These are new potatoes served with a zesty sauce. This has been a longstanding favorite at our house. If you are in a hurry, just boil the potatoes and serve with the sauce.

¼ cup butter
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons prepared horseradish
2 tablespoons fresh lemon juice
1 ½ pounds small new potatoes, unpeeled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a 2 quart casserole dish in the oven. Stir in salt, pepper, horseradish and lemon juice. Place potatoes in dish and toss to coat with butter mixture.
  • Cover and bake in preheated oven for 1 hour, or until potatoes are tender.

  • Combine 2 cups leftover mashed potatoes, a heaping 1/3 cup flour, 2 tablespoons milk and 1 tablespoon chopped mixed herbs in a bowl; knead until smooth. Season with salt and pepper. Divide into 4 balls on a floured surface and flatten each into a 3-inch patty. Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat; add the patties and cook until golden brown, 4 to 5 minutes per side, adding more butter to the pan as needed. Season with salt.

We attended a county fair in Wales and the ladies of the local church were baking and selling these. We asked for the recipe and they graciously shared it with us. This has been converted to US standard. They are delicious and not as sweet as some of our style cookies. Dried currants can be used in place of the raisins.

4 cups all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
6 tablespoons butter, softened
6 tablespoons lard
1 ½ cups white sugar
2 cups raisins
4 eggs
8 tablespoons milk

Steps:

  • Sift flour, baking powder and salt into bowl. Put in butter and lard and mix until resembles fine breadcrumbs. Stir in sugar and currants or raisins. Beat the eggs lightly and add to flour mixture with just enough milk to make a firm dough similar to shortcrust pastry.
  • Chill dough 1 to 2 hours.
  • Roll the dough to 1/4 inch on floured surface and cut with 3 inch rounds. Bake the cakes on a greased griddle or frying pan (I use my electric skillet with just a little non-stick spray) over low heat until golden brown. Cool and sprinkle with sugar. These also freeze well.

Love to make these with leftover mashed potatoes. I will make a batch of these golden brown cakes and serve with sour cream and applesauce for nice snack on the weekends. Pure comfort food here. Recently when my son had his wisdom teeth out, and was so hungry, I whipped these up, which gave the texture he needed and the taste was perfect and satisfying. Posting for Trevor. 4 large russet potatoes or 4 large idaho potatoes
4 -6 ounces cream cheese
3 tablespoons sour cream
2 teaspoons dried chives
1 teaspoon dried cilantro
1 egg, lightly beaten
salt & freshly ground black pepper
1 tablespoon extra virgin olive oil
1 tablespoon butter

Steps:

  • Peel and dice potatoes and add to a large pot. Cover with water and salt the water. Bring to boil over medium heat, and cook until tender. Drain the potatoes and return to hot pot to dry. Transfer potatoes to a bowl. Soften cream cheese in a microwavable bowl and microwave the cream cheese for 20 seconds on high. Add to the potatoes along with sour cream, chives, cilantro, egg, salt and pepper, to taste. Mash potatoes to combine mixture.
  • Heat the oil and butter in nonstick skillet over medium heat. Drop 2-inch mounds of potatoes into skillet and gently press down to flatten a bit. Crisp potatoes until deeply golden on each side, about 7-8 minutes total.
