Steps:
- In a saucepan, combine vinegar and cranberries. Cook over medium heat until cranberries soften. Remove from heat; add olive oil, sugar, salt and pepper. Place in blender and mix until smooth. Refrigerate until chilled.
- Core and julienne one pear, core and dice the other.
- In a large bowl, combine the Romaine lettuce, endive, diced pears, walnuts and Gorgonzola. Toss and drizzle with enough dressing to coat.
- Divide among salad plates and garnish with julienned pear. Top with any additional walnuts as well.

- Preheat oven to 375 degrees F (190 degrees C). Arrange almonds in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.

- Start by making a simple syrup: dissolve the sugar in the water in a medium saucepan. Add vanilla beans and bring to a simmer. Add the orange juice and cranberries, a dash of salt and some freshly ground black pepper, to taste. Simmer until cranberries begin to pop and become tender, about 3 to 5 minutes. Remove from heat and stir in Dijon mustard. Chill cranberry sauce until ready to serve. The sauce can be made up to 2 days ahead of time. Just before serving, garnish sauce with freshly grated orange zest.
GREEN SALAD WITH CRANBERRY VINAIGRETTE

- Put the cranberries in a small saucepan; add the honey and 1/3 cup water. Cook over medium heat, stirring occasionally, until the cranberries pop and the liquid thickens, about 8 minutes. Remove from the heat and let cool completely.
- Toast the walnuts in a small dry skillet over medium heat, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop. Stir the olive oil and vinegar into the cooled cranberries. (Add more honey, 1 teaspoon at a time, if the vinaigrette is too tart.) Season with salt and pepper.
- Toss the lettuce and watercress in a serving bowl; season with salt and pepper. Spoon the vinaigrette over the lettuce and top with the walnuts and herbs. Toss before serving.
BRUSSELS SPROUTS SALAD WITH CRANBERRIES & DIJON DRESSING
Steps:
- Whisk the Dijon mustard, balsamic vinegar, honey, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Whisking constantly, slowly drizzle in the olive oil until emulsified. Set aside.
- Toast the hazelnuts in a medium skillet over medium-high heat, tossing a few times, until golden brown spots start to form, 3 to 4 minutes. Immediately transfer to a cutting board to stop the cooking and roughly chop them.
- Use the shredder attachment on a food processor or a mandoline to shave the Brussels sprouts. Put the sprouts in a large bowl and add the hazelnuts, cranberries, 2 teaspoons salt and a bunch of grinds of black pepper. Drizzle the dressing over top (it will feel like a lot of dressing, but trust me, it needs it!) and toss until well combined.
CRANBERRY VINAIGRETTE/SALAD DRESSING
This versatile dressing is impressively flavorful and elegant! It can be used over a bed of your favorite tossed greens (it's especially good during the holidays) or as a marinade for Salmon. Don't worry about the raw egg white when using it for a salad--the acids(lemon and red wine vinegar) "coddle" it, making it safe to eat.

- In a blender, whisk egg white, mustard, lemon juice and red wine vinegar until frothy.
- While blender is still running, slowly pour in the cranberry concentrate, allowing it to infuse gradually into the egg white mixture.
- Mix the two oils together in a small bowl, and let it gradually stream into the blender, continuing to whisk until the dressing has emulsified, and has thickened.
- Turn off the blender at this point, and pour dressing into a large bowl. Stir in the dill and add the salt, pepper and sugar to your liking. You might like yours sweeter or more tart than mine, so I'll leave the amounts up to you.
- If using it on broiled Salmon, you can marinate the fish for 20-30 minutes before broiling or brush it on the fish in the final minutes of grilling.

- In a blender, whisk egg white, mustard, lemon juice, and red wine vinegar.
- While blender is still running, slowly infuse the cranberry concentrate into the mix by pouring it in a thin stream.
- Keep the blender running as you add both the olive and canola oils the same way you added the cranberry, until the oils are completely emulsified and the dressing starts to thicken.
- At this point, turn off blender, and pour the dressing into a bowl. Stir in the dill, and season the dressing with salt, pepper and sugar to your liking. I did not specify the amounts, because some like it sweet, and some like it tart.
- Use it to marinade salmon before broiling, or brush it over grilled salmon. Or use it over your favorite tossed greens--especially good during the holiday season.
- Note: To make it really bright in color, add a couple of drops of red food coloring--WOW!

AUTUMN SALAD WITH CREAMY CRANBERRY DRESSING
I came across this recipe in a local grocery store flyer a few years ago and it has easily become the most requested recipe by my friends and family. Its quick to make without a lot of preparation and it can be fun to change up the salad ingredients. I love it the way it is without any altering but I took it to our family Christmas dinner this year and instead of adding pears I used fresh mandarines and accidentally forgot the cheese - it was still a huge hit and not one bite left behind. I do prefer the flavour and the consistency of the dressing when refrigerated at least 5 hours as it will thicken up and allow the flavours to blend. I have also added one tbsp of lemon juice to regular milk instead of using buttermilk. Enjoy.
