GRILLED KOREAN-STYLE BBQ GLAZED PORK CHOPS WITH RED ONIONS AND BABY BOK CHOY

Grilled Korean-Style BBQ Glazed Pork Chops with Red Onions and Baby Bok Choy image

Instead of marinating the meat, which is typical of Korean BBQ, these pork chops are brushed in a nutty hoisin glaze while they're on the grill. Grilled veggies, tossed in that same sweet and spicy glaze are served alongside.

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons soy sauce
1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

Provided by Food Network

Time 30m

Yield 4 servings

Number Of Ingredients 22

4 9-ounce Porterhouse pork chops, 1 inch thick
1 scallion, finely chopped
3 tablespoons Korean chili paste* (See Cook's Note)
3 tablespoons soy sauce
2 tablespoons Asian sesame oil
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon rice vinegar
1 tablespoon light brown sugar
2 teaspoons peeled and minced fresh ginger
2 garlic cloves, minced
2 teaspoons sesame seeds, for garnish
Asian slaw, optional (recipe below)
3 tablespoons rice vinegar
1 tablespoon coarsely ground Korean hot red pepper flakes
2 teaspoons soy sauce
2 garlic cloves, minced
1/2 teaspoon salt
1/4 cup vegetable oil
1 tablespoon Asian sesame oil
1 14-ounce bag coleslaw
1 cup carrots, julienned or shredded
2 scallions, finely chopped

Steps:

  • To make marinade: Whisk first 9 ingredients (excluding pork) together in medium bowl. Pour into one-gallon sealable plastic bag. Add pork chops, coating pork in marinade. Close bag and refrigerate, turning bag occasionally, for at least 2 and up to 6 hours. To make pork: Prepare outdoor grill for direct cooking over medium-high heat, about 450 degrees F. Brush grill grates clean. Remove pork from marinade - do not shake off excess marinade. Discard remaining marinade. Grill, with grill lid closed, turning once, until the internal temperature reads between 145 degrees F. (medium rare) to 160 degrees F. (medium) on a digital meat thermometer, about 10 minutes. Remove from heat and let rest 3 minutes. If making with Asian slaw, divide slaw among 4 dinner plates. Top each with a chop, sprinkle with sesame seeds and serve immediately.

GRILLED MONGOLIAN PORK CHOPS

Grilled Mongolian Pork Chops image

Once marinated, these pork chops can be cooked any way you like, but for the true experience, you're going to want to cook these on a charcoal grill. For me, it's the smokiness that brings all these flavors together.

Provided by Chef John

Categories     Main Dish Recipes     Pork     Pork Chop Recipes

Time 7h

Yield 2

Number Of Ingredients 21

½ cup hoisin sauce
4 cloves garlic, minced
1 ½ tablespoons soy sauce
1 tablespoon grated fresh ginger
1 tablespoon red wine vinegar
1 tablespoon rice vinegar
1 tablespoon sherry vinegar
2 teaspoons sesame oil
2 teaspoons white sugar
1 ½ teaspoons hot sauce
½ teaspoon ground white pepper
½ teaspoon freshly ground black pepper
2 (10 ounce) thick bone-in center cut pork chops
¼ cup red wine vinegar
3 tablespoons white sugar
2 tablespoons hot mustard powder (such as Coleman's ®) or Chinese style, to taste
1 egg yolk
⅓ cup creme fraiche
1 teaspoon Dijon mustard
¼ teaspoon ground turmeric
cayenne pepper to taste

Steps:

  • Combine hoisin sauce, garlic, soy sauce, ginger, 1 tablespoon red wine vinegar, rice vinegar, sherry vinegar, sesame oil, 2 teaspoons sugar, hot sauce, white pepper, and black pepper in a large bowl. Whisk thoroughly and set aside.
  • Place pork chops in a resealable freezer bag; pour slightly more than 1/2 the marinade into freezer bag over pork chops. Seal bag and refrigerate for 6 to 8 hours. Reserve remaining marinade.
  • Combine 1/4 cup red wine vinegar, 3 tablespoons sugar, 2 tablespoons hot mustard powder, and egg yolk in a small saucepan over medium-low heat. Whisk until slightly thickened, about 5 minutes; remove from heat.
  • Stir in creme fraiche, Dijon mustard, turmeric, and cayenne pepper. Refrigerate until needed.
  • Remove pork chops from marinade and pat dry using paper towel.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Cook pork chops on the preheated grill until browned grill marks appear, about 4 minutes per side.
  • Move pork chops from directly above heat source. Continue cooking over indirect medium heat, brushing the remaining marinade on each side, until no longer pink inside, about 25 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Serve pork chops topped with mustard sauce.
