Unlike the mush of brown on your plate at the restaurant, these beans have color, texture, and FRESH ingredients! Literally as easy as 1-2-3! Feel free to top with cheese or cilantro!

Steps:
- Heat olive oil in a nonstick pan; cook and stir red onion, cilantro, garlic, and chili powder until onion is softened, about 5 minutes.
- Cook and stir pinto beans and about 2/3 cup chicken broth into onion mixture until heated through, about 5 minutes. Mash pinto beans with the back of a spoon. Add remaining chicken broth and simmer until desired consistency.

Steps:
- Rinse the beans thoroughly, then place them in a large pot with the bacon. Pour water over the top. Use enough water to cover the beans by 1 or 2 inches. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for 2 to 3 hours. If the liquid seems to evaporate too quickly, add more water during the cooking process. The beans are done when they're fork tender, without much bite.
- Add the chili powder, salt and pepper. Stir and taste, adjusting the seasoning as necessary. Add in other seasonings as desired.
- Heat the fat in a large skillet and cook the onions until translucent. Add the beans to the skillet and mash them until they're the consistency you want. Stir and cook them until heated, then add the grated cheese. Top with the jalapenos.

REAL REFRIED BEANS
I currently live in Arizona and I have a brother in law who is from Mexico and taught me a very good and easy way to make authentic refried beans. These are my favorite! I can't stand canned refried beans. I hope you enjoy!

Steps:
- wash pinto beans and remove any fragments.
- place pig's foot or ham hock in crock pot, add beans, jalapeno, onion, cumin, coriander powder, and garlic.
- Add water to cover.
- Cook on high until beans are soft.
- Remove pig's foot or ham hock.
- Scoop out beans and mash or puree and in skillet with heated oil add beans and stir til heated.
- Or you can eat the beans with tortillas with out mashing and refrying! Delish either ways!
- Salt as desired.
REFRIED BEANS
I got this recipe from a little old lady who ran a cantina near the beach in Ensanada Mexico. Black beans are the best for this recipe. If the color throws you use red.

Steps:
- In a large pan saute the onions and garlic to just translucent.
- Add the jalapenos and continue to saute until JUST beginning to brown.
- Add the beans, 2 cans rinsed and drained, two with juice.
- Bring to a boil, reduce heat and simmer for around 1 1/2 hours, adding beer as needed.
- You don't want the beans to dry out.
- If there's any remaining beer left drink it.
- Sometimes 2 cans are needed.
- Don't add salt until dish is done and taste first.
