Some of these were passed to her from her mother, and some she had cut out of magazines or newspapers and placed in her box.... This one was one of hers wrote on a recipe card.... It is wonderful...

2 (15 ounce) cans creamed corn
3 eggs
4 tablespoons sugar
4 tablespoons flour
4 tablespoons butter, melted
1 1/2 cups American cheese, grated
1 (4 ounce) jar pimentos

Steps:

  • Mix all ingredients together in a large bowl.
  • Pour into a buttered 12 X 9 (I think that's the size, the card is faded) casserole pan.
  • Bake at 350 for 35-40 minute or until center is set.

1/2 cup unsalted butter
1/4 cup all purpose flour
1/4 cup granulated sugar
2 eggs, well beaten
1 cup whole milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a sauce pan, heat the butter slowly over medium-low heat, swirling the pan until it's just melted. Set it aside while you measure out the rest of the ingredients.
  • Whisk the flour into the melted and cooled butter until well incorporated. Then whisk in the sugar, eggs and milk.
  • Stir the creamed corn into the butter mixture, along with the drained whole kernel corn. Season with salt and pepper.
  • Pour into a shallow 8x8" baking dish.
  • Bake uncovered at 350 degrees for approximately 1 hour and 15 minutes, until the center is set and the corn casserole is brown and caramelized on top. Let stand for 5 minutes, serve warm.

6 slices bacon
8 large ears corn (preferably white), husks and silk removed
Kosher salt and freshly ground pepper

Steps:

  • In a large skillet (seasoned cast iron does well here), cook the bacon over medium-high heat until crisp. Transfer to a paper towel-lined plate; reserve the drippings in the pan.
  • Cut the stalk ends of the corn to make a flat surface, then stand the ears up and shave the corn from the cobs with a chef's knife, leaving about half of each kernel on the ear. With the back of the knife, scrape the cobs over a shallow dish to extract as much liquid as possible. (You should have equal parts kernels and liquid; add water if necessary.) Return the skillet to medium-low heat and add the kernels and liquid.
  • Season the corn mixture lightly with salt and pepper and cook until creamy, stirring often, 30 to 45 minutes (add water if the pan gets too dry). Serve warm or at room temperature. Crumble the bacon on top.

Kosher salt and freshly cracked black pepper

Steps:

  • In a large skillet, (seasoned cast iron does well here) cook the bacon over medium-high heat until crisp. Turn off the heat and transfer the bacon to a paper towel lined plate. Reserve the drippings in the pan.
  • On a cutting board, cut the stalk ends of the corn cobs to make a flat surface; stand them up and shave the corn from the cobs with a sharp chef's knife. Return the skillet to medium-low heat, and add the corn kernels. With the back of the knife, firmly scrape the cobs over a shallow plate to extract as much liquid (milk) as possible and add it to the skillet.
  • Season corn lightly with salt and pepper and cook until broken down and creamy, about 30 to 45 minutes, stirring often; add water if the pan gets too dry.
  • Serve warm or at room temperature.

1/2 onion, diced
1 tablespoon butter
2 pinches kosher salt
8 ears fresh corn
1 sprig fresh rosemary, bruised
1 tablespoon sugar
1/4 teaspoon turmeric
2 tablespoons yellow cornmeal
1 cup heavy cream
Fresh ground black pepper

Steps:

  • In a saucepan over medium heat, sweat the onion in butter and salt until translucent.
  • In a large mixing bowl, place a paper bowl in the middle of the bowl. Resting the cob on the bowl in a vertical position remove only the tops of the kernel with a knife, using long smooth downward strokes and rotating the cob as you go. After the cob has been stripped, use the dull backside of your knife to scrape any remaining pulp and milk off the cob.
  • Add the corn and pulp mixture to the saucepan and cook over medium high until the juice from the corn has tightened. Add the rosemary. Sprinkle the corn with the sugar and turmeric. Stir constantly for about 2 minutes. Sprinkle the cornmeal onto the corn, using a whisk to combine well. Add the heavy cream and cook until the corn has softened, about 2 to 3 minutes. Remove the rosemary. Season with freshly ground black pepper.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8 x12 inch casserole dish.
  • In a mixing bowl, combine cream corn, niblet corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish.
  • Bake in a preheated oven for 30 minutes or until lightly brown.

  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.

Holidays or family gatherings are never the same without grandma's baked corn. She is gone now, so I treasure this recipe. Prep time is apporoximate. I'm not sure of the servings. We were a family of 6, but no matter how much she made, we never had any left over.

1 1/2 quarts frozen fresh corn, thawed
2 large eggs, slightly beaten
3 tablespoons flour
1 1/2 cups milk

2 tablespoons butter
crushed cracker, for the top (I use Ritz or saltine)

Steps:

  • Mix together all ingredients except crackers and pour into a Pyrex, or other glass baking dish.
  • Sprinkle with crushed cracker crumbs.
  • Bake at 350 for 1 hour or until firm.
  • Do not over cook or it will be dry.

This recipe goes back to when my family lived on the farm and was tight on cash. A delicious combination of just the right ingredients! YUM. Grandma is an amazing cook. Note-- For the vegetables you can substitute a bag or two of frozen vegetables. I like to use the new steam bags that you stick in the microwave!

1 lb ground beef
16 ounces instant mashed potatoes
16 ounces of mild shredded cheese
11 1/2 ounces cream of mushroom soup
14 ounces carrots (frozen or canned)
14 ounces green beans (frozen or canned)
14 ounces sweet corn (frozen or canned)

Steps:

  • Preheat oven to 350°F.
  • Brown the beef in a frying pan. While the beef is cooking, follow the directions on the instant potato box and prepare those in a separate pot. If you are using frozen vegetables, cook those now as well in a separate pot. If you use canned veggies, there is no need to cook them.
  • When the beef is browned, drain any grease from the pan. Add the can of creamed soup directly to the frying pan and mix the meat and soup together. (heat should be off now.).
  • On the bottom of a 13x9 baking pan smooth the beef mixture to cover the bottom. Add the vegetables on top of the beef. MAKE SURE TO DRAIN ALL LIQUIDS BEFORE ADDING TO THE DISH! On top of the vegetables smooth over the already prepared mashed potatoes. Sprinkle the cheese on the top and season with black pepper.
  • Stick 'er in the oven for 20-30 minutes or until the cheese is nicely tanned.
  • Enjoy!

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix all the dry ingredients together in a bowl.
