1 pound lean ground beef (90% lean)
3 cans (14-1/2 ounces each) diced tomatoes, undrained
4 large green peppers, coarsely chopped
1 large onion, chopped
2 cans (4 ounces each) chopped green chiles
3 teaspoons garlic powder
1 teaspoon pepper
1/4 teaspoon salt
2 cups uncooked instant rice
Hot pepper sauce, optional

Steps:

  • In a 6-qt. stockpot, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Add tomatoes, green peppers, onion, chilies and seasonings; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until vegetables are tender., Prepare rice according to package directions. Serve with stew and, if desired, pepper sauce.

There's a whole lot to love about stuffed peppers. They're hearty, made with inexpensive ingredients and they taste great-even to veggie skeptics. And now, they're slow-cooker friendly! Spend 20 minutes prepping and you can walk away for the rest of the day, as this slow-cooker stuffed pepper recipe cooks for around five hours.

6 large bell peppers
1 lb ground beef (at least 80% lean)
1 cup finely chopped onions
1 teaspoon salt
1 teaspoon black pepper
6 cloves garlic, finely chopped
1 1/2 cups cooked white rice
1 can (15 oz) Muir Glen™ organic tomato sauce
2 cups shredded cheddar cheese (8 oz)

Steps:

  • Spray 6-quart oval slow cooker with cooking spray. Trim tops off bell peppers; remove ribs and seeds. Set aside.
  • In 12-inch nonstick skillet over medium-high heat, cook beef, onions, salt and pepper 8 to 10 minutes, stirring frequently, until beef is cooked through and onion softens. Add garlic; cook 15 seconds. Drain.
  • Stir rice and 1/2 cup of the tomato sauce into beef mixture in skillet; mix to combine. Stir in 1 cup of the cheese. Stuff peppers with beef mixture; arrange in slow cooker. Pour remaining tomato sauce over peppers.
  • Cover; cook on Low heat setting 4 1/2 to 5 1/2 hours or until peppers are soft. Top peppers with remaining 1 cup cheese. Cover; cook 3 to 8 minutes longer or until cheese is melted. Use slotted spoon to lift peppers from slow cooker.

1 1/2 pound beef tenderloin (cut in 1 inch pieces)
1 medium onion (roughly chopped)
4 cloves garlic (minced)
2 bell peppers (any color, roughly chopped)
1 3/4 cups beef broth (low sodium)
1/4 cup teriyaki sauce
1 teaspoon hot sauce (I used Sriracha sauce)
1/2 teaspoon pepper (or to taste)
1 tablespoon cornstarch

Steps:

  • Trim the meat if needed and cut into small pieces. Place the meat in the slow cooker. Then throw in the rest of the ingredients and roughly stir.
  • Cover and cook on low for 5 to 6 hours or on high for 3.5 hours.
  • To thicken the sauce, take a ladle of the sauce and whisk it together with the cornstarch in a small sauce pan. Cook on low until the sauce thickens, then throw it back in the slow cooker and stir so that it all combines well.
  • Serve over rice, noodles or mashed potatoes. Garnish with some chopped onions or parsley and some sesame seeds.

garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch
½ cup chopped onion

1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.

My version of Pepper Steak, compiled from several different recipes on the web and adjusted to taste and what I had in the fridge! This is a "runnier" version as opposed to a thicker sauce, it's great for dunking! Nice winter comfort food on a cold day.

2 lbs boneless beef chuck steaks
1 tablespoon olive oil
salt and pepper
1 teaspoon minced garlic
3 tablespoons flour
1 cup beef broth
1/2 cup teriyaki sauce
4 tablespoons Worcestershire sauce
1/8 teaspoon red pepper flakes
1 yellow onion, sliced in rings
1 green pepper, julienned
1 red pepper, julienned
1 fresh tomato, diced
1 teaspoon brown sugar

Steps:

  • Cut chuck steak into julienned strips, sprinkle lightly with salt and pepper and saute with the chopped garlic and pepper flakes in the tablespoon of olive oil until lightly browned.
  • Transfer the chuck steak to a large crock pot.
  • Mix the 3 tablespoons of flour with the beef broth and pour on top of meat.
  • Add the Teriyaki sauce, Worcestershire sauce, tomato and brown sugar.
  • Stir well and cook on high for two hours.
  • After two hours of cooking on high, add the onion and peppers, turn heat down to low and cook for an additional 1 1/2 hours.
  • Serve over rice or buttered egg noodles.

  • Remove fat from beef. Cut beef into 6 serving pieces. Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet about 8 minutes, turning once, until brown.
  • In 3- to 4-quart slow cooker, layer beef, onions, garlic and gingerroot. In small bowl, mix broth and soy sauce; pour over beef.

  • Mix 1 cup of broth with 3 tsp Sriracha, or water, bullion cubes, and Sriracha. Pour over the peppers and beef.
  • (if using bullion cubes, add only 1 tsp salt). Set on high heat for 3.5-4 hours.
  • Mix ½ cup water and 2 tablespoons cornstarch. Add 1 cup of liquid from the meat & pepper mixture and cook on medium heat until boiling, then cook 2 minutes past boil to remove the cornstarch flavor. 1 white onion (sliced)
1/2 cup water
2 beef bouillon cubes
3 Tbsp. soy sauce

2 tsp. brown sugar (honey or white sugar work too)
1 Tbsp. cornstarch

Steps:

  • In a small microwavable bowl add the water and the beef bouillon cubes. Place in the microwave for 30 seconds, mix until dissolved. I use the back of a spoon or the tip of a whisk to break up the bouillon cubes. (If you don't have a microwave, boil your water on the stove-top).
  • Add the soy sauce, Worchestershire sauce, ginger, garlic powder, pepper, brown sugar and cornstarch to the bowl with the water and bouillon. Whisk until smooth. (Add the red pepper flakes if you desire). Pour this mixture into the slow cooker.
  • Add the beef, bell peppers and onions onto the sauce in the slow cooker.
  • Cover and cook on LOW for 5 hours.

  • Trim about 1/8 inch from the bottom of each pepper so it can stand upright. Cut the top 1/4 inch off each pepper. Remove and discard the stems, then finely chop the remaining flesh from the tops and set aside. Scoop out and discard the seeds and as much of the membranes as you can from inside the peppers.
  • Mix the reserved chopped pepper with the ground beef, tomatoes and their juices, 1 cup of the cheese, cooked rice, garlic, 3 of the scallions, chili powder, cumin, 1 1/2 teaspoons salt and several grinds of black pepper in a large bowl with your hands until combined. Dividing evenly, spoon the filling into the hollowed-out peppers, packing it in (the filling will mound a bit above the tops).
  • Pour the chicken broth into the bottom of a 6-quart slow cooker, then add the stuffed peppers. Season the top of each pepper with another pinch of salt. Crock pot pepper steak is an easy homemade version of the classic Chinese American dish. Bell peppers and tender beef in a rich, thick sauce made with ginger, soy sauce and honey.

2 pounds sirloin (cut into 2-inch, by ½-inch strips)
2 teaspoons garlic powder
½ teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon canola oil (grapeseed oil, or a different neutral oil)
1 large yellow onion
¼ cup (plus 2 tablespoons water, divided)
2 green bell peppers (cored and cut into ½-inch strips)
2 red, yellow, or orange bell peppers (cored and cut into ½-inch strips)
1 15-ounce can fire roasted diced tomatoes in their juices
¼ cup low sodium soy sauce (plus additional to taste)
2 tablespoons Worcestershire sauce
2 tablespoons honey
1 tablespoon minced fresh ginger
¼ teaspoon red pepper flakes (plus additional to taste)
5 tablespoons cornstarch (divided)
Prepared brown rice (quinoa or cauliflower rice, for serving)

Steps:

  • Place the beef in a bowl and sprinkle with the garlic powder, salt, and black pepper. Toss to coat.
  • Heat the oil in a large skillet over medium high. Add the beef and cook on all sides until the beef is lightly browned, about 5 minutes (no need to cook it all the way through). Transfer the beef and any cooking juices to a 6-quart slow cooker.
  • To the skillet where you were just cooking the beef, add the onions. Increase the heat to high. Carefully pour in 1/4 cup water, stirring to scrape up any browned bits stuck on the pan. Sauté until the onions begin to soften and lightly brown and the liquid has cooked off, about 3 minutes, then transfer the onions to the slow cooker with the beef.
  • To the slow cooker, add the green and red bell peppers (see recipe note) and tomatoes. In a small bowl or a large liquid measuring cup, whisk together the soy sauce, Worcestershire sauce, honey, ginger, red pepper flakes, and 3 tablespoons cornstarch. Pour into the slow cooker.
  • Cover and cook on LOW for 6 to 7 hours, until the beef is tender (you can also make this recipe on HIGH, cooking it for 3 to 4 hours, though I find the beef comes out more tender on low heat).
  • In a small bowl, whisk together the remaining 2 tablespoons cornstarch with the remaining 2 tablespoons water to make a slurry. Stir the slurry into the slow cooker. Turn the slow cooker to HIGH and let cook, uncovered, for 10 minutes to further thicken. The pepper beef will still be saucy, but it should resemble a thick, rich gravy. Stir once more. Taste and add additional salt, soy sauce, and/or red pepper flakes to taste. Serve hot with prepared brown rice and a sprinkle of green onion.

4 banana peppers (mild or hot), seeds removed and sliced (Please wear gloves so your fingers don't burn afterwards!)
1 medium yellow onion, peeled and sliced
1-1.25 cups beef broth (If you buy a can with 2 cups, you can use the leftover broth in my Shepherd's Pie recipe)

Steps:

  • Combine all ingredients in your slow cooker and cook for 6-8 hours on "low." (The time depends on the strength of your slow cooker. You want the meat to fall apart and melt in your mouth.)
  • Remove beef from slow cooker and shred with a fork.

2 green peppers, sliced thin
1 small onion, chopped fine
1 cup beef broth
2 tablespoons low sodium soy sauce
1 teaspoon ground ginger
2 garlic cloves, minced
1 teaspoon Worcestershire sauce

Steps:

  • Cut the steak into serving size pieces. If desired, you can brown the meat in a little hot oil before adding to crockpot.
  • Place the thinly sliced pepper rings in bottom of crockpot, reserving a few to place on top of meat if desired.
  • Arrange the meat on peppers evenly, carful not to stack one piece directly on top of another.
  • Mix all other ingredients and pour over meat and peppers.
  • Cover and cook on low for 8-10 hours, or on high for about 4 hours.
  • Serve with mashed potatoes and/or steamed veggies.

Steps:

  • Pre-heat oven to gas mark 3 or 160
  • Mix flour seasonings & ginger in a large plastic bag. Use to coat beef
  • Heat oil in large casserole dish (suitable for use in the oven), fry beef in batches until browned on all sides.
  • Return all beef to pan
  • Mix sauce ingredients & add to pan. Heat until simmering gently
  • Place on lid, put in oven for 2 hours, stiring once after one hour
  • After 2 hours, add kidney beans & red pepper. Cook for further 30/40 mins. Serve with basmati rice & garlic bread

4 pound rump roast (or chuck roast)
16 ounce jar of pepperoncini peppers
1 stick unsalted butter
1 package dry ranch dressing
1 package dry Au Jus gravy

Steps:

  • Place rump roast into the slow cooker. Pour the entire jar (peppers and juice) of pepperoncini peppers over the roast. Add the stick of butter, then pour the dry ranch dressing and dry Au Jus over the top. Cover with the lid and cook on low for 8 to 10 hours, or on high for 4 to 5 hours.
  • Once finished, shred with a fork and serve! Enjoy!
