- Prep: Preheat oven to 430°F. Add a dark-colored pan or baking sheet to the oven as it heats up - the pan you use to bake the fish on needs to be hot to melt the butter on!
- Make breading: Mix all ingredients for the breading in a shallow dish.
- Prepare eggs: Add eggs to a SEPARATE shallow dish and beat well.
- Bread fish: Dip fish into breading to lightly coat. THEN coat fish with egg. FINALLY, coat fish with breading again, this time you can really pack on as much as will stick! (Just place breaded fish pieces on a plate until you've breaded them all.)
- Melt butter: VERY CAREFULLY remove the pan from the oven. Add 3 tablespoons of the butter to the pan to melt. Spread all over the pan and put the fish pieces on.
- Bake: Bake the fish for 10 minutes. Flip, add the remaining 1 tablespoon of butter and finish baking for 5-10 minutes or until the coating is crispy and the fish is cooked through.
- Finish: Broil for 2 minutes for a crisper coating. Let the fish rest on the pan for 2-3 minutes minutes after baking, then serve immediately.

CRISPY DEEP-FRIED FLOUNDER
Steps:
- Gather the ingredients. Heat the oven to 200 F, to keep fried fish warm while frying subsequent batches.
- Place the flounder fillets in a shallow baking dish; pour in enough milk or buttermilk to cover the fillets. Set aside.
- In a mixing bowl, combine the pancake mix or baking mix and cornmeal; stir to blend.
- In a deep heavy skillet or sauté pan, heat about 1 1/2 to 2 inches of oil to 365 F (185 C). If you don't have a deep-fry thermometer, toss a 1-inch cube of bread into the hot oil. It should turn golden brown in 1 minute.
- Drain the fish using a colander.
- Dredge each piece in the baking mix and cornmeal mixture, coating the fillets thoroughly on both sides. Shake off any excess.
- Add the fish fillets to hot oil and fry.
- Turn once after about 2 minutes, until golden brown and crisp on both sides (about 4 minutes total). Fry a few at a time to keep the oil temperature from dropping. If the temperature drops significantly and does not recover quickly, the coating will absorb more oil.
- Drain the flounder fillets on paper towels and sprinkle lightly with salt, to taste.
- Transfer the fried fish to a rack in a baking pan and keep warm in the preheated oven for up to 20 minutes, if desired.
- Serve fried flounder hot, garnished with lemon wedges and parsley sprigs, if desired.

- Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. - Line pan with tinfoil.
- Fold parchment paper to fit over tinfoil in pan. Must use parchment paper & line the pan for easy cleanup, important step!

- 1. Preheat oven to 450 degrees F. Grease a baking sheet & set aside.
- 2. Combine corn flakes or panko crumbs with flour, salt pepper, cayenne pepper, and paprika if using panko crumbs, place in zip lock bag or shallow dish.

- Preheat oven to 400º Fahrenheit. Spray a baking sheet with a generous amount of coconut oil spray. Cut fish into 8 equal pieces, salt lightly and place on paper towels. Cover will a few paper towels and press to dry the fillets. Set aside.
- Place almond flour, parmesan cheese, garlic, sea salt, black pepper, and red pepper flakes in a food processor. Process until garlic is crushed and mixture is completely blended. Add fresh dill and pulse a few times to chop dill and distribute through out the mixture. Pour mixture into a bowl.
- Place egg white in bowl. Dip each fish fillet into the egg white and turn to cover.

- The first step is to pat the fish dry with a paper towel on both sides. Next, rub the Shaoxing wine all over the fish on both sides. Mix together the salt and white pepper and rub it all over both sides of the flounder.
- Next, lightly dredge both sides of the fish with cornstarch. I sifted the cornstarch over both sides of the fish to get a uniform, light coating. If you don’t have a sifter or fine-meshed strainer to do this, you may need to use a lot more than 3 tablespoons of cornstarch to dredge the fish. You can also try patting it all over the fish with your hands and then shaking off the excess.
- Heat a carbon steel wok or very large frying pan over high heat until it just starts to smoke. Next, pour ⅔ cup canola oil around the perimeter of the wok to ensure it is fully coated and turn the heat down to medium high. Carefully place your fish in the wok.
- A fish of this size will need 5 to 6 minutes on each side. You should be getting a good sizzle in the wok, and the oil should be bubbling as you cook the fish. Tilt the wok or pan so the oil reaches all parts of the fish, and soon the flounder will begin to slide around the wok with ease. At this point, you will have to use your wok spatula to hold the fish gently while you continue to tilt the wok to cook the fish evenly. Make sure that the side fins, tail, and fish head are fried evenly as well. This process takes some coordination, but it sounds harder than it is!
