- Wash whichever kind of asparagus you're using, with their woody ends snipped off.
- Heat a large griddle pan and dry-griddle the asparagus spears on both sides until nicely marked. As soon as they're ready, put them on to four plates and dress with a good squeeze of lemon juice and three times as much olive oil.
- Season with sea salt and black pepper to taste, then take a block of Parmesan to the table and either grate or shave some over the asparagus with a speed peeler.

GRILLED LEMON ASPARAGUS WITH FETA
Steps:
- Toss the asparagus with olive oil, salt, and pepper. Make sure to wash and trim the asparagus before cooking.
- Place the asparagus and halved lemons on the grill. Cook the asparagus for about 3 minutes on each side. Cook the lemon cut side down for 5-6 minutes. You can also cook the asparagus in a 425-degree oven for 8-10 minutes.
- Top with feta cheese with lemon juice.

- Trim off the tough bottom of the spear by grasping each end and bending it gently until it snaps at its natural point of tenderness-usually two-thirds of the way down the spear. If the spear is less than 6 inches long, chances are it has already been trimmed for you. Alternatively, you can cut the ends off with a knife.
- Coat each spear with olive oil by placing clean, dry spears in a resealable plastic bag, pour in the oil, and massage spears to coat each one. Sprinkle with salt and massage again. Leave the asparagus in the bag until ready to cook.
- Place on the cooking grate crosswise so it won't fall through. Grill for 10 to 15 minutes (depending on the size and thickness of the stalks), turning occasionally to expose all sides to the heat. Asparagus should begin to brown in spots (indicating that its natural sugars are caramelizing) but should not be allowed to char.
- Remove from grill and serve immediately-eating spears with your fingers enhances the experience.

- Heat grill to medium heat.
- In a large skillet over medium-high heat, add sausage and break up as it browns. Cook until browned, drain grease, return to pan and then add asparagus. Continue to saute for 2-3 minutes until asparagus is bright green and tender. Remove from heat.
- Stretch pizza dough to about 1/2 inch or thinner. This recipes makes 2 pizzas but can be halved if you want. Brush both sides of dough with olive oil.
- Carefully put dough on heated grill and cover. Cook for two minutes, and look at the underside (grill side) of dough. It should be golden brown and the top should be bubbling up. If not, continue to cook for one minute intervals, checking after each minute. Once golden brown, remove to a cookie sheet or a pizza peel (grilled side facing up) and add toppings to grilled side. Spread ricotta almost to edges and then top with asparagus and sausage mixture. Drizzle with olive oil if desired. Carefully return pizzas to grill and grill for 3-4 minutes or until toppings are heated through and pizza dough is cooked through.
- Remove from grill, slice and serve immediately.

- Set grill to medium-high and close top to allow heat to rise.
- Place asparagus in a large shallow dish and drizzle with all the olive oil. Sprinkle with salt and pepper.
- Place asparagus directly on the grill once it has reached at last 400 degrees F.
- Close top and allow asparagus to cook directly on the grill for 3 minutes.
- Open top and flip asparagus cooking with the top open for 2-3 minutes. Check in on it frequently to make sure it gets charred but doesn't fully burn.
- Return asparagus to same dish you used for drizzling and allow to cook directly in dish (at least 10 minutes). This will give it an additional coating of olive oil if there's any remaining.
- Once cool, chop asparagus into 2 inches pieces and add to a large bowl.
- Top with parmesan, pistachios and any other greens or herbs you want to add.
- Squeeze half of lemon directly onto salad and mix to stir everything together.
- Serve at room temperature or cold from the fridge.
- Will keep in fridge for up to 3 days.

- Preheat grill to 450° surface temperature, which is the preferred temperature more most chicken and pork recipes. Preheat the grill pan also if thicker.
- Wash and trim asparagus. I like to cut off 1/2 inch of the bottom of the asparagus shaft.
- Mix olive oil with salt, pepper, and garlic powder.
- Pour the oil mixture on the cleaned asparagus and coat well. Clean hands work well here.
- Add a light coat of a higher temperature oil to your grill pan. Spread evenly over a grill pan.
- In three minutes, flip asparagus and grill until getting brown spots. Usually another three minutes for me. Total cooking time can vary from 5-10 minutes in total. Variables are your exact grill temperature, the grill pan, the thickness of the asparagus, and finally, your taste.
- Serve immediately. I like a sprinkle of Parmesan cheese to add even more taste.

- Preheat the grill over medium until the temperature is a steady 300ºF - 350ºF. Or you can preheat the oven to 400ºF.
- While the grill preheats, snap the tough ends off the asparagus.
- Wrap the asparagus spears with the strips of prosciutto. If the asparagus is thin, around 1/4″, group together 3 at a time to wrap with 1 strip of prosciutto.
- Once you've wrapped all the asparagus with prosciutto strips, brush them with the olive oil.
- Then lay them crosswise to the grill slats, and lower the heat to medium low. It's important to keep the temperature between that 300ºF- 350ºF range so that you don't have any flare ups.
- Or you can place them on a parchment lined baking sheet and roast for 8-12 minutes or until just tender. The timing will depend on the thickness of the asparagus spears.
- If grilling, cook the asparagus for 6-8 minutes or until just tender. As the asparagus cooks turn it 2-3 times to grill all the sides.
- Serve immediately with your choice of main dish. This dish is also great at room temperature and can be packed for a picnic as well.
- Drizzle with the optional reduced or aged balsamic vinegar for a super tasty variation.

- To poach the eggs, bring 6 to 8 inches of water to a boil in a large, deep saucepan. Prepare an ice bath. Add the vinegar to the boiling water and reduce the heat to a simmer. Crack 1 egg into a small cup or ramekin. Using a wooden spoon, stir the water at the edge of the pan twice in a circular motion to get the water moving, then add the egg to the center of the pan. Simmer gently for 1 1/2 minutes, or until the white is set but the yolk is still runny. With a slotted spoon, carefully transfer the egg to the ice bath. Skim and discard any foam that has risen to the top of the boiling water. Cook the remaining eggs in the same fashion, 1 at a time. (The eggs can be poached several hours ahead and stored in ice water in the refrigerator.)
- When you are ready to cook the asparagus, prepare a charcoal or gas grill for cooking over medium heat or heat a grill pan over medium-high heat. Line a baking sheet with parchment paper.
- Hold an asparagus spear with your hands and bend it to break off the less tender bottom end. Trim all of the asparagus to the same length. If using medium or large asparagus, peel the stalks with a vegetable peeler. Spread the asparagus on the parchment-lined baking sheet, generously coat with canola oil, and season with salt and pepper.
- Arrange the asparagus on the grill or, working in batches, in the grill pan. Cook the asparagus until tender, about 1 1/2 to 2 minutes per side, flipping with a narrow spatula. Arrange the asparagus on a platter.
- Meanwhile, bring a large pot of water to a simmer. If you're a perfectionist, an aspiring three-star chef, or you just can't help yourself, use a small pair of scissors to trim any uneven edges from the poached eggs. Using a skimmer or a slotted spoon, lower the eggs into the simmering water for about 30 seconds, just to reheat. Remove the eggs and blot the bottoms with paper towels.
- Season the eggs with salt and pepper and place them around the asparagus. Arrange the prosciutto and torn croutons on the platter, then drizzle all of the components with olive oil and balsamic and sprinkle with fleur de sel and pepper.

- If using wooden skewers, be sure to soak them in water for at least a couple hours prior to assembling kebabs. I prefer to soak them overnight, if possible. These are my favorite wood skewers - they're somewhat heavy-duty and are flat, which means the food won't spin around on them!
