Good little side dish, especially if your kids (or even you) don't normally care for peas, and want a way to eat them.

1 lb fresh green peas
1/2 cup salt water
1/4 cup butter
1/2 teaspoon sugar
salt and pepper
1 dash nutmeg
1 cup heavy cream
2 tablespoons flour
1 teaspoon fresh minced parsley

Steps:

  • Boil water in a medium sauce pan, and add peas, allowing to cook about 5 minutes Drain peas, and saute with butter and sugar until peas are good and tender (about 10 minutes).
  • In a small mixing bowl, mix cream together with flour until smooth.
  • Add to peas along with salt, pepper, nutmeg, and parsley.
  • Allow this all to simmer about 5 minutes before serving.

Pinch of red pepper flakes
1/2 cup heavy cream
1 pound bag frozen peas, thawed
1 tablespoon sliced fresh mint

Steps:

  • Melt the butter in a large saute pan over medium-high heat. Once melted and foamy, add the onion, garlic, and red pepper flakes and saute until tender, about 2 to 3 minutes. Season with salt and pepper. Add the heavy cream and let thicken, stirring for just 1 minute.
  • Add the peas and the mint and cook until the peas are bright green and warmed through, another 5 minutes.

1 teaspoon red pepper flakes
1 tablespoon chopped garlic
1 small onion, diced
2 tablespoons all-purpose flour
1 1/2 cups milk
1 pound frozen sweet peas, thawed
2 tablespoons grated Parmesan
1 teaspoon chicken bouillon
Pinch salt
1 teaspoon cracked black pepper
1/4 cup all-purpose flour
1 tablespoon kosher salt, plus more for seasoning
1 tablespoon cracked black pepper
1 tablespoon paprika
2 shallots, peeled and cut into 1/8-inch thin rings
1/4 cup olive oil

Steps:

  • In a large saucepan over medium-high heat, add the butter. Add the red pepper flakes and garlic and cook until garlic begins to brown, about 1 to 2 minutes. Stir in the onions and cook for an additional 1 to 2 minutes to soften. Add the flour and cook for 1 minute while stirring to form a pasty roux. Whisk in the milk and bring to a simmer being sure to remove all of the lumps. Add the peas, Parmesan, chicken bouillon, salt, and pepper. Cook for 2 to 3 minutes. Remove from heat and ladle the mixture into a serving bowl. Serve garnished with crispy shallots.
  • Put the flour, salt, pepper and paprika in a medium-sized mixing bowl. Toss shallots into the flour to evenly coat. Put the shallots into a mesh strainer and shake off the excess flour.
  • In a medium-sized saute pan over medium-high heat, add the olive oil. Heat the oil until almost smoking and add the shallots. Cook stirring frequently until the shallots begin to brown, about 2 to 3 minutes. Remove the shallots from the pan onto a paper towel lined platter. Season with salt, to taste.

1 cup half-and-half
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
Pinch of cayenne pepper
Vegetable oil, for frying
2 10-ounce packages frozen peas
1 5.2-ounce package soft cheese with garlic and herbs (such as Boursin)
1/4 teaspoon grated lemon zest
1/4 teaspoon freshly grated nutmeg
2 tablespoons chopped fresh parsley

Steps:

  • Toss the shallots with 1/4 cup half-and-half and a large pinch each of salt and black pepper in a small bowl. Set aside to soak 10 minutes.
  • Meanwhile, combine the flour, cayenne, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Heat about 1/4-inch vegetable oil in a medium nonstick skillet over medium heat. Working in batches, remove the shallots from the half-and-half, coat with the seasoned flour and fry, stirring, until crisp and golden brown, 4 to 6 minutes. Remove with a slotted spoon to a paper towel-lined baking sheet to drain; sprinkle with salt. Add more oil to the skillet as needed between batches.
  • Bring a medium saucepan of salted water to a boil. Add the peas and cook until tender, 5 to 7 minutes; drain. Add the remaining 3/4 cup half-and-half and the cheese to the pan and cook over medium-low heat, stirring, until creamy. Stir in the lemon zest, nutmeg and a few grinds of black pepper. Stir in the peas until well coated; season with salt and black pepper.
  • Remove the pan from the heat and stir in the parsley. Transfer to a serving dish and top with the fried shallots.

1 cup heavy cream
2 bay leaves
1 tablespoon chopped flat-leaf parsley
1 garlic clove, smashed
1/2 teaspoon fresh grated nutmeg

1 cup goose stock or chicken broth

Steps:

  • Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
  • Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.

If you are using water, then you might want to add in 1-2 teaspoons chicken bouillon powder to the water when boiling but that is optional. This complete recipe may be doubled.

1 cup shelled English peas
1 tablespoon butter

  • Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
  • In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
  • Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Steps:

  • Bring milk, cloves, and bay leaf to a boil in a small saucepan; reduce heat to low and simmer for 15 minutes to let flavors meld. Strain into a medium bowl; discard solids. Cover milk and keep warm.
  • Meanwhile, place onions in a large skillet (at least 12"). Add water to half-cover the onions (about 1 cup). Add 1 tablespoon butter, 1 teaspoon salt, and sugar.
