2 cups cubed cooked chicken
1 can (11 ounces) mandarin oranges, drained

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, oranges and grapes. Drain and rinse pasta with cold water; add to chicken mixture. This colorful fresh fruit chicken pasta salad is perfect for summer barbecues, or year-round potlucks. It always tastes fresh and families love it.

1 egg (lightly beaten)
½ cup orange juice (no pulp)
¼ cup honey
3 tablespoons lemon juice
¼ teaspoon ground nutmeg
¾ cups bow tie pasta (uncooked)
1 small cantaloupe (cubed)
2 cups cooked chicken (cut into cubes)
1 cup seedless grapes (halved)
½ cup celery (sliced)
½ cup walnuts (chopped)

Steps:

  • Cook the bowtie pasta to al dente according to package directions. Drain and rinse with cold water. Set aside.
  • Mix the egg, orange juice, honey, lemon juice and nutmeg in a small saucepan. Cook, stirring constantly, over medium heat until slightly thickened, about 4 minutes. Remove from heat and set aside.
  • Combine the melon, chicken, celery, grapes, walnuts, and bowtie pasta in a large bowl. Toss until well mixed. Pour the dressing over the salad and toss until evenly distributed.
  • Cover and chill in the refrigerator for at least 2 hours. Serve cold.

2 tablespoons unsalted butter
1 shallot, chopped
2 stalks celery, thinly sliced, plus chopped leaves for topping
2 carrots, shredded
1 teaspoon chopped fresh thyme
Freshly ground pepper
1/2 cup dry sherry or white wine
1 1/2 cups heavy cream
Pinch of freshly grated nutmeg
1 1/4 pounds skinless, boneless chicken breasts, cut into thin strips
1 cup grated gruyere cheese (about 4 ounces)
1/4 cup grated parmesan cheese
1/4 cup chopped fresh parsley
12 ounces fresh fettuccine
1 cup sugar snap or snow peas, strings removed and thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, melt the butter in a large skillet over medium-high heat. Add the shallot and cook until slightly softened, about 1 minute. Add the celery, carrots, thyme, 3/4 teaspoon salt and a few grinds of pepper and cook until the vegetables soften, about 2 minutes. Add the sherry and cook until slightly reduced, about 2 minutes. Stir in the heavy cream and nutmeg and bring to a boil. Reduce the heat to medium low and simmer until the sauce thickens slightly, about 5 minutes.
  • Add the chicken to the sauce; increase the heat to medium and simmer until just cooked through, about 3 minutes. Add the gruyere and parmesan and continue simmering, stirring occasionally, until the cheese melts and the sauce thickens, about 2 minutes (do not boil). Add the parsley; season with salt and pepper.
  • Add the pasta to the boiling water and cook as the label directs. Drain, then add to the sauce and toss. Sprinkle in the peas; serve topped with celery leaves.

1 can (20 ounces) pineapple chunks
3 to 4 cups cubed cooked chicken
1 can (15-1/2 ounces) sliced peaches, drained and diced
2 tablespoons raisins
1/3 cup vegetable oil
1/4 cup soy sauce
1 teaspoon curry powder
1/2 cup chopped pecans

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Drain pineapple, reserving 1/2 cup juice. Dice the pineapple and place in a large bowl. Add pasta, chicken, peaches and raisins. In a small bowl, whisk together the oil, soy sauce, curry powder and reserved pineapple juice. Pour over pasta mixture; toss to coat. 1 stalk celery, chopped

  • In a large nonporous glass bowl combine the kiwi, peaches/nectarines/apricots, jalapeno chile pepper, cucumber, onion, lemon juice, salt and pepper. Mix all together. Cover bowl and refrigerate overnight.

The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

6 (4 ounce) thin boneless, skinless chicken breasts, cut in half
1 teaspoon cantanzaro herbs (such as Savory Spice Shop®) or Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
3 tablespoons unsalted butter
½ cup diced onion
2 tablespoons chopped sun-dried tomatoes
2 cloves minced garlic
¼ cup dry white wine (such as Pinot Grigio)
1 cup shaved Parmesan cheese, plus more for garnish
¾ cup heavy cream
½ cup 1% milk
1 (8 ounce) package fresh spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, season both sides of the chicken breasts with herbs, salt, and pepper. Melt butter in a skillet over medium-high heat and cook chicken breasts until golden, 3 minutes per side. Remove chicken from skillet, set aside, and keep warm.
  • Add the onion, sun-dried tomatoes, and garlic to the skillet, scraping up the browned bits with a spatula. Pour in wine to deglaze and allow to reduce by half. Stir in Parmesan cheese and cream until sauce starts to thicken. If sauce seems too thick, add milk (or more cream) and stir to combine.

1 cup fresh strawberries, cut into quarters

1 cup low-fat creamy poppy seed salad dressing
fresh spinach
toasted pecans (or candied pecans)

Steps:

  • Cook pasta according to package directions; drain. Rinse under cold running water; drain again.
