CREOLE SHRIMP

1 tablespoon olive oil
1 tablespoon whole butter
1 small diced onion
1 red bell pepper cored and diced
1 green bell pepper, cored and diced
3 cloves minced garlic
2 tablespoons flour
2 tablespoons tomato paste
2 (28-ounce) cans whole tomatoes
1 teaspoon dried oregano
1 teaspoon dried thyme
2 tablespoons chopped fresh parsley
1 teaspoon cayenne pepper
1 teaspoon white pepper
1 teaspoon black pepper
Hot pepper sauce and Worcestershire sauce, to taste
1 tablespoon sugar (to take the acidity off the tomatoes)
Salt, to taste
2 pounds medium shrimp, peeled and deveined
1 tablespoon butter
Splash white wine
Chopped scallions
Pinch chopped parsley
Pinch cayenne
Pinch paprika
Sliced scallions and lemon wedges, for garnish

Steps:

  • Get the pan hot over a medium high flame, saute all ingredients, except flour, tomato paste and tomatoes, in the olive oil and butter until they begin to wilt. Add flour and tomato paste. Season with oregano, thyme, parsley. cayenne pepper, white pepper and black pepper.
  • Saute all that until it begins to brown. After 5 minutes when it's quite brown, add the tomatoes. Stir in hot pepper sauce and Worcestershire, to taste. Add sugar and salt. Reduce heat and let the sauce simmer for 1 1/2 to 2 hours.
  • Shrimp: In a pan over medium heat, saute shrimp in 1 tablespoon of whole butter. While the shrimp is cooking, splash it with white wine. Then add to taste, some chopped scallions, a pinch of parsley and a bit of cayenne pepper and paprika.
  • After the shrimp is almost ready, add it to the sauce for 3 to 4 minutes. so the Creole flavor cooks into the shrimp. Prepare the serving plates with cooked rice. Ladle the shrimp and Creole sauce into the rice beds, making sure there is lots of sauce. (Creole dishes feature "Lots of Gravy"). Garnish with sliced scallions (the green parts) for color and lemon wedges.

1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1 cup water (or shrimp stock)

2 bay leaves
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
Dash hot pepper sauce
3 to 4 pounds medium-size fresh shrimp (peeled, deveined)
1 tablespoon fresh parsley (chopped)
4 to 6 cups cooked rice (or the amount desired for serving)

Steps:

  • Gather the ingredients.
  • Combine the oil and flour in a Dutch oven . Cook over medium heat, stirring, until mixture is golden colored. This should take about 15 to 20 minutes.
  • Add the onion, celery, green onions, green pepper, and garlic. Cook, stirring often, 15 minutes or more until the vegetables are tender.
  • Stir in the diced tomatoes, tomato sauce, tomato paste, water, salt, black pepper, cayenne pepper, bay leaves, lemon juice, Worcestershire sauce , and hot sauce, and bring to a boil.
  • Cover and reduce the heat. Simmer for 1 hour, stirring occasionally.
  • Add shrimp and simmer for about 10 minutes more, or until the shrimp are cooked through and turn pink. Do not overcook the shrimp or they will get tough and rubbery.
  • Remove the bay leaves.
  • Stir in the chopped fresh parsley.
  • Serve over hot cooked rice and enjoy.

4 quarts shrimp shells
8 quarts cold water
2 tablespoons oil
4 ounces onions, diced
4 ounces leeks, white only, chopped
4 ounces celery, diced
4 ounces parsnips, chopped
2 lemons, halved
1 cup parsley, coarsely chopped, stems and all
8 bay leaves
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/2 teaspoon peppercorn, cracked black

Steps:

  • Rinse shells briefly under cool water.
  • Drain well.
  • Heat heavy pot on stove.
  • Add oil and shells.
  • Sweat shells briefly until they turn pink.
  • Add vegetables, sweat for 2-3 minutes.
  • Add cold water, parsley and herbs, bring to boil.
  • Reduce heat, simmer for 1 hour.
  • Strain liquid through fine cotton cloth, without pressing or aqueezing.
  • Return liquid to a clean pot, add lemons, bring to full boil.
  • Reduce heat and simmer about 15 minutes until lemon is infused into stock.
  • Remove lemon.
  • Cool stock completely, freeze for future use.

2 cups water
1 cup uncooked white rice
2 tablespoons butter
5 carrots, diced
2 onions, chopped
1 green bell pepper, chopped
1 ½ cups chopped celery
1 pound fresh mushrooms, sliced
1 zucchini, sliced
1 (16 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 pound cooked shrimp
1 (4 ounce) jar diced pimento peppers, drained
3 teaspoons chili powder

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes; set aside. Meanwhile, preheat oven to 300 degrees F (150 degrees C).
  • In a large saucepan or pot, melt butter over medium heat, and saute carrots, onions, bell pepper, celery, mushrooms, and zucchini, until just tender. Stir in tomatoes and tomato sauce. Let cook, stirring constantly, for 5 minutes.

2 1/2 small cans (14 to 16 ounces each) whole tomatoes including juice

1 cup dry red wine

1 teaspoon dried hot red pepper flakes, or to taste
2 teaspoons dried oregano, crumbled
1 bay leaf
For Creole seasoning
2 bay leaves

3/4 teaspoon salt

Steps:

  • Make tomato sauce:
  • In a large heavy skillet cook onion in oil over moderate heat, stirring, until softened. Add garlic and cook, stirring, 1 minute. Add remaining sauce ingredients and salt and pepper to taste and simmer sauce, stirring occasionally, 45 minutes, or until thickened. Discard bay leaf and in a food processor purée sauce until smooth. Tomato sauce may be prepared up to this point 2 days ahead and chilled, covered.
  • Make Creole seasoning:
  • In a small bowl stir together Creole seasoning ingredients.
  • In a large heavy saucepan cook onion, celery, bell peppers, and jalapeño in oil over moderate heat, stirring frequently, until softened. Add garlic and cook 1 minute. Add Creole seasoning and cook, stirring, 1 minute. Add tomatoes and 2 cups sauce and simmer, stirring occasionally, 30 minutes. Creole sauce may be prepared up to this point 1 day ahead and chilled, covered. Bring Creole sauce to a simmer before proceeding.
  • Discard bay leaves and add shrimp to Creole sauce. Simmer mixture, stirring occasionally, 3 minutes, or until shrimp are cooked through.
  • Serve shrimp Creole over rice, garnished with parsley.

5 bacon slices
5 medium onions, finely diced
7 celery stalks, finely diced
3 large bell peppers, finely diced
1 6-ounce can of tomato paste
4 ripe tomatoes, chopped, with juice
1/2 cup sugar
3 pounds medium shrimp, deveined and peeled
1 tablespoon Worcestershire sauce, plus more to taste
Salt and pepper to taste

Steps:

  • In a microwave, cook the bacon for 4 to 5 minutes at full power to render the fat.
