I saw the basic recipe on allrecipes.com which was posted to that site by SharonB13.The name is the same as her's, but I changed a few things to the recipe and decided to post it under my own name.Submitted to Food.com ( A.K.A. SIMPLY DELIGHTFUL AND EASY LIMA BEANS

Simply Delightful and Easy Lima Beans image

I love lima beans and wanted to make a simple recipe that was tasteful but quick and easy to make. I had made something similar years back but changed it to suit my taste.

Provided by ForeverMama

Categories     Beans

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 (10 ounce) package frozen lima beans
2 1/2 cups water
4 garlic cloves, crushed
3 fresh thyme sprigs (leaves only, refer to Note below. Use fresh thyme only, not dried)
1 bay leaf
2 -3 tablespoons extra virgin olive oil (good quality brand, or else it won't taste the same)
1/2 teaspoon sea salt (more or less to taste)
1/4 teaspoon fresh ground black pepper

Steps:

  • Place frozen lima beans in a saucepan. Cover with the water.
  • Add garlic, thyme and bay leaf and stir. Bring to a boil. Cover, reduce heat, and simmer 15 - 20 minutes or until tender.
  • Into a sieve that is place over a bowl, pour off broth. Pour approximately 1/2 - 1 cup of broth back into saucepan with lima beans. Shake any garlic or thyme that sticks to sieve back into the lima bean mixture. Discard bay leaf. Stir in salt and pepper to taste. Evenly pour olive oil over all and stir. Check for seasoning and adjust with salt, pepper, olive oil, if necessary. Serve hot.
  • NOTE: to remove leaves from stem, turn stem upside down and run both index finger and thumb down main stem. This will remove outer stems and leaves. Add outer stems and leaves to dish. Do not chop.

LIMA BEAN DIP

Lima Bean Dip image

Provided by Food Network Kitchen

Categories     appetizer

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 7

1 10-ounce box frozen lima beans
2 cloves garlic
1/4 cup loosely packed fresh parsley
Grated zest and juice of 1/2 lemon
1/4 cup extra-virgin olive oil
2 slices bacon, cooked and crumbled
Pita chips and/or vegetable sticks, for serving

Steps:

  • Bring a saucepan of salted water to a boil. Add the lima beans and garlic and simmer until tender, 18 to 20 minutes. Drain and rinse under cold water to cool slightly (the beans should be warm but not hot).
  • Pulse the lima beans, garlic, parsley, lemon zest, lemon juice and 1 1/2 teaspoons salt in a food processor until just combined. With the motor running, pour in the olive oil and process until incorporated but still slightly chunky. Transfer to a bowl and top with the bacon. Serve warm or at room temperature with pita chips and/or vegetable sticks.
  • Buy lima beans frozen: They're bright green and buttery tasting. The olive-colored, mushy lima beans you remember from childhood were probably canned.

From livestrong.com
Author Krista Sheehan
  • Sort Dried Lima Beans. Scatter a handful of dried lima beans on a white plate. Examine the beans carefully, tossing any dirty, wrinkled or broken beans.
  • Place Sorted Beans in Bowl. Pour the beans into a large bowl. Repeat steps one and two until all beans have been inspected, sorted and poured into the large bowl.
  • Cover in Water. Fill the bowl with cold water until the beans are completely covered. Ideally, use at least three times the amount of beans, as recommended by Michigan State University Extension.
  • Soak Beans Overnight. Soak the beans overnight. By the next day, you should find that the beans have doubled in size. In fact, most of the water should have been absorbed.
  • Rinse, Drain and Repeat. Rinse and drain the beans at least three times. When you are finished, the water should run clear.
  • Cover With Fresh Water. Pour the beans into a heavy pot or saucepan. Add fresh water to the pot until the beans are covered. Ideally, there will be at least 1 inch of water above the beans.
  • Boil Your Beans. Bring the beans to a boil over medium-high heat. The amount of time it takes to produce a boil depends on the size of the pot you use, the amount of beans you are cooking and the temperature you use to cook them.
  • Cook Lima Beans. Reduce the heat to low once the beans have boiled. Cook lima beans by simmering them for 40 to 60 minutes or until tender. During the simmering process, stir the beans regularly to avoid sticking.
  • Remove, Strain and Serve. Remove from heat once the beans are cooked completely. The beans are completely cooked once they can be mashed easily with a fork or your fingers.

Estimated Reading Time 3 mins
  • Brunswick Stew. This classic Southern stew came about to stretch whatever people had on hand, so it works well to clean out your fridge too. Use chicken parts, red skin potatoes, lima beans, and corn in a satisfying tomato broth to make this version.
  • Creamed Lima Beans. Steakhouse fans already know the magic of creamed spinach, but you're in for a treat if you've never applied the technique to lima beans.
  • Succotash with Okra. Fresh and colorful succotash makes the most of summer's best produce, with corn, tomatoes, fresh lima beans, and okra. If they aren't in season yet, canned petite diced tomatoes and frozen corn, beans, and okra will work.
  • Creamy Succotash. You may already have the ingredients for this simple and creamy blend of lima beans, corn, and bell peppers. Frozen lima beans and either fresh or frozen corn works, depending on the season.
  • Lima Bean Soup with Ham. This ham, lima bean, and vegetable soup has enough staying power to serve as a main dish, and works well with frozen lima beans.
  • Slow Cooker Baby Lima Beans. Adding a ham bone and diced ham to baby lima beans, along with some Cajun seasoning and onion, gives the tender lima beans plenty of Southern flavor.
  • Baked Succotash Casserole. Try succotash components in a whole new way with this baked recipe. Canned corn and lima beans blended with shredded cheese, milk, and eggs get topped with a buttery Saltine cracker crust for a bubbly, warming dish that makes the most of pantry staples.
  • Kentucky Burgoo Stew. The origin of this comforting stew's name is under some dispute, but you can't deny the flavor. Lima beans, cabbage, corn, peppers, carrots, okra, and both chicken and beef stew meat cook up into a delicious meal.
  • Solterito Corn and Lima Bean Salad. This Peruvian salad combines creamy lima beans, salty olives, zesty red onion, and creamy queso fresca cheese with a little spicy chile and a simple red wine vinaigrette for a lovely spring or summer side.
