2 tablespoons vegetable oil
2 pounds chicken breast, cut into 1-inch cubes
1 basket cherry tomatoes
2 red or green bell peppers, cut into 1 1/2-inch pieces

Steps:

  • Combine 1/2 cup teriyaki sauce, 2 tablespoons pineapple juice and oil; pour over meat pieces in shallow glass dish. Refrigerate; marinate 1 hour, turning occasionally. Thread meat on skewers alternating with vegetables and pineapple chunks. Discard remaining marinade.
  • Grill 4 to 5 inches from heat, turning skewers and brushing with additional marinade, about 15 minutes or until desired doneness.

1/3 cup soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon seasoned salt
1-1/2 pounds beef top sirloin steak, cut into 1-1/4-inch cubes
12 whole fresh mushrooms
1 large green pepper, cut into 1-1/2-inch pieces
1 large onion, cut into wedges
12 cherry tomatoes
Hot cooked rice, optional

Steps:

  • In a bowl, combine soy sauce, oil, brown sugar, garlic, ginger and salt. Pour half of the marinade into a shallow bowl; add beef and turn to coat. Cover and refrigerate for 4-8 hours, turning occasionally. Cover and refrigerate remaining marinade. , Drain and discard marinade. Alternate meat, mushrooms, green pepper, onion and tomatoes on metal or soaked wood skewers. Grill, uncovered, over medium heat for 3 minutes on each side. , Baste with reserved marinade. Continue turning and basting for 8-10 minutes until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve meat and vegetables over rice if desired.

10 baby sweet peppers
1 onion, halved then quartered
1 fresh pineapple, cored and cubed
10 baby bella mushrooms
metal bamboo skewer (soak bamboo skewers in water)

Steps:

  • Place the meat in a gallon sized plastic zippy bag. Add the sauce. Seal and shake to coat.
  • Allow to marninate for 15-30 minutes. (The more time, the better).
  • Skewer the meat, alternating with the veggies until all the skewers are full.
  • Grill over medium-heat until meat is done to your liking.
  • Serve with a salad and rice, or your favorite summer side dishes.
