables into glass mixing bowl. Microwave 2 minutes until vegetables are thawed & butter is melted.
- Add everything except the cheese & tomatoes. Stir until blended.
- Stir in 6 oz of the cheese. Pour mixture into prepared pan.
- Top with thin slices of tomatoes in a pretty pattern. Sprinkle with reserved cheese.
- Bake in the center of the oven 25-30 minutes or until casserole is set and cheese is melted.
- Let set 5 minutes before cutting.

SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE
Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.
