HAMBURGER IN WHITE GRAVY OVER TOAST
My Foster Dad used to make this for me all the time when I was a teenager, this usually goes over pretty good with kids. Another one of those comfort foods.

Steps:
- Brown Ground Beef in skillet and drain.
- Add milk and heat to boiling, reduce heat to simmer and add flour stirring constantly until thickened.
- Add salt and pepper.
- Serve over your favorite toasted bread.
- May need to adjust salt and pepper seasoning according to taste.
HAMBURGER STEAK AND GRAVY

Steps:
- Combine hamburger patty ingredients and mix thoroughly until combined
- Divide into 8 hamburger patties. I like to make them thin to make them easier to cook through.
- Add oil to a skillet and cook over medium high heat until both sides are well browned.
- Remove the meat from the pan and reserve 2 Tbsp oil in pan.
- Add the onions and cook for several minutes until very soft, stirring occasionally.
- Next, add the minced garlic, stirring constantly for 1 minute.
- Then add in 2 Tbsp flour and whisk constantly for 1 minute or until it starts to turn lightly brown and the flour is blended.
- Now add in 2 cups of the beef broth, the Worcestershire, ketchup and kitchen bouquet.
- Keep whisking for a minute then add the hamburger steaks back to the pan.
- Cover and simmer on medium/low for 20 minutes, stirring occasionally and adding extra beef broth as needed if it gets too thick.
HAMBURGER STEAKS AND GRAVY

- Preheat the oven 350 F.
- Bake about 45 minutes to 1 hour, or until the beef is thoroughly cooked. **According to the USDA, the minimum safe temperature for ground beef is 160 F (ground poultry is 165 F).**

- Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
- Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
- Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
- Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
- Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
- Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
- When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
- Timing for a countertop grill:
- For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
- For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
- For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
- Combine all ingredients.

- Mix ground beef, salt, pepper, onion powder, and milk.
- Form into patties, they will be loose.
- Mix flour with as much pepper as you like.
- Dredge patties in flour mixture on both sides.
- Place in hot buttered pan.

- Save any drippings that remain and add enough butter to make a 1/4 cup of drippings.

- Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
- Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
- Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
- Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
- For thick patties: Grill or fry the patties for 3-4 minutes per side.
- For thin patties: Cook on the griddle for 2 minutes per side.
- Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

EASY AND TASTY HAMBURGER GRAVY
This is similar to Hamburger Stroganoff. I was at the grocery store yesterday and was going through their 3 marked down items carts. I found some cans of "Campbell's Beefy Mushroom Soup" in one of them. I have never seen that kind of soup before. I grabbed a couple of cans of it, figuring that I could come up with a recipe to use one of them them in. Even though there is some beef in the soup, I still used it with hamburger. This is very easy to make. It's more like a Stroganoff without added mushrooms. I am allergic to black pepper, so I don't add it to my recipes. Use however much you want to. You can use more onion and garlic if you want to. Prep time and cook time are appx.

- Brown the ground beef in a medium sized skillet on med-hi heat.
- Drain fat if necessary.
- Add the chopped onion and garlic to the hamburger.
- Cook on medium heat until the onion and garlic are tender and the hamburger is done.
- Add the can of soup.
- If desired, add 1/2 can of water, using the soup can.
- Bring to a boil.
- Lower heat to medium to med-lo and simmer for about 10 or 15 minutes, stirring occasionally.
- Add the sour cream and stir.
- Heat until it just barely starts to boil.
- Thicken if necessary, using your own method.
- Keep hot until ready to serve.
- Serve over noodles, mashed potatoes or rice.

HAMBURGER STEAK AND ONIONS WITH GRAVY
This is my all-time favorite recipe for hamburger steak and onions. If I'm just cooking for me, I skip the gravy (they're very juicy without) and increase the onions because I like extra with every bite! Add the gravy to turn it into a wonderful smothered "steak". I found the recipe during a web search and tweaked it. Listed cooking time is for the steaks, onions and gravy.

- Mix together the ground beef, egg, bread crumbs, pepper, seasoned salt, onion powder, garlic powder and Worcestershire sauce. Form into 4 patties, or as many as you want, depending on how large you want your "steaks".
- Heat the oil in a large skillet over medium heat. Fry the patties and onions in the oil until patties are nicely browned, about 4 minutes per side, or until done if not making gravy. Remove the patties to paper towels.
- If NOT MAKING GRAVY, continue cooking the onions until they turn golden brown and caramelize. Remove onions and serve atop hamburger "steaks". Stop here!
- If MAKING GRAVY, sprinkle flour over the onions and drippings in the skillet. Stir, scraping up brown bits off the bottom as you go. Gradually add the beef broth and sherry.
- Bring to a boil, then simmer and stir over medium-low heat about 5 minutes, or until gravy thickens. Taste and adjust seasonings with salt and pepper as needed.
- Reduce heat to low, return patties to the gravy, cover and simmer 15 minutes or until cooked through.

- In large bowl, combine ground beef, worcestershire, parsley, garlic, salt and pepper; shape mixture into 5 (1/2-inch thick) patties.
- Heat a large skillet over medium-high heat.
- Add beef patties, and cooke for 4-5 minutes per side or until browned.
- Remove patties from skillet, and set aside.
- Drain skillet, reserving 1 T skillet drippings.
- In the same skillet, heat reserved drippings over medium high heat.
