Any leftover ham is set aside for these crispy croquettes. I shape them early in the day, then simply fry them at dinnertime. The mustard sauce is mild and pairs well with ham.-Kathy Vincek, Toms River, New Jersey

2 cups finely chopped fully cooked ham
1 tablespoon finely chopped onion
1 teaspoon minced fresh parsley
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup 2% milk
1 egg
2 tablespoons water
3/4 cup dry bread crumbs
Oil for deep-fat frying
SAUCE:
1-1/2 teaspoons butter
1-1/2 teaspoons all-purpose flour
1/4 teaspoon salt
Dash pepper
1/2 cup milk
4-1/2 teaspoons yellow mustard

Steps:

  • In a small bowl, combine the ham, onion and parsley; set aside., In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir into ham mixture., Spread into an 8-in. square baking dish; cover and refrigerate for at least 2 hours., In a shallow bowl, combine egg and water. Place bread crumbs in a separate shallow bowl. Shape ham mixture into 12 balls (mixture will be soft); roll each ball in egg mixture, then in bread crumbs. Cover and refrigerate 2 hours longer., In an electric skillet or deep fryer, heat oil to 375°. Fry croquettes, a few at a time, for 2-3 minutes or until golden brown, turning once. Drain on paper towels., Meanwhile, in a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in mustard. Serve with croquettes.

½ cup all-purpose flour
1 cup milk
½ teaspoon salt
2 cups diced ham
2 tablespoons prepared yellow mustard
1 tablespoon dried minced onion
canola oil for frying
2 eggs, or to taste
1 cup seasoned bread crumbs

Steps:

  • Melt butter in a saucepan over medium heat. Add flour slowly, stirring to create a buttery paste. Add milk and salt; cook and stir until mixture thickens, about 5 minutes. Let cool.
  • Mix ham, mustard, and onion thoroughly into the butter mixture. Chill dough in the refrigerator until safe to handle, 1 to 2 hours.
  • Shape chilled dough into croquettes about 1/3 cup apiece.
  • Preheat oil in a skillet over medium-high heat.

4 tablespoons butter
1/2 cup finely minced onions
1/4 cup plus 2 tablespoons flour
1 1/2 cups milk
Salt and black peppers
1/4 teaspoon nutmeg
1 tablespoon finely chopped parsley
1 tablespoon dry sherry
12 ounces ground smoked ham
2 eggs, mixed with 1 tablespoon water
1 cup bread crumbs
Vegetable oil for frying

Steps:

  • Preheat the fryer. In a large saute pan, melt the butter. When the butter is melted, add the onions and saute for about 2 minutes, or until translucent and soft. Season with salt and pepper. Stir in the flour to make a roux. Cook for about 1 minute and remove from the heat. Whisk in the milk to form a smooth sauce. Return to medium heat and cook until the sauce is thick and creamy. Season with salt, pepper, nutmeg, parsley and sherry. Stir in the ham. Mix well and cook for 4 to 5 minutes on low heat. Pour the mixture into an 8 by 8 1/2-inch baking pan and cool in the refrigerator so that the mixture will be easy to handle. Refrigerate for 2 to 3 hours or until well chilled.
  • In a small mixing bowl, beat the eggs with water until frothy and pour into a medium bowl. Combine the bread crumbs and flour in a second bowl. Season the mixture with salt and pepper. Using your hands, shape the ham mixture into a log about 3/4-inch thick. Using a knife, cut the logs into 1 1/2-inch thick. Dip the logs in the egg wash, letting the excess drip off. Roll the logs in the seasoned bread crumbs. Place the logs on a baking sheet and cover with plastic wrap. Refrigerate the logs for 2 to 3 hours. Fry the croquettes in the hot oil, a few at a time, until golden brown, about 3 to 4 minutes. Remove the croquettes from the oil and drain on a paper-lined plate. Season the croquettes with salt and pepper. Serve the croquettes with fresh lemon juice and garnish with parsley.

1 (6 to 8 pound) baked ham, sliced

  • In a small saucepan, off heat, combine sugar, mustard, salt and pepper. Whisk in vinegar until it forms a paste. Add cream, whisking, and beat in yolk. Heat over low heat, whisking constantly, until sauce thickens slightly, do not boil or sauce will curdle.

2 medium potatoes, cooked
3 tablespoons butter
1 egg yolk
3 tablespoons milk
2/3 cup grated cheddar cheese
3 tablespoons fresh parsley, chopped
1 egg, beaten
3 tablespoons water
1 1/2-2 cups dried breadcrumbs
3 tablespoons almond halves
oil (for deep frying)
3 tablespoons butter
1 tablespoon flour
1/4 cup water
1/4 cup cream
2 teaspoons Dijon mustard

Steps:

  • Mash potatoes with butter, egg yolk, milk, cheese and parsley. Take tablespoonfuls of mixture and form into croquette shapes (oval). Chill for 1 hour.
  • Mix egg and water together. Dip croquettes in egg water then bread crumbs, then press an almond half in each. Chill for a further 1 hour.
  • To make sauce, melt butter and stir in flour. Cook 1 minute, then remove from heat and stir in water, cream and mustard. Return to heat and stir until sauce boils and thickens.
  • Heat oil and deep-fry croquettes until golden. Drain on wire rack. To serve, arrange croquettes on plates, pour sauce over and serve with roasts or fish.

1 beaten egg

shortening or cooking oil, for deep-fat frying

1 1/4 cups milk
1/2 cup shredded American cheese
1/2 cup shredded swiss cheese

Steps:

  • Make the croquettes:.
  • Melt butter or margarine with curry powder; stir in flour. Add milk all at once, cook and stir till bubbly. Cook and stir 2 minutes more Remove from heat. Stir in onion and mustard.
