2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

2 ½ cups dates, pitted and chopped
½ cup packed brown sugar
1 cup water
3 cups rolled oats
2 cups all-purpose flour
1 cup packed brown sugar
1 teaspoon baking powder
½ teaspoon salt
1 cup shortening

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
  • To make filling: In a small saucepan, combine dates, brown sugar, and water. Bring to a boil and cook, stirring constantly for 10 minutes. Remove from heat.
  • To make the crust: Combine flour, oats, brown sugar, baking powder, and salt in large bowl. Cut in shortening until mixture becomes crumbly. Press half of crust evenly into baking pan. Spread date mixture over the top. Crumble remaining crust mixture over the top of date mixture.
  • Bake 20 to 25 minutes. Let cool on wire racks before cutting into bars.

3 large eggs
1 1/2 teaspoons vanilla
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3 cups pitted dates, coarsely chopped
1 cup chopped pecans

Steps:

  • Preheat oven to 375°F.
  • Cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time.
  • Stir in vanilla.
  • Mix together flour, baking powder, and baking soda; and gradually add to the creamed mixture.
  • Fold in the dates and nuts.
  • Spread the batter evenly in a greased 13x9 baking pan and bake at 375°F for 25 minutes or until golden.
  • Cool in pan.
  • Cut into approximately 24 bars.

1/4 cup granulated sugar
1 1/2 cups water
1 cup firmly packed brown sugar
1 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups old-fashioned rolled oats
3/4 cup (1 1/2 sticks) very cold butter, cut into small cubes

Steps:

  • Preheat oven to 400 degrees F.
  • In a nonreactive medium saucepan over low heat, combine dates, granulated sugar, and water. Cook, stirring constantly, until thickened, about 15 minutes. Cool completely. In a large bowl or bowl of an electric mixer, place brown sugar, flour, baking soda, salt, and oats. Mix on low speed until combined. While mixer is running, add butter, 1 piece or 2 at a time. Mix until crumb like, with some lumps of butter no larger than pea size.
  • Using your hands, press and flatten half of crumb mixture into a greased 9 by 13-inch pan. Spread cooled filling over crust. Cover with remaining crumb mixture, patting lightly. Bake until lightly browned, 25 to 35 minutes. Cool slightly and cut into bars while still in the pan. Gently remove cut bars from pan. Serve warm or at room temperature. Date bars, stored in an airtight container, refrigerate and freeze well.

1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar
1 1/2 cups quick oats
1 cup oleo
8 ounces pitted dates, chopped
1 cup water
1 cup sugar
1/2 teaspoon vanilla

Steps:

  • Combine the flour, soda, salt, oats, oleo, and sugar into a crumb-like mixture; spread 1/2 of mixture in a greased 13x9 pan.
  • Combine the filling ingredients together, except the vanilla.
  • Cook this mixture until thick.
  • Cool. Now add the vanilla.
  • Spread on crumb crust, put the other 1/2 of the oat mixture on top of the date mixture.
  • Bake at 350°F for 45 minutes.

1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.

Steps:

  • Preheat oven to 350°F. Butter 8x8-inch metal baking pan. Bring 1 1/2 cups water to simmer in medium saucepan. Add dates; simmer until very soft and thick, stirring occasionally, about 10 minutes. Cool to room temperature. Stir in vanilla.
  • Combine flour, sugar, oats, cinnamon, baking soda, and salt in large bowl; stir to blend. Add butter. Using fingertips, rub in until moist clumps form. Press half of oat mixture evenly over bottom of prepared pan. Spread date mixture over. Sprinkle with remaining oat mixture; press gently to adhere. 2 cups dried dates, pitted and chopped
1/2 cup granulated sugar
1/2 cup apple cider
1 teaspoon grated lemon zest

1/4 cup packed light-brown sugar

1/4 teaspoon ground cinnamon
4 tablespoons unsalted butter, room temperature

Steps:

  • Make the crust: Preheat oven to 375 degrees. Butter a 9-by-9-inch baking pan. Line with parchment paper, leaving a 2-inch overhang. Butter parchment; set aside.
  • In the bowl of a food processor, combine flour, sugar, salt, and butter. Pulse to combine. Add egg and pulse until evenly moistened. Transfer mixture to prepared pan; press into bottom (use the base of a dry measuring cup or a small offset spatula to help). Freeze for 10 minutes. Bake until lightly golden, 20 to 25 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. In a small saucepan, combine the dates, 1/4 cup brown sugar, orange zest, cloves, 1/2 teaspoon cinnamon, allspice, lemon juice and water. Cook over medium-high heat, stirring constantly, until dates are soft and the mixture becomes a thick paste, about 10 minutes. Remove from heat and set aside to cool.
  • To make the crust and topping, stir together the oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon and salt in a medium bowl. Cut in butter using a pastry cutter or your fingers. Mixture should be coarse and crumbly. Stir in 2 tablespoons water until evenly distributed. Press about 2/3 of the mixture into the bottom of the prepared pan. Spread the date mixture evenly over the crust all the way to the edges. Sprinkle the remaining crust mixture over the date layer. Press down lightly.

1 cup water
Scant 1 cup sugar
1/3 cup lemon juice
3 cups rolled oats
2 1/2 cups all-purpose flour
1 3/4 cups brown sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1 3/4 cups unsalted butter, melted

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

Similar to fig newtons but with dates! It uses honey to sweeten it instead of sugar which compliments the dates nicely. This recipe is from the American Wholefoods Cuisine cookbook.

1 cup chopped dates
1/4 cup water
2 tablespoons honey
1 cup flour
1 cup oats
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup oil
1/4 cup honey

Steps:

  • Preheat oven to 350°F.
  • Combine flour, oats, baking soda and salt. Stir in oil and honey until well blended together.
  • Combine dates and water and simmer in a saucepan for about 5 minutes until soft and thick.
  • Stir in honey.
  • Pat only half of the crust into a greased 8x8 square pan making a thin layer all the way to the edges.
  • Spread date filling over the crust smoothing it out so it covers all of the crust beneath it.
  • Pat the remaining crust out on wax paper and transfer ontop of the date filling, remove wax paper.
  • Bake for 20-25 minutes untili firm and golden.
  • Cool in pan.
  • Cut in small squares to serve. Enjoy!

Date bars are so good! This recipe is from an old cookbook of my mom's,(McCall's or Betty Crocker) and is a fond memory of my childhood. The index card I'm copying it from is one of the most stained in my collection. So trust me! You'll love these!

1 grated orange, zest of
1/4 cup orange juice
1/2 cup chopped nuts (optional)
1 cup flour

1/2 teaspoon salt
1 cup Quaker Oats (I never worry about whether they're quick cooking or not! I just dump 'em in!)
1 cup brown sugar
1/2 cup butter, melted

Steps:

  • For filling, combine all filling ingredients except for nuts in medium sized saucepan.
  • Cook over low heat, stirring occasionally til thickened.
  • Cool.
  • Stir in nuts.
  • For base, sift together flour, soda and salt.
  • Add oats and sugar.
  • Mix well.
  • Stir in butter.
  • Mix til crumbly.
  • Press 2/3 of mixture into greased 8" square pan.
  • Spread filling evenly over flour mixture.
  • Top with remaining mixture.
  • Pack light.
  • Bake at 350 for 30-35 minutes.
  • Cool completely!(Very important).
  • Cut into bars.

  • Press lightly.
