- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain. In the same skillet, saute onion in butter and oil until tender. Add garlic; cook 1 minute longer. Stir in wine; bring to a boil. Simmer, uncovered, for 5-8 minutes or until liquid is reduced by half., Add the green beans, salt, garlic powder and pepper; heat through. Stir in lemon juice and bacon.

- Place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook for 4-7 minutes or until crisp-tender. Drain and immediately place beans in ice water. - Use a microwavable steamer to steam your string beans for 3 minutes. You can also blanch them (see the post for details).
- Heat the olive oil in a pan over medium-low heat.
- Add the shallots and garlic. Sautee them until they are translucent.
- Add the green beans and butter. Saute until they reach your desired level of tenderness (~5 minutes)
- Season with Salt & Pepper to taste

- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

- Heat olive oil in a 10-inch saute pan over medium-high heat. Add onion and cook until it starts to become translucent, 2 to 3 minutes. Add garlic and saute for 1 minute. Add vinegar and scrape and stir the brown bits from the pan.
- Add green beans, butter, red pepper flakes, salt, and pepper; toss several times to mix with onions and garlic. Cook until beans are heated through and just start to lose their bright green color, about 5 minutes. Serve immediately.

SAUTEED GARLIC GREEN BEANS
We grow Italian Green Beans each year and I love to saute them in a pan with olive oil, onions and lots of garlic! Of course this recipe works with string beans or asparagus as well!

Steps:
- 1. Clean green beans and cut into 2-3 inch lengths. Chop onion and garlic and heat extra virgin olive oil (or vegetable oil if you don't have any) in a large skillet on medium heat. Place garlic and onion in pan and saute for a minute or two, just until they begin to turn translucent (I add some salt and pepper to the onions & garlic to season them also).
- 2. Add the green beans to the pan, sprinkle some balsamic vinegar or Garlic Red Wine Vinegar on top, season to taste with sea salt and coarse ground pepper and toss to coat well.
- 3. Cover with a lid, turn down heat to medium/low and continue to simmer for about 20-25 minutes, tossing occasionally to cook evenly.
- 4. The green beans are done when they are tender. Top with dots of butter, toss and they are ready to serve. These are delicious when served alone as an appetizer or with just about anything else as a side dish!
EASY STRING BEANS AND ONIONS
Steps:
- In a saute pan with straight sides or a medium pot, add the olive oil and raise the heat to medium-high. Add the onions and season with a pinch of salt and grind or 2 of pepper. Cook the onions, stirring and moving around, until tender and translucent, about 4 minutes. Add the garlic and lower the heat. Continue cooking until fragrant and tender, about 2 minutes. Add the string beans and season with salt and pepper. Stir to coat, and then add the chicken stock. Raise the heat to a simmer and cover. Cook until the green beans are very tender, about 25 minutes. Spritz with lemon just before serving.

- Rinse the beans with cold water and trim off ends.
- In medium saucepan, steam the beans (tightly covered) in about 1/4 cup water until tender, about 5 minutes; remove from water to drain well, and set aside (I pat them dry with paper towels).
- In a skillet heat the oil or butter (can use both).
- Add in sliced onions, and chopped garlic; saute for about 3 minutes.

- Halve cherry tomatoes, trim and halve onions (an equal amount of regular onion can be used- it's not as pretty, but it's quicker!).
- In a hot skillet, add a small amount of chicken broth.
- Add onions and saute over medium heat until they begin to soften and start to brown slightly, about 5 minutes (depends on the size of your onions, though!) Add tomatoes, and reduce heat to medium low.
