Steps:
- 1. In a blender, add all ingredients EXCEPT Cool Whip.
- 2. Blend until all chocolate chips are melted.
- 3. Fold chocolate mixture into Cool Whip slowly.
- 4. Chill for 2-3 hours.....wait until done even though it begs you to try early!
- 5. Scoop into fluted cups or tall wine glasses.

I love the flavors of chocolate and raspberry together. I changed up a Mousse recipe that I had. I Topped it off with a raspberry whipped cream . It is a deep chocolate mousse. If you love chocolate. You will love this dessert. Enjoy all!

Steps:
- 1. Make raspberry sauce. Place berries and powdered sugar into food processor, or blender. Blend until smooth.
- 2. Place a sieve over a bowl. Pour sauce into sieve. Push raspberry mixture through sieve with a spoon. Make sure to scrape the sauce from the bottom of the sieve into the bowl as well. Discard Seeds that remain in sieve. Put aside in fridge.
- 3. Mousse: In a small sauce pan. Mix gelatin with water. Set aside for a minute while you beat cream. Beat powdered sugar and heavy cream in a bowl until soft peaks form. Place gelatin mixture on the stove on low heat. Mixture will start to dissolve. Do not make it hot. When it becomes liquid. Gradually pour a little bit at a time into cream while beating at the same time. Beat until stiff peaks form. Place cream in the refrigerator for later.
- 4. Place butter, marshmallows, chocolate, and water mixed with coffee into steel bowl or saucepan. Place sime water half way up the inside of another saucepan. Make sure the pan is wider than the one holding the chocolate. Heat pan of water to med high heat.
- 5. Place stainless steel bowl or other sauce pan over the water that is heating in pan on the stove. Stir constantly until mixture is totally dissolved and chocolate is shiny. Remove to cool.
- 6. Beat 1 cup of whipping cream in a bowl with powdered sugar until soft peaks start to form. Do not over beat. Refrigerate the cream until the chocolate cools. Slowly pour chocolate in to cream mixture by folding until completely combined. There should be no traces of white cream showing.
- 7. Place the chocolate mousse mixture In to 4 dessert dishes evenly distributed. Place dessert dishes into fridge until Mousse is set. it will be thickened.
- 8. Make the raspberry whipped cream. Take the cream that you mixed earlier with the gelatin out of fridge, and raspberry sauce. Fold raspberry sauce into cream. If you need to. You can beat again. . Place raspberry cream in to cake decorating bag with decorating tip, or spoon over mousse mixture before serving. You can also top ahead with the cream and let' sit in refrigerator and serve within 2 days. The Whipped cream will not melt. Enjoy!
DECADENT CHOCOLATE MOUSSE BARS
I made these for a company bake-off and won first prize. This is time consuming, but is one of the most fabulous chocolate desserts I have ever made! It can be made with or without the ganache topping, but I strongly suggest that you make it totally awesome by adding the ganche! Don't eat too many -- they are rich!

- To make crust:.
- Line a 9 x 13" cake pan with parchment paper.
- Melt milk chocolate in a double boiler.
- Stir peanut butter into melted chocolate. Place crushed corn flakes in a bowl and stir chocolate/peanut butter mixture over them, mixing well.
- Spread mixture evenly into prepared pan and cool in refrigerator.
- To make Mousse:.
- Melt semisweet chocolate in a double boiler. Cream butter and sugar in a mixer fitted with a paddle, beating until light and fluffy.
- Add sifted cocoa powder and mix well. Scrape down bowl and add chocolate.
- Continue mixing and add egg yolks, one at a time, beating well after each addition.
- Fold in heavy cream that has been beaten to firm peak.
- Mix well to incorporate, leaving no white streaks in the chocolate.
- Spread mousse over crust.
- Chill about 2 hours, until set. Cut into desired size bars with a sharp knife dipped in hot water. (1 x 4-1/2 " cuts will yield about 2 dozen bars).
- Place bars on a cooling rack that has been placed over a clean baking sheet. (Bars may be completed at this time or coated with ganache).
- If bars are soft, place rack in freezer until ganache is ready.
- To make ganache:.
- Melt chocolate in double boiler.
- Mix sugar and heavy cream in a small saucepan and bring mixture to a slow boil over low heat(be careful not to scorch the cream).
- Pour cream over chocolate and stir with a whisk to incorporate, making sure all the chocolate is melted.
- Strain mixture to remove any pieces of unmelted chocolate.
- Let cool for about 1 hour.
- Pour ganache over firm bars to coat. Refrigerate for 1 hour to firm ganache.
- The bars should be stored in the refrigerator.

- CRUST:.
- Combine Flour,Sugar,Cocoa,and Butter. Use two knives or pastry blender.(pastry blender works best.) Mixture will be crumbley. Press firmly into a 13x9 pan. Bake at 350 for 15 minutes.
- FILLING:.
- In saucepan combine both pkgs of semi-sweet Choc Chips,Vanilla, Milk,and Nuts if using. Stir until well melted. Pour over prepared crust.
- TOPPING:.
- Sprinkle Milk Chocolate chips on top and press on to top of filling. Bake for 20 minutes. Cool at least 10 minutes(will be hard to wait after smelling this bake! Cut into bars and enjoy,I cut into very small bars,this is very rich,and ya might overdose yourself on CHOCOLATE! Enjoy, Sassycook.

- In a 9X13 rectangular casserole pan, line with aluminum foil and spray with nonstick spray. Set aside.
- In a large mixing bowl, add the crushed chocolate graham crackers and add the melted butter. Stir until evenly distributed and the crumbs look like wet sand. Spread into the bottom of the pan evenly and use the bottom of a measuring cup to press into the pan. Place in the freezer for 15 minutes.
- NOTE: If you are using Brownie Brittle, you will need two 5 oz. bags to get to three cups of crumbs for the crust.
- Pour one cup of heavy cream into a small saucepan and bring to steam on low-medium heat. Add the chocolate chips to a separate bowl. Once the cream starts steaming, pour over the chocolate chips and allow to sit for about 2 minutes and begin to stir using a rubber spatula until the mixture is smooth and creamy. Set aside.
