Here's my creamy and rich version of twice-baked potatoes. Always a treat, these stuffed potatoes go very well with the Chicken Cordon Bleu for my holiday dinner. -Merle Dyck, Elkford, British Columbia

4 medium baking potatoes
1/4 cup butter, cubed
1 cup sour cream
1 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled
3 to 4 green onions, sliced

Steps:

  • Bake potatoes at 400° for 1 hour or until tender. Cool slightly. Reduce heat to 350°. , Cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell. In a large bowl, mash the pulp with butter. Stir in the sour cream, cheese, bacon and onions. Spoon or pipe into potato shells. , Place on a baking sheet. Bake for 30-35 minutes or until heated through.

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

8 potatoes (large)
425 g mornay sauce (cabonara was specified)
425 g tuna (canned in water)
2 spring onions (scallions chopped)
1/2 cup cheese (grated)

Steps:

  • Preheat oven to 180C (160C fan forced).
  • Wrap each potato in aluminium foil and put on a shallow tray and put in the oven and cook for 1 hour or until tender.
  • Heat carbonara sauce in a small saucepan until simmering.
  • Drain the tuna and flake and add to the carbonara sauce and then add the spring onions.
  • Make a cross in the cooked potatoes and carefully push open.
  • Spoon in the tuna sauce and then sprinkle with cheese.
  • Put potatoes on a tray and bake for a further 10 minutes or until cheese is bubbly.
  • If you have sauce left over serve in a jug for people to pour over as they make their way through the potato.

4 x 300g / 10oz potatoes ( - Sebago (Aus), Russet (US), Maris Piper / King Edwards (UK) (Note 1))
1 tbsp canola or vegetable oil
1/2 tsp salt
200g / 7oz bacon (streaky) (, chopped into small batons (Note 2))
120g / 8 tbsp unsalted butter
1/3 cup cream ((pure or thickened / heavy))
1 cup cheddar cheese (, shredded (Note 3))
3 green onions (, finely sliced)
1/4 tsp salt
1/4 tsp pepper
1 1/2 tbsp chives (, finely chopped (garnish))
Sour cream ((recommended!))

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan). Place a rack on a tray (recommended but not critical).
  • Prick potatoes: Wash, scrub and dry potatoes well. Prick each potato 8 times with a fork.
  • Oil and salt: Put potatoes in a bowl, pour over oil and rub onto potatoes. Then sprinkle over salt and use your hands to coat. (Just do this as best you can. Some will stick, much will not!)
  • Bake: Place potatoes on rack and bake for 75 minutes or until you can pierce with a small knife with no resistance.
  • Cook bacon: Place bacon in a cold non-stick pan over medium heat. When the fat starts to melt, turn the heat up to high and cook bacon until golden. Drain on paper towels.
  • Heat butter and cream: Melt butter in a saucepan over medium heat. Then add cream and heat until hot, but don't let it boil. (You could also do this in a microwave)
  • Lower oven: Turn oven down to 200°C / 390°F (180°C fan).
  • Scoop out potato flesh: Allow potatoes to cool enough so you can handle them (or use a tea towel). Cut in half lengthwise and scoop out potato flesh, leaving 0.7cm (1/3") thick layer of potato still stuck to skin.
  • Mash potato: Place potato flesh in a bowl and mash while hot until smooth.
  • Add-ins: Add half the cheese (save the rest for topping), most of the bacon (save a bit for garnish), all the green onion, hot cream and butter, salt and pepper. Stir to combine.
  • Stuff and top with cheese: Fill potato skins with the mashed potato mixture. Top with remaining cheese.
  • Bake: Bake for 20 to 25 minutes until the cheese is melted, golden and bubbly.
  • Serve: Serve immediately, garnish with sour cream, reserved bacon and chives.

4 baking potatoes
250g tub 'virtually fat-free' cottage cheese with onions and chives
200g can tuna in water, drained
1 celery stick, sliced
3 spring onions , trimmed and sliced
green salad and Tabasco sauce , to serve

Steps:

  • Preheat the oven to 180C/Gas 4/fan oven 160C. Prick the potatoes several times with a fork and put them straight onto a shelf in the hottest part of the oven. Bake for 1-11⁄4 hours, or until they are soft inside.
  • Meanwhile, put the cottage cheese in a bowl with the tuna, celery, spring onions and some salt and pepper, and mix together thoroughly.
  • To serve, cut a cross in each baked potato and open it out slightly. Spoon the filling on top, sprinkle a couple of drops of Tabasco sauce over each one and serve with a green salad.

1/2 cup buttermilk

8 small floury potatoes - such a Maris Pipers
1 tbsp vegetable oil
7 oz (200g) pancetta cubes (or bacon lardons)
2 tbsp double/heavy cream
2 tbsp salted butter
1 pinch of salt and pepper
1 3/4 cups (175g) of your favourite cheese (I used a mix of 75% mature chedder and 25% red Leicester, grated)
4 tbsp soured cream
4 spring onions (scallions) (chopped)

Steps:

  • Preheat your oven to 190c. Prick your potatoes with a fork and start them off in the microwave. Put all the potatoes in the microwave and microwave on high for 10 minutes (alternatively you can add 20 minutes to the cooking time in the oven).
  • Put your potatoes in the oven, directly on the shelf and cook for 35-45 minutes until they're crisp on the outside and soft on the inside (you can check this by stabbing a knife into one of the potatoes to see if it slides in easily).
  • Meanwhile, heat the oil in a small frying pan/skillet over a medium-high heat. Cook the pancetta cubes for 5-6 minutes, until crispy. Remove from the pan.
  • When your potatoes are ready, take out of the oven and chop each of the potatoes in half. Pick up a potato half (using a tea towel to protect your hands) and using a spoon, scoop out the insides into a large bowl. Repeat with the rest of the potatoes.
  • Add the cream, butter and salt & pepper to the bowl and mash using a potato masher or a fork until the potato is fluffy.
  • Add in the pancetta and cheese (reserving a small handful for sprinkling on top). Mix together.
  • Take one of the potato skins and put a spoonful of the potato mix inside. Put the potato in a baking dish and sprinkle with a little of the reserved cheese. Repeat with the remaining potatoes.
  • When all of the potatoes are stuffed, put them back in the oven for 10-15 minutes (same temperature).
  • Take out of the oven and serve with soured cream and a sprinkling of spring onions (scallions).

1 cup olive oil mayonnaise
1 1/2 cups cheddar cheese (grated)
1/4 cup black olives (sliced)

1 4 oz can of Bumble Bee Tuna in water (drained)

Steps:

  • Preheat oven to 375°F
  • Bake your potatoes about an hour or so, or until you can press a fork right into them. Let them cool. Careful not to get them too soft, or you will have some trouble with the next part. Note: Often we simply microwave the potatoes so the whole process goes faster, this way I can have dinner on the table in about a half hour or so.
  • Slice the potatoes in half and spoon out the potato filling out of each halve into a bowl. Leave about 1/4" thickness of potato around the edge (like you were making potato skins) so that the shell stays together.
  • Mash or break up the potatoes a little with a fork, and then add the mayonnaise, 1 cup of the cheddar cheese, black olives, mushrooms, green onion, green pepper and tuna. Sprinkle with a dash of salt and pepper to taste.
  • Mix or mash it all together with a fork lightly.
  • Scoop spoonfuls of the potato mixture into each half potato skin.
  • Top with remaining cheese.
  • Place on a baking pan and bake for about 18-20 minutes or until cheese is melted and everything is hot.
  • Serve immediately. Top with sour cream, bacon, chives or whatever else you want, or serve alone like we do.
  • These even taste good as leftovers straight out of the fridge the next day or reheated. Yum!

50 g mature cheddar (grated)
6 sun-dried tomatoes (chopped)
1 can of tuna (drained)
