I was our city clerk for several years, and on election days I brought this to serve our poll workers for lunch. It got everyone's vote of approval! 2 pounds boneless skinless chicken breasts
2 bay leaves
4 cups diced celery
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
2 cups mayonnaise
2 cups sour cream
2 cans (8 ounces each) water chestnuts, drained
1 can (8 ounces) mushroom stems and pieces, drained
1 cup slivered almonds
2 tablespoons chopped onion
2 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
2 cups shredded cheddar cheese
2 cans (2.8 ounces each) french-fried onions
Chopped green onions, optional

Steps:

  • Preheat oven to 350°. Place chicken in a Dutch oven and cover with water; add bay leaves. Bring to a boil. Cook, uncovered, until chicken juices run clear. Remove chicken and cut into 1/2-in. cubes; place in a large bowl. Stir in the next 11 ingredients. , Transfer to a 13x9-in. baking dish (dish will be full). Sprinkle with cheese and french-fried onions. Bake, uncovered, until heated through, about 30 minutes. Garnish with green onions, if desired.

½ cup chopped salted almonds
¼ cup chopped green bell pepper
2 tablespoons minced onion

2 tablespoons lemon juice
½ cup mayonnaise
⅓ cup shredded Swiss cheese
3 cups crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the chicken, celery, almonds, bell pepper, onion, pimento, salt, lemon juice, and mayonnaise. Mix well and pour into a 1 1/2 quart casserole dish.

½ teaspoon salt
½ cup slivered almonds
1 cup diced celery
2 cups cooked cubed chicken breast
1 cup mayonnaise
1 cup grated sharp cheddar cheese
1 cup crushed potato chips

Steps:

  • Preheat oven to 350 °F. Spray a 13 by 9 inch baking dish with vegetable oil cooking spray.
  • In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.

This was one of the ultimate comfort foods my mom used to make for us. The original recipe calls for twice the amount of mayo, but I found using less makes the recipe much less greasy.

5 cups diced cold cooked chicken (about 8 breasts) or 5 cups turkey
5 cups diced celery
1/2 onion, minced
1 teaspoon fresh crushed garlic
3 tablespoons lemon juice
1 cup mayonnaise
1 1/2 cups toasted slivered almonds (if your almonds aren't toasted, put them in a glass pie plate and toast them in the oven at 350 unti)
2 cups grated cheddar cheese

Steps:

  • Mix all but the cheese in a mixing bowl. Place in large glass casserole dish. Bake at 400 for 15 minutes uncovered. Top with cheddar cheese and return to oven for additional 15 minutes or until cheese is melted and bubbly. Serve hot. Great with a basic green salad.

2 skinless chicken breasts
75 g green beans, trimmed
75 g asparagus spears
6 cherry tomatoes, halved
2 tablespoons pine nuts
4 tablespoons chopped fresh basil
1 cup baby salad leaves
2 tablespoons extra virgin olive oil
1 teaspoon cider vinegar
1 teaspoon Dijon mustard

Steps:

  • Place the chicken in small pan of cold water, bring to the boil, then lower the heat and simmer for 8 - 10 minutes. Remove from the pan and allow to cool slightly. Alternatively steam in a steamer.
  • Steam the green beans and asparagus spears until tender but still crisp; refresh in cold water.
  • Mix the beans and asparagus with all the other salad ingredients in a bowl except for the baby salad leaves.
  • Place the dressing ingredients in a screw-top jar with 1 tablespoon of water and shake well.
  • Slice the chicken while still warm and add to the salad. Pour over the dressing and toss to coat.
  • Serve in a large salad bowl, garnished with the baby salad leaves.

I found this recipe many years a go in a church cookbook. It's special enough for a fancy dinner but easy enough to fix for a light lunch. There's a kick to the tangy citrus dressing, which even my picky son enjoys.

4 boneless skinless chicken breast halves (4 ounces each)
1 can (14-1/2 ounces) chicken broth
6 cups torn mixed salad greens
2 cups halved fresh strawberries
CITRUS DRESSING:
1/2 cup fresh strawberries, hulled
1/3 cup orange juice
2 tablespoons canola oil
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 teaspoon sugar
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped walnuts, toasted

Steps:

  • Place chicken in a large skillet; add broth. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until a thermometer reads 170°. Drain; cover and refrigerate. In a large bowl, combine greens and sliced strawberries; refrigerate., In a blender, combine the hulled strawberries, orange juice, oil, lemon juice and lemon zest, sugar, chili powder, salt and pepper. Cover and process until smooth. Pour into a small saucepan. Bring to a boil. Reduce heat; simmer for 5-6 minutes until slightly thickened. Cool slightly. , Drizzle half of the dressing over greens and berries; toss to coat. Divide among four plates. Cut chicken into 1/8-in. slices; arrange over salads. Drizzle remaining dressing over chicken; sprinkle with nuts.

This is a casserole made with cooked (leftover chicken) and is different from the other hot chicken salad recipes posted. I haven't tried this yet but it is one of Dave's Mom's favorites. I found this in Home Cookin' With Dave's Mom.

2 tablespoons onions, chopped
1/2 cup corn flake crumbs, to sprinkle on top of casserole

2 (10 3/4 ounce) cans condensed cream of chicken soup
1 1/2 cups mayonnaise (I use low fat)
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 (10 ounce) bag potato chips, crushed
1/2 cup slivered almonds (I omit this)
4 cups cooked chicken, cubed (I sometimes use leftover chicken or turkey)
2 cups celery, diced (I omit this and use a little celery seed instead)
1/4 cup onion, finely chopped
4 hard-boiled eggs, sliced
1 -2 cup sharp cheddar cheese, shredded (This is my addition)

Steps:

  • Lightly butter a 13x9 pan. Stir together the soup, mayonaisse, mustard, and Worcestershire sauce.
  • In a medium bowl, reserve 1 cup of the potato chips and 2 tablespoons of the almonds for the topping.
  • Place half of the remaining potato chips in the casserole spreading them evenly.
  • Place half each of the chicken, celery, onion, eggs, and remaining almonds in the casserole, then spread half of the soup mixture on top.
  • Repeat the layers, ending with the reserved potato chips and almonds. Sprinkle with cheese.
  • Bake at 350 degrees for 30-40 minutes, or until heated through.
  • Enjoy!
