GARLIC LOVER'S CLAM DIP
One of my absolute favorite family recipes is my Granddaddy's clam dip. We had it at most family get-togethers while I was growing up, and he and my Grandma always made sure to make a double batch if they knew I was going to be there (with a special portion just for me to take home). This rich and creamy old fashioned clam dip is a garlic lover's dream.

Steps:
- Drain clam juice into a measuring cup or small container, and set aside.
- In a bowl, mix cream cheese, mayonnaise, Worcestershire sauce, and enough of the clam juice for the dip to reach your desired consistency (it shouldn't be too thick that it will break your chips). Reserve the rest of the clam juice.
- Mix in chopped clams and fresh garlic.
- Mix in garlic salt (to taste).
- The dip can be served immediately, or chilled in the refrigerator to serve later. As the dip will thicken in the fridge, stir in some of the reserved clam juice before serving to bring it back to a nice thickness for dipping.
- Serve with Classic Lay's or Ruffles potato chips.

Steps:
- Place softened cream cheese in a bowl, then using garlic press, squeeze the garlic clove with juice into bowl.
- Cream together the cheese and garlic with a spoon until smooth.
- Add the remaining ingredients, stirring until smooth.
- Transfer to serving container, cover, and chill for 1 hour before serving.
- Serve with crackers, chips, or veggies.
- If you'd like a thinner dip (if you're serving dip with thinner chips, for instance), you can add more clam broth. Also good topped with chopped green onions.

FRIED CLAMS WITH GAAHLICKY BLUE CHEESE DIP

Steps:
- Heat the oil in a large pot or Dutch oven over high heat to 360 degrees F.
- In a shallow bowl, combine the cornmeal and Essence. Add the clams and toss to coat evenly, shaking to remove any excess.
- In batches without crowding, deep-fry the clams, turning frequently, until golden brown, about 2 minutes. Using a slotted spoon, transfer to paper towels to drain.
- Serve hot with lemon wedges and Gaahlicky Blue Cheese Dip.
- Combine all ingredients thoroughly. Store in an airtight jar or container.
