1 pint fresh strawberries, washed, dried and hulled
1 pint fresh raspberries
2 bananas, peeled, cut into 2 to 2 1/2-inch slices
12 ounces thick, salted pretzels
4 ounces dried apricots
6 ounces roasted, salted almonds
4 to 6 recipes Enriched Chocolate Sauce, recipe follows
1/2 cup heavy cream
2 tablespoons sugar
1 teaspoon ground cinnamon
1 tablespoon unsalted butter
4 ounces semisweet chocolate
2 teaspoons dark rum
1/8 teaspoon grated orange zest

Steps:

  • Arrange all of the fondue elements on a platter.
  • Serve Enriched Chocolate Sauce warm with the fondue elements.
  • In a medium saucepan over low heat, bring the cream, sugar, cinnamon and butter to a rolling boil. Remove from the heat, add the chocolate and stir until the chocolate melts. Add the rum and stir in the orange zest before serving.

1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.

50g butter, melted
½ tsp vanilla extract
250g plain flour, from a new bag (essential for absorbing the liquid)
1 tsp baking powder
about 1 litre sunflower oil
a few chunks of bread
200g dark chocolate, not too bitter, broken into chunks
100ml double cream
100ml whole milk
3 tbsp golden syrup
½ tsp vanilla extract, if you have some
100g caster sugar
2 tsp cinnamon

Steps:

  • Boil the kettle, then measure 300ml boiling water into a jug and add the melted butter and vanilla extract. Sift the flour and baking powder into a big mixing bowl with a big pinch of salt. Make a well in the centre, then pour in the contents of the jug and very quickly beat into the flour with a wooden spoon until lump-free. Rest for 10-15 mins while you make the sauce.
  • Put all the sauce ingredients into a pan and gently melt together, stirring occasionally until you have a smooth shiny sauce. Keep warm on a low heat.
  • Fill a large deep saucepan one-third full of oil. Cooking with hot oil can be dangerous - before you start, read up on how to deep-fry safely to avoid accidents in the kitchen. Heat until a cube of bread browns in 45 seconds to 1 min. Cover a tray with kitchen paper and mix the caster sugar and cinnamon together.
  • Fit a star nozzle to a piping bag - 1.5-2cm wide is a good size. Fill with the rested dough, then pipe 2-3 strips directly into the pan, snipping off each dough strip with a pair of kitchen scissors. Fry until golden brown and crisp. Be very careful here - if air bubbles form in the churros they can explode, especially if the oil overheats or you use old flour. Cooking with hot oil can be dangerous - before you start, read up on how to deep-fry safely to avoid accidents in the kitchen. Keep children out of the kitchen and protect yourself by wearing long sleeves and eye protection, and keeping your face away from the pan.
  • Once the churros are crisp and golden brown, remove them from the oil with a slotted spoon and drain on the kitchen paper-lined tray. Carry on cooking the rest of the dough in batches, sprinkling the cooked churros with some cinnamon sugar as you go.   • To make the churros, in a medium saucepan combine the butter, salt, vanilla extract, cinnamon stick and 2 1/4 cups water. Set over medium-high heat and bring to a boil. Remove from the heat, discard the cinnamon stick, and stir in the flour with a wooden spoon. Return to the stove, and cook, stirring constantly, until a smooth dough forms, about 5 minutes. Transfer dough to a bowl, and stir in the egg vigorously until the dough is smooth. Transfer to a large piping bag, fitted with a metal star tip. Set aside.
  • Combine the sugar and ground cinnamon in a shallow baking dish, until well combined. Line a plate or baking sheet with paper towels, set aside.
  • Fill a dutch oven halfway with oil, and set over medium-high heat. Using a deep-fry thermometer bring the oil to 400 degrees F. Fry the churros in batches by squeezing the dough through the piping bag into the hot oil, using scissors or your fingers to cut off about 4-inch churro pieces. Fry until golden brown all around, about 2 minutes. Using a slotted spoon, drain and transfer to the prepared plate to soak up the excess oil. While the churros are still warm roll around in the cinnamon sugar mixture. Serve the churros warm.
  • To make the chocolate sauce, in a medium saucepan combine the chocolate, butter, and cinnamon. Set over medium heat and cook, stirring often, until melted through. Stir in the sugar, and gradually stir in the evaporated milk. Bring to a boil, reduce heat, and simmer over low heat for 8 minutes, stirring constantly. Remove from heat, let cool slightly before serving with the churros for dipping.

  • Stir the chocolate and cream together until smooth. If the mixture separates or looks oily, add a couple more tablespoons of double cream and pop back in the microwave for 20 seconds or so. Immediately stir together, and hopefully the ganache will now look smooth.
