16 ounces brussels sprouts
2 tablespoons olive oil
4 tablespoons shredded parmesan cheese
4 garlic cloves, minced
1 tablespoon lemon juice
salt to taste

Steps:

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with parchment paper.
  • Add brussels sprouts to a food processor or blender.
  • Pulse 5-7 times until the brussels sprouts look shredded.
  • Add brussels sprouts to a large bowl. Drizzle with olive oil, 2 tablespoons of shredded parmesan cheese and minced garlic. Using your hands toss sprouts until the cheese and garlic are combined.
  • Place seasoned sprouts on prepared baking sheet. Bake 20-22 minutes, tossing halfway in between so the sprouts don't burn. Remove from oven when they are slightly browned.
  • Place in sprouts a large bowl. Add remaining cheese, fresh lemon juice then season with salt to taste. Toss everything together one last time and serve!

2 lb brussels sprouts, halved
8 strips bacon, chopped
2 teaspoons salt
½ teaspoon pepper
⅓ cup apple cider vinegar
1 tablespoon brown sugar
5 cloves garlic, minced
fresh chive, chopped, to serve

Steps:

  • Preheat oven to 400°F (200°C)
  • Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
  • Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
  • Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.
  • Sprinkle Parmesan cheese evenly over the Brussels sprouts, then place the pan back in the oven and bake for other 3 to 5 minutes.
  • Sprinkle with additional bacon and chives then serve.

2 Tablespoons (30ml) Olive Oil
3-4 cloves Garlic (, minced or crushed)
1 Tablespoon (15ml) Balsamic Vinegar

Fresh Cracked Pepper (, to taste)
3/4 cup (180ml) Parmesan Cheese (, grated)

Steps:

  • Preheat oven to Bake or Roast at 400°F.
  • Wash and rinse the Brussels sprouts. Peel the loose, outer leaves. Trim the end, then cut Brussels sprouts in half.
  • In an oven-safe dish, cast iron pan, or sheet pan, toss together the Brussels sprouts, olive oil, garlic, and balsamic vinegar. Spread the Brussels sprouts into an even layer. Season with salt and pepper, to taste

Steps:

  • Preheat oven to 200°C/400°F.
  • Prepare brussels sprouts: Trim the base, cut in half and remove the loose, rough outer leaves.
  • Place in a bowl, pour over oil and toss gently.
  • Sprinkle with garlic, salt, pepper, parmesan and breadcrumbs.

  • Preheat oven to 400.

Roasted Brussels Sprouts with Parmesan & Garlic are a game changer. If you are a sprouts fan already you will love this roasted, garlicky, cheesy version for sure. Perfect Christmas or Thanksgiving veggie side dish.

500 g brussels sprouts
1 garlic clove (peeled and very thinly sliced)
1-2 Tbsp breadcrumbs
3-4 Tbsp parmesan cheese (or any other hard cheese to grate over the sprouts)
2-3 Tbsp olive oil
salt & pepper

Steps:

  • Preheat your oven to 180C/350F/Gas Mark 4.
  • Prepare brussels sprouts by cutting off the woody ends (especially when they are long and sticking out a bit). If there are any woody or bruised outer leaves, feel free to discard them otherwise leave them.
  • Cut larger sprouts in half lengthwise leaving smaller ones whole and put them in a baking dish.
  • Sprinkle them with salt, freshly ground pepper and breadcrumbs, add thinly sliced garlic clove.
  • Pour over a good glug of olive oil and give everything a little mix and toss with your hands. Roast in a preheated oven for approx 20-30 min (until tender). Timings will depend on the size of your sprouts. Test them for doneness at 20 min by simply inserting a sharp knife in one of the bigger sprouts. If it goes in easily, they are ready!
  • Take the brussels sprouts out of the oven and give them a little mix. Grate as much parmesan as you like and sprinkle it over the sprouts. Return them into the oven for the cheese to melt and create lovely, almost lacy topping.
  • Perfect as a side dish with any meat or veggie roasts!

Crispy, caramelised and coated in garlic butter, this is the ultimate way to cook your Brussels sprouts, Christmas or otherwise.

400g/14oz Brussels sprouts, cut in half
2 tbsp olive oil
50g/1¾oz butter, at room temperature
3 garlic cloves, crushed to a paste with a little salt
½ nutmeg, freshly grated
40g/1½oz Parmesan, finely grated
10g/⅓oz finely chopped parsley
1 tbsp fresh lemon juice
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • In a large mixing bowl, season the sprouts and toss with the olive oil.
  • Line a large baking tray with baking paper and spread the sprouts on top, cut side down. Place on the middle shelf of the oven to roast for 10-15 minutes, or until the sprouts have softened underneath and coloured on top.
  • Carefully tip the hot sprouts back into the bowl and mix in the butter, garlic, nutmeg and Parmesan. Tip back onto the tray and roast for a further 10 minutes until golden-brown and crisp.
  • Sprinkle over the parsley and lemon juice, stir well and serve straight away.

600g Brussels sprouts, halved
50g butter, melted
2 garlic cloves, crushed
50g panko breadcrumbs
25g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the sprouts into a bowl, drizzle over the melted butter, add the garlic and season. Toss the sprouts until they're well coated in the butter, then add the breadcrumbs and parmesan, and toss again.
  • Tip the sprouts onto a baking tray, making sure they're well-spaced apart in a single layer. (If they're packed too closely they will steam instead of roasting.) Place as many as possible cut-side down for maximum crispiness. Press any excess crumbs onto the sprouts to help them stick.
  • Roast for 25-30 mins until crisp and golden.

  • Preheat oven to 425°. Divide Brussels sprouts and onions between 2 foil-lined 15x10x1-in. baking pans.
  • In a small bowl, mix oil, garlic, salt and pepper; drizzle half of the mixture over each pan and toss to coat. Roast until tender, 20-25 minutes, stirring occasionally and switching position of pans halfway.

½ cup water
5 cloves garlic, minced

1 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Move the rack to the upper third of the oven. Drizzle a small amount of oil in the bottom of a 9x13-inch baking dish.
  • Combine Brussels sprouts, water, garlic, salt, and pepper in a bowl and toss to coat. Spread mixture into the prepared baking dish in a single layer.
  • Bake in the preheated oven for about 25 minutes. Toss and continue baking until caramelized to taste, about 10 minutes more. Remove from oven, add butter, and cover with Parmesan cheese.
