SLOW-COOKER BEEF CURRY



Slow-Cooker Beef Curry image

2 1/2 pounds cubed beef stew meat
1 pound small red-skinned potatoes, quartered
2 tablespoons Madras curry powder
1 1/4 teaspoons ground cumin
2 tablespoons finely chopped peeled ginger
2 large cloves garlic, grated
Kosher salt and freshly ground pepper
5 slices naan bread
2 15-ounce cans diced fire-roasted tomatoes
1 1/4 cups fresh cilantro
1/4 cup sliced pickled jalapeno peppers, plus 1 tablespoon brine from the jar

Steps:

  • Toss the beef and potatoes with the curry powder, 1 teaspoon cumin, 1 tablespoon ginger, the garlic, 1 teaspoon salt and a few grinds of pepper in a 6-quart slow cooker. Crumble 1/2 slice of naan into small pieces over the beef and potatoes, then pour in the tomatoes. Cover and cook on low, 7 hours.
  • Uncover and skim off any fat from the top of the mixture. Stir well to combine, then let stand 10 minutes. Meanwhile, combine the cilantro, pickled jalapenos and brine, 1/4 cup water and the remaining 1/4 teaspoon cumin and 1 tablespoon ginger in a food processor. Pulse until combined; season with salt and pepper.
  • Stir 3 tablespoons of the cilantro puree into the slow cooker; season with salt and pepper. Reserve 2 cups beef curry for Beef and Vegetable Handpies. Serve the remaining curry with the naan; top with the remaining cilantro puree.

750g beef for braising (braising steak, chuck, flank etc) cut into chunks
3 tbsp oil
1 onion, chopped
4 garlic cloves, crushed
5cm piece ginger, grated
4 cardamom pods
1 cinnamon stick
1 tbsp ground coriander
2 tsp ground cumin
½ tsp ground turmeric
½ - 1 tsp chilli powder
400ml coconut milk (see tip)
small bunch coriander, chopped

Steps:

  • Heat your slow cooker if you need to. Fry the beef in batches in 2 tbsp oil until it is browned all over and tip into the slow cooker. Put the remaining oil in the frying pan and fry the onion over a low heat until it starts to soften. Add the garlic and ginger and fry for 1 minute.
  • Add all the spices and fry for 1 minute or until the spices start to smell fragrant. Add the coconut milk and bring to a simmer, then tip everything into the slow cooker.
  • Cook for 4 hours on high or 8 hours on low. Stir in the coriander and serve.

Another find from the paper, recipe written by Jeremy Vincent. This is wonderful Indian style meal, easy to make and I think is better than most you get at any Indian restaurant. I am posting as written, although I did make a few changes as I used light coconut cream and added parsley instead of coriander.

1 kg oyster blade meat, cut into 5cm cubes
3 tablespoons olive oil
2 large onions, finely chopped
1 tablespoon ginger, minced
2 tablespoons garlic, minced
4 tablespoons curry powder
1 teaspoon turmeric
2 teaspoons black mustard seeds
2 teaspoons salt
1 tablespoon malt vinegar
1 fresh chili pepper, finely chopped
4 roma tomatoes, quartered
1/2 cup water
400 ml coconut cream
1 bunch fresh coriander, roughly chopped

Steps:

  • Cut the beef into cubes, removing any sinew or fatty tissue. Set aside.
  • In a large heavy-based saucepan heat the oil & add the onion, ginger and garlic and stir until the onion is opaque. Add the curry powder, turmeric, mustard seeds, salt and vinegar. Stir for 3 minutes.
  • Add the reserved beef pieces and stir to coat the meat with the spice mixture. Add the chilli, tomatoes, water, coconut cream and coriander (reserving some coriander to garnish the curry just before serving). Stir to combine and cover with a lid.
  • Simmer for 2 hours over a medium heat until the meat is tender. Check for seasoning and adjust if necessary.
  • To serve, scatter with reserved chopped coriander.
  • Accompany with steamed rice, chutneys and wedges of lime or lemon to squeeze over at the table.

2 tbsp oil
500g diced braising steak
1 tbsp butter
1 large onion , chopped
2 garlic cloves , crushed
1 thumb sized piece of ginger , finely grated
¼ tsp hot chilli powder
1 tsp turmeric
2 tsp ground coriander
3 cardamom pods , crushed
400g can chopped tomatoes
300ml beef stock
1 tsp sugar
2 tsp garam masala
2 tbsp double cream (optional)
½ small bunch coriander , roughly chopped
naan bread or rice, to serve

Steps:

  • Heat one tbsp of the oil in a casserole pot over a medium-high heat. Season the beef and fry in the pot for 5-8 mins, turning with a pair of tongs half way until evenly browned. Set aside on a plate.
  • Heat the remaining oil and butter in the pan and add the onions. Fry gently for 15 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, ground coriander and cardamom and fry for two mins. Tip in the tomatoes, stock and sugar and bring to the simmer.
  • Add the beef, put a lid on top of the curry and cook over a low heat for 1 ½ - 2 hrs or until the meat is tender and falling apart. Remove the lid for the last 20 minutes of cooking.
  • Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice.

I love curries, and the beef (instead of chicken/pork/lamb) is a nice change. Adjust the curry to your taste, I like mine pretty strong! You could use ground sirloin, too, and serve it over mashed potatoes...sounds weird but both of the end results are fabulous!

3 tablespoons canola oil
1/3 cup onion, chopped
3 garlic cloves, minced

Steps:

  • Heat the oil over medium heat and saute the onion for about 3 minutes, or until translucent.

  • Add the beef and stir.
  • Add 1/2 cup water and bring to a medium simmer. Cover, and cook for about five minutes.
  • Add enough water to cover the beef and cover once again.
  • Cook for 1-2 hours (adding water as needed), or until meat is tender and the sauce is thick.

1 ½ kg / 3.30 lbs beef, cut into bite size pieces (washed, rinsed and drained)
3 red onions, sliced
1 ¾ cup shallots,
3 whole bulbs garlic, ( the smaller variety is best , around 1 cup, finely chopped)
3/4 cup ginger, finely chopped
2 tomatoes, diced
5-8 small green chillies, sliced
fresh curry leaves 2 large handfuls of
5 Tbsp coriander powder
3 Tbsp chili powder
1 Tbsp Kerala garam masala ( check out my recipe)
1 Tbsp turmeric powder
A large handful of fresh coriander leaves
10- 12 Tbsp coconut oil
1/2- 3/4 tsp rock salt ( to taste)

Steps:

  • Heat coconut oil in a pressure cooker.
  • Add the sliced onions and tomato and allow to cook for a minute.
  • Stir and saute well till softened, golden and reduced/thickened.
  • Add the finely chopped shallots, garlic, ginger, and green chili.
  • Sauté well till softened, cooked and reduced as well.
  • At this point, add all the spices: coriander, chili powder turmeric, and garam masala. Stir and allow the spices to cook on a low flame. Add curry leaves. Stir till the spices are aromatic.
  • Turn off the flame at this point to mix in the fresh coriander leaves and beef. Stir well, tossing to coat the beef well with this masala mixture.
  • Also, add rock salt.
  • Splash in just a little water to wash off your ladle and moisten the beef.
  • Cover and pressure cook on high for the first 2 steam whistles.
  • Proceed to turn down the heat to low and cook for another 6 steam whistles.
  • Allow to cool, before opening.
  • This curry tastes even better if you allow it to rest.

The curry roux, from no heat to very spicy, can be bought at any international grocery store. It can be served over white rice or with udon noodles. This recipe is very flexible; it can easily be made for more or less people. It can also be frozen (don't put the potatoes in).

600 g cubed beef (( about 1 1/2 pounds of beef))
2 onions
3 cloves of garlic
3 large tomatoes
1 tbsp garam masala
1 tsp turmeric
1 tsp chilli powder

5 cups beef stock ((broth))
1 tbsp vegetable oil
2 tbsp double cream ((heavy cream))
fresh parsley or coriander to garnish
1 tbsp fresh ginger ((or ground ginger))
salt and pepper to taste

Steps:

  • In a pan, heat up the oil, and gently fry the chopped onions until slighlty brown.
  • Add the garlic, ginger and all the spices, and give it a good stir. Leave to cook for about 30 seconds or so for the flavours to be released.
  • Add the chopped tomatoes, and leave to cook until slightly mushy.
  • Add the cubed beef, give it a good stir, then leave to cook with the lid on for 15-20 minutes or until all the liquid has been absorbed.
  • Gradually add one cup of beef broth at a time, and cook until the beef is tender, it might take about one hour and a half or so.
  • Once the beef is tender, and the sauce is reduced, add the cream, and leave to cook for a further 5 minutes. Season with salt and pepper to taste.
  • Remove from the heat, and garnish with fresh parsley.

1/2 pound flank steak
1 medium onion
1/2 cup chicken broth or stock
1 teaspoon dark soy sauce
1/2 teaspoon sugar
1/4 teaspoon salt
1 1/2 teaspoons cornstarch (mixed in 3 tablespoons water)
2 tablespoons curry powder (mixed with 2 tablespoons water to make a paste)
1 to 2 teaspoons Chinese rice wine or dry sherry
1 to 2 tablespoons peanut, canola or other vegetable oil for stir-frying

Steps:

  • Cut the beef across the grain into thin strips, approximately 1 1/2 inches long and 3/4 inch wide. Peel and chop the onion.
  • In a small bowl, combine the chicken broth, dark soy sauce, sugar, and salt. Set aside. In another small bowl, combine the cornstarch with water and set aside.
  • Preheat the wok on medium-high heat; the wok is ready when a couple of drops of water sizzle are added.
  • Pour 1 to 2 tablespoons oil to the wok, drizzling to coat the sides. When the oil is hot, turn the heat down to medium and add the onion. Add the curry powder, brown briefly, then add the water to make a paste.
  • Turn the heat back up to medium-high. Push the onion to the sides and add the beef in the middle. Sear for about 30 seconds, then stir-fry until the redness is gone, about 2 minutes. Splash the beef with the rice wine or dry sherry while stir-frying.
  • Add the sauce to the wok. Bring to a boil and cook for another 2 to 3 minutes.
  • Remove the wok from the heat. Give the cornstarch and water mixture a quick re-stir. Stir the cornstarch and water mixture into the sauce. Return the wok to the burner and continue stirring until the sauce thickens. Serve hot over rice.

Easy ground beef curry with tender minced beef, potatoes, tomatoes and aromatic curry sauce.

10 oz Ground beef (( About 300g minced beef ) Or chicken/turkey)
1 Potato ((1 large potato, cut in small cubes))
2 Shallot onion (( fine chopped ))
2 Vine ripen tomato (( chopped ))
1 tbsp Tomato puree (Or tomato concentrate/paste)
1 tsp Ginger paste
1 tsp Garlic paste
3 tbsp Oil (or ghee)
1½ cup Warm water (add more water if needed)
½ tsp Turmeric powder
1½ tsp Garam masala powder
½ tsp Cumin powder (( Jeera powder ))
1 tsp Chilli powder (( Or paprika powder ))
1½ tsp Salt (( Or add salt according to your taste ))
¼ tsp Black pepper
Cooked basmati rice (( Nann/Chappati or Flat bread ))
Coriander/Cilantro chopped (( for garnish ))
Fresh chilli sliced (( for garnish ) optional)

Steps:

  • Finely chop the shallot onions, vine tomatoes and coriander. Cut the potato into small cubes.
  • In a large pan or skillet, drizzle 3 tablespoon of oil and sauté the potato cubes with medium heat until golden brown. Remove from oil and set aside.
  • In the remaining oil, add the chopped onions and sauté them until translucent, then add the garlic paste and ginger paste in. Stir for few seconds and follow with chopped tomatoes.
  • When the tomatoes become soft, add the tomato puree, salt, turmeric, garam masala, chilli powder, cumin powder. Stir well for 5 seconds, follow with the ground beef and cook until the beef changed into brown and no longer pink.
  • Place the sautéed potato cubes back in. Pour the warm water in, stir well, close the lid and simmer for another 8-10 minutes with low heat until the beef potatoes are cooked. You can add extra warm water if the sauce is too thick.
  • Turn off heat, stir in the chopped coriander, fresh ground black pepper and transfer to serving plate.
  • Serve over a bowl of cooked basmati rice and garnish with extra chopped coriander and fresh chilli slices. Or you can serve with any of your favourite naan, chapati, or flatbread.

You can substitute the beef for chicken or prawns.

Steps:

  • Heat the oil in a large saucepan and brown the beef.
  • Add the curry paste and powder and cook out for a minute or two before adding the sliced onion and pepper.
  • Add the tin of tomatoes and mango chutney to the saucepan, season with salt and pepper stir.
  • Cover saucepan with lid and simmer gently for about 1 hour, stirring occasionally.

The beef curry I make is kind of a mix between Indian curry and Thai curry. It sounds a little odd, but we absolutely love it! It reheats well, too, and it can be made ahead and kept hot in a crock pot. It is a very saucy curry; if you don't like a lot of sauce, then cut back to one can of coconut milk. The toppings are only suggestions--pick and choose what you like or try something new!

2 onions, peeled and thinly sliced
2 -3 lbs beef top round steak, cut into 1-inch cubes
3 -4 tablespoons Madras curry powder (we prefer Green Ship brand, which we buy at the local Indian market)
water
2 (14 ounce) cans coconut milk (light or regular, but not coconut cream)
hot jasmine rice (or whatever kind of rice you like) or basmati rice (or whatever kind of rice you like)
chutney (I like mango chutney)
chopped hard-boiled egg (separate white and yolk for a nicer presentation)
chopped green onion
raisins (we use golden raisins)
chilled canned mandarin oranges, drained
roasted peanuts or roasted cashews

Steps:

  • In a large, deep skillet or chef's pan, heat oil over medium-high heat until hot but not smoking. Saute onions until tender. Add curry powder, toss to coat, and cook 1-2 minutes longer.
  • Add beef and brown 3-4 minutes, scraping pan often. If curry powder sticks to bottom, add a little water to deglaze whenever needed to prevent scorching.
  • Add about 1 pint of water and mix in, scraping any bits off the bottom of the pan in the process. Bring just to a boil, reduce heat to low, and simmer, uncovered, for about 45 minutes to 1 hour, or until most of the water has cooked off.
  • Remove from heat and stir in both cans of coconut milk. Return to heat and heat over medium-low heat until just beginning to simmer.
  • Serve in bowls over rice, with desired toppings.

1 lb ground beef
1 tbsp oil
1 onion (chopped)
2 tomatoes (chopped)
1 tbsp minced ginger
4 cloves garlic (minced)
1 tsp cumin powder
1 tbsp curry powder
1/2 tsp cayenne pepper (optional)
pinches salt & pepper (to taste)
1 cup chicken stock
1 tbsp soy sauce
1 cup frozen peas
1 handful cilantro (chopped)

Steps:

  • Heat oil in a pot over medium heat, add the onion, garlic, ginger and cook until soft.
  • Add the spices and stir for a few seconds. Add the ground beef and cook until browned. Season lightly with salt and pepper.
  • Add the tomatoes and stir. Pour the chicken stock and stir to combine. Cover with a lid and simmer for 10 minutes over med-low heat.
  • Add the soy sauce and stir. Season more with salt and pepper if needed. Add the peas and simmer for 5 more minutes
  • Lastly add the cilantro and serve with basmati rice or naan bread.

Thai Beef Curry is a simple to make and absolutely delicious Thai curry recipe. The beef is simmered in a flavorful coconut curry broth until super tender. We add butternut squash which thickens the curry and adds the perfect sweetness. You'll love it!

2 lbs stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons cooking oil (see notes)
1 medium onion (minced)
1 tablespoon minced ginger
4 cloves garlic (minced)
4 cups beef stock ()
4 tablespoons red Thai curry paste
3 tablespoons fish sauce
1 medium butternut squash (chopped into 1-inch pieces (see notes))
Juice from 1 lime
15 ounce can coconut milk
Sea salt (to taste)
To serve: minced Thai basil or cilantro

Steps:

  • Dry the beef with paper towels then season it with salt and pepper.
  • Heat the oil in a large pot over medium-high heat. Working in batches, brown the beef on all sides. Remove the beef from the pot.
  • Add the onion, ginger, and garlic and cook until they are soft, about 5 minutes. Add the beef stock, curry paste, and fish sauce and scrape off the dark bits (the fond) from the bottom of the pot.
  • Add the beef to the pot and bring it to a boil. Reduce the heat, cover the pot, and simmer gently for 1 hour.
  • Add the squash to the pot and continue to cook for 20 minutes, or until the squash is tender. Add the coconut milk and lime juice and season to taste with salt. Serve with Thai basil or cilantro on top.

We dont like things to hot, and never really eaten curry dishes, but this recipe introduced the family to curry, and the family really enjoyed the flavours of a light curry. I served over plain rice, but you could use your own preference..

2 tablespoons oil
1 onion, diced
2 tablespoons curry paste, mild Indian curry paste
500 g beef, diced
420 g condensed vegetable beef soup
500 ml water
2 tomatoes, diced
2 tablespoons mint leaves, freshly chopped
1/4 cup yoghurt, low fat natural, unsweetened (optional)

Steps:

  • Heat the oil in a large saucepan. Add the onion and curry paste and cook for 3 minutes. Add the beef and cook until browned.
  • Add the soup and water. Bring to the boil, reduce heat and simmer uncovered, stirring occasionally, for 40 minutes or until beef is tender.
  • Stir in tomatoes cook for 2 minutes until heated through.
  • Stir in mint & serve with yoghurt and steamed rice.

This stewed curry beef can be added to the rice or served separately over the rice. It's a simple budget beef recipe with curry powder for flavor.

1 1/2 pounds beef chuck (stewing beef, lean)
Salt and black pepper
1/2 cup all-purpose flour
1 tablespoon vegetable oil
3/4 cup very hot water
2 cups hot cooked rice
1 tablespoon of curry powder or more, to taste
1 tablespoon chopped pimiento

Steps:

  • Gather the ingredients.
  • Cut the stew beef into small 1/2-inch cubes. Sprinkle the beef with salt and freshly ground black pepper and then toss with the flour.
  • Heat the vegetable oil in a heavy skillet over medium-high heat. When the oil is hot, brown the beef, turning to brown all sides.
  • Add the hot water to the pan and bring to a boil. Reduce heat, cover, and simmer for 2 hours. Check occasionally and add more water if necessary.
  • Cook the rice following package directions.
  • Add the curry powder and pimientos to the beef and mix well.
  • Taste and adjust seasonings.
  • Add the rice to the beef or serve the beef on a bed of rice.
  • Enjoy!
