BUTTERNUT SQUASH GRATIN WITH ONION AND SAGE

Butternut Squash Gratin With Onion and Sage image

From Fine Cooking Magazine - Issue No. 17. To make butternut squash easier to handle, cut off the neck, peel it, and cut it into pieces to use in this gratin. Reserve the bottom of the squash, which contains the seed cavity, for roasting.

Provided by Veghead

Categories     Vegetable

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 11

1 tablespoon butter
1 tablespoon olive oil
2 large onions, chopped into 1-inch squares (about 4 cups)
3 tablespoons fresh sage, chopped or 1 tablespoon dried sage
3 lbs butternut squash, peeled and cut into 1/2-inch cubes (about 8 cups)
2 garlic cloves, minced
salt & freshly ground black pepper
1/2 cup heavy cream, plus
2 tablespoons heavy cream, heated until warm
1 cup fresh breadcrumb
1 1/2 tablespoons butter, melted

Steps:

  • Heat the oven to 350 degrees F. Lightly coat a gratin dish with butter. In a large skillet over low heat, melt the butter with the oil. Add the onions and the sage. Cover and cook over low heat while you prepare the squash.
  • Put the squash in a steaming basket and set over simmering water. Cover and let steam until the squash is tender, about 10 minutes. Put the squash in the prepared dish with the garlic and 3/4 teaspoon salt. Toss gently to combine.
  • Continue to cook the onions, stirring frequently, until they caramelize, about 25 minutes total. Season with salt and pepper and add them to the gratin dish, mixing them with the squash. Pour the warm cream over the vegetables. Toss the breadcrumbs with the melted butter and sprinkle the crumbs evenly over the gratin. Bake until the top is browned and bubbling, about 40 minutes.

STUFFED BUTTERNUT SQUASH

Stuffed Butternut Squash image

This is a refreshing change from the à la Gerber preparation that too frequently befalls the hapless squash. EAT THE SKIN, it's eminently edible and good for you.

Provided by fjbrad

Categories     Low Protein

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 7

1 small butternut squash
2/3 cup dates, chopped
1 medium onion, chopped
2 slices bacon, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
stock

Steps:

  • Remove the top as if cutting a jack-o-lantern and remove seeds and string. Remove the little 'button' from the bottom. Failure to do this will result in bad words being said when it comes time to slice.
  • Cook bacon till crisp and reserve. Drain and reserve fat from pan leaving only enough to sauté onion until it becomes translucent.
  • Chop enough dates so that the total mixture barely fills the cavity and add to the pan with the spices. Chop the bacon and return it to the pan. Add stock as needed to loosen the mixture. It must be stiff enough to slice after cooking but this will turn to cement without some liquid.
  • Fill the cavity with the date mixture and replace the top.
  • Put into a pan with 1/2 inch of water, cover, and bake for 40 - 60 minutes in a 375° oven. Test for doneness by removing the top and inserting a thin knife into the bottom of the squash (that way there are no perforations to spoil the presentation).
  • This makes an impressive presentation when sliced into wedges and surrounded by roasted vegies.

Provided by SPEARL20

Categories     Meat and Poultry Recipes     Pork     Sausage

Time 1h25m

Yield 4

Number Of Ingredients 9

1 (2 pound) butternut squash, halved and seeded
8 ounces bulk pork sausage
¼ cup chopped onion
2 cloves garlic, minced
⅓ cup grated Parmesan cheese
½ cup soft bread crumbs
½ teaspoon dried parsley
½ teaspoon dried oregano
¼ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place squash halves in a shallow pan and cover with water.
  • Roast in the preheated oven until tender, 35 to 45 minutes. Remove from the oven and cool partially, about 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; do not drain fat. Add onion and garlic to sausage and cook and stir over medium-high heat until onion has softened, about 5 minutes.

SQUASH STUFFED WITH DATES AND ONION

Squash Stuffed With Dates and Onion image

This is a refreshing change from the baby food preparation that too frequently befalls the hapless squash. It makes an impressive dish when sliced into wedges and surrounded by roasted veggies.

Provided by Rick

Categories     Side Dish     Vegetables     Onion

Time 1h25m

Yield 4

Number Of Ingredients 7

2 slices bacon, chopped
1 onion, chopped
⅔ cup chopped dates
½ teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons chicken stock
1 butternut squash

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook and stir bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes. Use a slotted spoon to remove bacon and discard most of the drippings, leaving about 2 teaspoons bacon drippings in the skillet. Drain bacon on paper towels. Cook and stir onion in the hot drippings until translucent, about 5 minutes.
  • Stir cooked bacon, dates, oregano, and basil into onion; add chicken stock to thin the filling.
  • Cut the top and stem from the squash, jack o'lantern-style, and scoop out seeds and stringy pulp. Cut out and discard small button at the bottom of the squash. Stuff the date filling into the cavity and replace the top. Set squash into a baking dish, pour in 1/2 inch of water, and cover with aluminum foil.
  • Bake in the preheated oven until squash is tender, 40 minutes to 1 hour. Test for doneness by removing top and inserting a thin, sharp knife into the flesh at the bottom. Slice squash into wedges to serve.
