This is a recipe from Kurma Das, the world best vegetarian cook. I can vouch for this dessert, it is TO DIE FOR. To many aficionados of Hare Krishna cooking worldwide, halava rates on top of the list of their favourite dishes. It's hot, buttery, sweet, flavoursome and completely satisfying, especially on a cold winter's day. In this recipe, the humble semolina teams up with the world's two most expensive spices - saffron and cardamom. Enriched with sultanas and flaked almonds, serve fluffy, plump grained halava hot with cream, custard, or as is for an epicurian experience.

2 3/4 cups water
1 1/4 cups sugar
1/2 teaspoon saffron strand, soaked in 1 tablespoon boiling hot milk
140 g unsalted butter
1 1/4 cups semolina (coarse grained)
1/3 cup sliced almonds
1 teaspoon ground cardamom
1/3 cup sultana

Steps:

  • Combine the water, sugar and the soaked saffron in a 2-litre/quart saucepan. Place over moderate heat, stirring to dissolve the sugar.
  • Bring to the boil, then reduce the heat to very low and cover with a tight-fitting lid.
  • Melt the butter in a 2- or 3-litre/quart saucepan over low heat, stirring occasionally.
  • Add the semolina, and slowly and rhythmically stir-fry the grains for about 20 minutes, or until they darken to a tan colour and become aromatic.
  • Add the flaked almonds to the grains towards the end of the toasting process.
  • Raise the heat under the syrup, add the cardamom and the sultanas, and bring it to a rolling boil.
  • Raise the heat under the semolina for 1 minute, stirring continuously.
  • Remove the saucepan of semolina from the heat, and slowly pour the hot syrup into the semolina, stirring steadily.
  • The grains may at first splutter, but will quickly cease as the liquid is absorbed.
  • Return the halava to the stove and stir steadily over very low heat until the grains fully absorb the liquid, start to form into a pudding-like consistency, and pull away from the sides of the pan.
  • Place a tight-fitting lid on the saucepan and cook over the lowest possible heat for 5 minutes.
  • A heat-diffuser works well. Removed the covered saucepan from the heat and allow the halava to steam for an additional 5 minutes.
  • Serve hot.

1 cup semolina
3/4 cup pure ghee (BUTTER OIL)
3/4 cup sugar
2 1/2 cups water
1 pinch saffron
almonds, slivers to garnish
cashew nuts, slivers to garnish

Steps:

  • Mix sugar and water and bring to the boil to make a syrup of one-thread consistency.
  • Add saffron and keep aside.
  • Heat pan and add ghee, wait for a few seconds till it is warm.
  • Now add semolina.
  • Stir till pinky brown on medium heat only.
  • Then add syrup and keep stirring till ghee separates.
  • Decorate with nuts.

2 cups sugar
2 cups water
1 medium lime, zest of
1 medium lemon, zest of
1 teaspoon rose essence or 1 teaspoon rose water
3 teaspoons honey
3 cups semolina cream of wheat
1/2 cup flour
1 cup white sugar
3 eggs
1 medium lemons or 1 medium lime, which the peel was used for the syrup
1 cup soured milk, squeeze the lime or 1 cup lemon, into 1 cup of milk to make this
16 tablespoons butter
1/2 teaspoon baking powder
whole almond, for garnishing
unsalted pistachios, for garnishing

Steps:

  • For the syrup:.
  • put all the ingredients together except for the rose water in a pot and bring to a boil.when it starts to boil, put in the rose water and let boil.it should look like syrup but should not be thick.don't let it reduce too much.let it sit while the cake is baking.
  • for the cake:.
  • while the syrup is put to boil, start the mixture of the cake.mix butter and sugar together(before doing this, make ure butter is very soft.cutting it up in small cubes always help).do not use a hand mixer or a cake mixer (this causes it to be too airy and we don't want this) but, use a fork or a potato masher.the butter and sugar does not need to be melted into each other.
  • now add the eggs and the dried ingredients to this.lastly, add in the soured milk.mix into the mixture and pour into a buttered dish.it should only be poured 1 inch in height.
  • put into oven at 325 degrees for 20 mins, then take out and cut into squares depending on the sizes you want and place back into oven for 5 - 10 mins.take out and pour sugar syrup all over the cake,making sure that the whole cake gets enough syrup.let cool and eat.
  • the pistachios can be crushed and sprinkled over entire cake and an almond goes on each square.
  • nb:it tastes alot better the next day so this can be made a day ahead.

Steps:

  • Heat oil in a frying pan .
  • Add flour, reduce heat and stir frequently until becomes golden.
  • In another pot,add the sugar to one glass of water and bring to a boil.
  • Add saffron and rosewater and stir.
  • Let flour cool slightly, then add the mix and stir well. If the mix is not thick, heat for 1-2 minutes but not longer.

1 1/2 cups sugar

Steps:

  • Melt the butter.
  • Add semolina and pine nuts and roast by stirring for 10-15 min until pine nuts turn to light brown. (stove on medium heat).
  • Add water, milk and sugar respectively wait until boiling bubbles are observed. (increase the heat level).
  • Lower the heat (to low to medium) and stir occasionally untill the water runs out.
  • Turn off the heat, cover the lid of the pot and let it cool down.
