1 sheet refrigerated pie crust
1 package (12 ounces) fresh cranberries, halved
1/2 cup packed brown sugar
1/2 cup chopped walnuts
3 tablespoons butter, melted
TOPPING:
3/4 cup sugar
2 eggs
1/2 cup butter, melted
3/4 cup all-purpose flour
Whipped cream, optional

Steps:

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. Sprinkle cranberries into crust. Combine the brown sugar, walnuts and butter; sprinkle over the cranberries., For topping, combine the sugar, eggs and butter in a bowl. Gradually add flour. Pour over nut mixture. Bake until filling is bubbly and topping is golden brown, 40-45 minutes. Cool on a wire rack. If desired, garnish with whipped cream.

¼ cup brown sugar
¼ cup chopped walnuts
1 egg

Steps:

  • Preheat oven to 325 degrees F (165 degrees C.)
  • Butter a 9 inch pie plate and layer cranberries on the bottom. Sprinkle with brown sugar and chopped walnuts.

4 cups cranberries (fresh or thawed)
1/2 cup brown sugar (packed)
1/2 cup nuts (chopped)

Steps:

  • Preheat oven to 375°F.
  • Prepare pie crust in pie and crimp the edges.
  • In a large bowl combine cranberries, brown sugar, nuts, 3 T.
  • flour, and cinnamon.
  • Spoon cranberry mixture into pie shell.
  • Beat egg until thick.
  • Gradually add sugar and beat well.
  • Beat in 1/2 cup flour and butter.

  • Cover crust edges with foil and bake for 20-25 minutes.
  • Remove foil and bake for 20-25 additional minutes.

1 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/3 cup finely ground dehydrated unsweetened cranberries
1 tablespoon sugar
1/2 teaspoon kosher salt
1 stick (8 tablespoons) very cold butter, cut into cubes
5 tablespoons very cold vodka
2 teaspoons apple cider vinegar
1/4 cup triple sec (see Cook's Note)
1 teaspoon unflavored powdered gelatin
2 1/2 cups fresh or frozen cranberries
1 teaspoon orange zest plus 1/4 cup orange juice
1/2 teaspoon ground ginger
1/2 cup plus 1 tablespoon sugar
1 cup very cold heavy cream
1 large egg white
1/2 cup fresh cranberries
1/2 cup granulated sugar
Orange peel, cut into thin strips, for garnish
Sweetened whipped cream, for serving

Steps:

  • For the crust: Add the flour, cranberries, sugar and salt to a food processor and pulse to combine. Add the butter, pulsing until you have pea-sized pieces. Mix together the vodka and apple cider vinegar in a small bowl. Add 3 tablespoons of the vodka mixture to the flour mixture and pulse, adding more of the vodka mixture a tablespoon at a time as needed, until the dough comes together when gently pinched (you may not need to add all of it). Dump the dough onto a sheet of plastic wrap, flatten into a disc and wrap tightly. Refrigerate for at least 1 hour and up to overnight.
  • Put the dough on a lightly floured work surface and roll into a 1/4-inch-thick round. Use the rolling pin to help guide the dough into a 9-inch pie plate. Press gently into the corners of the pie plate and crimp the edges decoratively. Refrigerate for 1 hour.
  • Arrange an oven rack in the bottom third of the oven and preheat to 375 degrees F. Prick the bottom of the dough all over with the tines of a fork. Place a piece of parchment on top of the dough and fill with pie weights or baking beans. Bake for 20 minutes, then remove the parchment and pie weights and bake until golden around the edges and light golden in the center, an additional 25 to 30 minutes. Cool completely.
  • For the filling: Add 2 tablespoons triple sec to a small bowl and sprinkle the gelatin over top; set aside.
  • Add the cranberries, orange zest and juice, ginger, 1/2 cup sugar and remaining 2 tablespoons triple sec to a small saucepan and place over medium-high heat. Bring to a boil and continue to cook until the cranberries begin to pop and break down, about 10 minutes. Remove the saucepan from the heat and stir in the gelatin mixture until completely dissolved and combined. Transfer the mixture to a blender and let cool slightly, then puree until very smooth. Pour into a large bowl and set aside to cool to room temperature, stirring occasionally.
  • When the mixture has cooled, add the heavy cream to a stand mixture fitted with a whisk attachment. Beat on high, streaming in the remaining 1 tablespoon of sugar slowly, until the mixture reaches stiff peaks. Stir one-third of the whipped cream into the cranberry mixture to lighten it. Then fold the cranberry mixture into the remaining whipped cream until no streaks remain. Add the filling to the pie crust. Cover loosely with plastic wrap and refrigerate for at least 3 hours and up to overnight.
  • For the decorations: Before serving, beat the egg white together with 1 tablespoon water. Toss the cranberries in the egg white mixture, then drain completely using a wide-mesh strainer. Put the sugar in a medium bowl, add the cranberries and toss to coat completely. Transfer to a parchment-lined baking sheet to dry.
  • Pile whipped cream in the center of the pie, top with the cranberries and sprinkle with the orange peel strips.

1 tablespoon butter
5 cups all-purpose flour, plus more for dusting
2 teaspoons granulated sugar
2 teaspoons salt
2 cups shortening
2/3 cup plus 2 tablespoons ice water
1 tablespoon butter
4 Anjou or Bosc Pears, peeled, cored, and cut into thin slices
1 1/2 cups sugar, divided
3 whole cloves
1 teaspoon fresh lemon juice
1 tablespoon light corn syrup
1 tablespoon cornstarch
1 tablespoon fresh orange zest
1 bag (24 ounces) fresh cranberries
1 cup granulated sugar
Vanilla or nutmeg ice cream (optional)

Steps:

  • For the pie crust: Grease a pie tin with the butter. Clear and clean off a large, flat surface. Lightly flour the area.
  • Combine the 5 cups flour, sugar, and salt in a metal bowl. Work the shortening in with your fingers until the mixture is almost smooth. Add the ice water and continue to mix with your fingers.
  • Place the dough on the floured surface and cut in half. Reserve the second half. Using a rolling pin, roll out the first half so it is at least 4 to 5 inches wider than the pie tin. Gently place the dough into the pie tin and press it into the bottom and the sides of the tin. Pinch any excess at the top. Place the pan in the refrigerator to rest.
  • Roll the second half of the dough for the top of the pie. Place on a baking sheet and refrigerate.
  • For the filling: Heat the butter in medium saute pan. Add the pears and saute until tender, 2 to 3 minutes. Add 1/2 cup sugar and the cloves. Toss and remove from the heat to cool in a bowl.
  • Combine the remaining 1 cup sugar, lemon juice, 1 corn syrup, cornstarch, and orange zest and mix. Add the cranberries and toss to coat the fruit.
  • In the same saute pan and add the cranberry mixture. Saute quickly, 1 to 2 minutes, until the cranberries soften slightly and the ingredients meld together.
  • Combine the pear mixture and cranberry mixture in a bowl and refrigerate, uncovered, so it cools.
  • To assemble: Preheat the oven to 425 degrees F.
  • Pour the filling onto the bottom pie crust. Remove the top crust from the refrigerator and fold it onto the rolling pin. Roll the dough over the top of the pie. Pinch the top to make the edges fluted and sealed all around the pie. Use a pastry cutter or small knife to cut an opening in the center of the top. Fold back the dough so it looks like open pages of a book.
  • Place the pie in the center of the oven. Cook, undisturbed, for 10 minutes. Lower the heat to 375 degrees F. Cook for an additional 30 minutes. Lower the oven to 325 degrees F and cook for an additional 10 minutes. Remove the pie from the oven to cool.
  • When cooled, sprinkle the granulated sugar over the top of the pie, cut into slices, and serve with ice cream, if desired.

5 ripe but firm medium Anjou or Bosc pears, peeled and diced (about 8 cups)
1 1/2 12-ounce bags fresh cranberries
1 1/2 cups sugar
1 tablespoon cornstarch
1 tablespoon light corn syrup
2 whole cloves
Juice of 1 lemon (about 3 tablespoons)
Grated zest of 1 orange (about 2 teaspoons)
For the crust:
1 stick cold unsalted butter, cubed, plus more for the pie pan
2 1/2 cups all-purpose flour, plus more for rolling the dough
1 teaspoon sugar, plus more for topping
1 teaspoon kosher salt
1/2 cup cold shortening
1 large egg, lightly beaten

Steps:

  • Make the filling: Heat a medium skillet over high heat until it begins to smoke lightly. Remove the pan from the heat, add the butter and toss in the pears and cranberries. Return to high heat and cook until the fruit is slightly tender, about 5 minutes. Add the sugar, cornstarch, corn syrup, cloves, lemon juice and orange zest. Mix to blend and cook over high heat until the syrup thickens, about 5 minutes. Remove from the heat and scoop into a bowl; refrigerate until cool. Remove and discard the cloves.
  • Make the crust: Butter the bottom and side of a 9-inch pie pan and refrigerate. In a large bowl, whisk the flour, sugar and salt. Work in the shortening and butter with your fingers until the mixture resembles small peas. Add up to 1/3 cup ice water, about 2 tablespoons at a time, mixing with your fingers until the dough comes together. Transfer the dough to a flat surface, roll it into a ball and cut in half. Shape each half into a smaller ball. Flatten the balls, wrap each in plastic and refrigerate at least 30 minutes.
  • Transfer the dough to a lightly floured surface. Using a rolling pin, roll out one half until it is at least 4 to 5 inches wider than the pie pan and 1/8 to 1/4 inch thick. Gently fit the dough into the pie pan, pressing it into the bottom and side. Trim, leaving a 1-inch overhang; put the pan in the refrigerator. Roll the second half of the dough 1/8 to 1/4 inch thick for the top of the pie. Put it on a baking sheet; refrigerate both crusts about 15 minutes.
  • Preheat the oven to 425 degrees F. Assemble the pie: Pour the filling into the crust. Brush the edge with the beaten egg; cover with the top crust. Pinch around the edge to seal the top and bottom crusts together, removing the excess dough with a paring knife. Use a paring knife to cut an X opening, 1 1/2 to 2 inches across, in the center of the crust; fold back the dough. Put the pie on a rimmed baking sheet.
  • Bake the pie, 10 minutes. Lower the temperature to 375 degrees F and continue baking until the crust is light golden brown, 30 more minutes. Let cool completely on a rack. Sprinkle with sugar.

2 cups fresh or frozen cranberries
1/3 cup sugar
1/3 cup chopped walnuts, optional
3/4 cup flour

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the butter in a 9-inch round non-reactive baking dish. Set pan in oven long enough to barely melt butter or melt in microwave. Remove from oven, swirl pan to coat evenly with butter, set in a warm place.
  • Toss cranberries with sugar and walnuts, set aside.
  • In a mixing bowl, stir together flour, sugar, baking powder and salt. Add milk and stir until just combined. Pour the batter into the pan, it will be pancake batter thin, this is what you want. 1 1/2 cups raw cranberries, whole
1/2 cup brown sugar
1/4 cup chopped walnuts (or more)
1 egg, beaten
2/3 cup white sugar
1/2 cup flour
1/3 cup margarine, melted
1 (9 inch) unbaked pie shells

Steps:

  • Spread the berries on bottom of the pie shell.
  • Sprinkle brown sugar over the cranberrys, then sprinkle the nuts on.
  • Beat the egg, add white sugar, flour and melted margarine. Mix or whisk well and spread over the cranberrys, brown sugar and nuts.
  • Bake at 325* for about 45 minutes (I bake a little longer), until the topping is nicely browned, not dark brown.
  • Serve warm with ice cream or whipped topping. This is also good cold.

Steps:

  • Preheat oven to 400°F. Roll out pie crust disk on lightly floured surface to 13-inch-diameter round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 3/4-inch overhang. Fold overhang under crust so that crust is flush with edge of pie pan. Crimp edges to make decorative border. Freeze crust until firm, about 15 minutes.
  • Line pie crust with foil, leaving 3-inch overhang. Fill foil with beans or pie weights. Fold extra foil gently over crust edges. Bake until crust is set, about 15 minutes. 1 pie crust, refridgerated, prepared

3/4 cup flour
2 ounces white baking bar, chopped

Steps:

  • In a small bowl combine dried cranberries and brandy. Cover and chill at least 1 hour. Drain and reserve 1 tablespoons brandy.
  • Preheat oven to 325.Prepare pastry and line a 9 inches pie plate.
  • In a medium bowl wisk together butter, sugar,eggs,and salt.
  • Stir in walnuts, flour and chopped baking bars until just combined.

1-1/2 cups fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 cup chopped walnuts
1 large egg
1/2 cup sugar
1/2 cup all-purpose flour
1/3 cup butter, melted
Vanilla ice cream

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., Spread cranberries evenly into crust; sprinkle with brown sugar and walnuts. In a bowl, beat egg on high speed until thick and pale yellow, about 5 minutes. Gradually beat in sugar. Beat in flour and melted butter (mixture will be thick). Spoon over cranberries, spreading evenly., Bake on a lower oven rack until crust is golden brown, 40-45 minutes. 2 envelopes (1/4 ounce each) unflavored gelatin
1/2 cup cold water
6 cups fresh cranberries
1 3/4 cups to 2 cups sugar, to taste
1 cup red currant jelly
2 tablespoons cognac
Perfect Nut Crust

Steps:

  • Sprinkle gelatin over water in a small bowl; let stand until softened, about 5 minutes.
  • Combine cranberries, sugar, jelly, and cognac in a saucepan and cook over low heat until cranberries are soft but not bursting, 12 to 15 minutes. Do not overcook or the mixture will become too watery. Remove from heat and let cool slightly. Stir in gelatin mixture and let cool completely.
  • Pour cranberry filling into cooled tart shell and chill for at least 1 hour before serving.
