I used to buy egg salad at my company's cafeteria. Learning this DIY recipe at home saved me a bunch of money! I hope you enjoy.

8 large hard-boiled eggs, peeled and cut into chunks
4 large hard-boiled egg whites, cut into chunks
¼ cup low-fat mayonnaise
¼ cup chopped fresh chives
1 teaspoon Dijon mustard
½ teaspoon celery salt
½ teaspoon paprika
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Mix eggs, egg whites, mayonnaise, chives, mustard, celery salt, paprika, kosher salt, and black pepper together in a bowl.

This easy and creamy low carb keto egg salad is a quick and healthy protein packed and delicious low carb lunch made in less than 10 minutes and is a great meal prep.

1/2 cup mayonnaise, low carb
8 large eggs
2 teaspoons dijon mustard
1 tablespoon chives, finely chopped (you can omit this, optional)
1 teaspoon lemon juice
1/4 teaspoon pepper
1/2 teaspoon salt
a pinch of paprika

Steps:

  • Heat a saucepan over high heat, add water and bring it to a boil.
  • Add the eggs and boil them for about 10 minutes.
  • After 10 minutes, transfer to a bowl and cover with a plate (the eggs will continue to cook at that temperature). Set aside for 10 minutes.
  • Now peel eggs and dice them carefully.
  • Take a bowl, add the diced eggs, mayo, lemon juice, chives, dijon, paprika, salt, and pepper. Mix well.
  • Adjust your taste with additional salt and pepper.
  • Eat it immediately or serve with lettuce leaves.

While searching for more flavorful, easy low-carb recipes, I came across this simple variation on traditional egg salad. It's also great with a few sliced green olives added. Enjoy!

1 small onion, chopped (optional)
1 dash paprika, optional

12 eggs, hard cooked (How to Boil Eggs)
1/2 cup mayonnaise, real
1 tablespoon Coleman's dry mustard
1 1/2 teaspoons curry powder

Steps:

  • Peel the eggs and rinse them off, drying on paper towels.
  • Shred them with the medium shredding disk of your food processor.
  • Mix remaining ingredients together well and stir into the eggs, chill and serve on different breads, stuffed into celery, etc.
  • OPTIONAL add ins:.
  • 1/4 cup finely shredded scallions.
  • 1 teaspoon celery seeds.
  • 1/4 cup finely minced celery.
  • serve in a hollowed out bread bowl or on a lettuce leaf or tortilla.
