Economical way to make a really tasty rice side dish that will go with anything! Makes 6 cups cooked rice (fluffed), serves 6 - 8 as a side. Make a big batch, refrigerate 4 days or freeze 3 months!

2 cups long grain white rice (, uncooked (Note 1 for brown rice))
3 1/4 cups water ((cold tap water))
2 tsp chicken powder / granulated bouillon (, or 2 cubes dissolved in boiling water (Note 2))
1 tsp garlic powder (*)
1 tsp onion powder (*)
1 tsp paprika (*)
1/2 tsp dried thyme (*)
2 tbsp dried parsley (*, optional)
1 tsp salt
1/2 tsp black pepper
50g / 3 tbsp butter, unsalted ((or MORE!))

Steps:

  • Place all Rice ingredients in a large saucepan and give it a stir.
  • Bring to simmer over medium high heat (edges bubbling, entire surface rippling), put the lid on and turn stove down to medium low (LOW for strong stoves). It should be simmering gently.
  • Cook for 13 minutes - do not lift lid!
  • Tilt pot then QUICKLY peek to ensure all water is absorbed.
  • Remove from stove, stand 10 minutes with lid on.
  • Add butter and fluff rice with a rubber spatula. Serve!
  • Storage - please read Note 4.
  • Rice cooker - Same ingredients, water and rice ratio. Pop it all in your rice cooker and cook per manufacturer directions, stir through butter at end.

1 cup Basmati rice
3 ⅔ cups water, divided
2 tablespoons soy margarine
2 tablespoons nutritional yeast
½ teaspoon garlic powder

Steps:

  • In a saucepan bring 3 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is cooked and all liquid is absorbed.

  • Heat 1/4 cup vegetable oil in a large saucepan over high heat. Add 2 cups white rice; toast 3 minutes. Puree 1 chopped cored large tomato, 1/2 chopped small white onion, 1 garlic clove and 1 teaspoon kosher salt in a blender. Add to the rice and cook, stirring, until almost dry, about 5 minutes. 1 (3 ounce) package chicken-flavored ramen noodles
4 cups water
2 tablespoons margarine spread

Steps:

  • Heat a medium skillet on medium heat. Add 2 T margarine to the skillet and melt this. While the margarine is melitng crush the Top Ramen in the package into small pieces. Put the seasoning packet aside. When the margarine is melted add the rice and the crushed Top Ramen and stir to coat with the margarine. Cook on Medium heat until the rice/noodles start browning, stirring frequently. Once this is has started to brown, carefully add water. Steam will raise so be careful not to get burned. Add seasoning packet from Top Ramen and stir. Simmer for 12-15 minutes or until the rice mixture is tender. Remove from heat and stir.
  • Serve hot.

This flavorful Jamaican seasoned rice is easy to prepare with long grain brown rice, callaloo, ackee, cabbage, pumpkin, carrot, peas, carrot in a seasoned coconut broth.

2 tablespoons coconut oil
1 medium onion finely chopped
3 cloves garlic minced
1 green onion
1/2 medium red bell pepper
2 sprigs fresh thyme or 1/2 teaspoon dried thyme leaves
1/4 teaspoon ground allspice or 6 berries
1 small tomato chopped
1 medium carrot diced
1 cup pumpkin or butternut squash peeled and diced
1 cup cabbage or bokchoy chopped
1 cup callaloo chopped
1 15-ounce can coconut milk
4 cups vegetable broth or 2 vegan bouillon plus 4 cups water
1 Scotch Bonnet pepper or 1/4 teaspoon cayenne pepper
1/4 cup sweet corn kernels
1/4 cup green peas
1 (15-ounce) can ackee drained
Salt to taste

Steps:

  • Heat oil in a large pot on medium-high heat. Add onion, garlic, green onions, red bell pepper, thyme, and allspice. Cook stirring constantly until onion is soft, about 3 minutes.
  • Add tomatoes, carrot, pumpkin, cabbage, callaloo, brown rice and stir.
  • Add coconut milk, vegetable broth, and top with Scotch bonnet pepper. If using vegetable broth instead of vegan bouillon then you want to season with salt to taste now. It should actually have enough salt that when you taste it, it should taste how you want the finished rice to taste because the rice will absorb some of the flavors as it swells.
  • Cover pot and bring to a boil, reduce heat to simmer for 45 minutes.
  • Gently stir in sweet corn, green peas, ackee, cover the pot and cook for 5-10 minutes or until rice is tender.
  • Fluff with a fork, add additional cooked vegan protein and serve.

Sushi rice is the heart of sushi and the vinegar should add a tartness to the rice and give a nod to the humble beginnings of sushi before it became what we know it as today. This is a simple, straightforward recipe for basic sushi vinegar and sushi rice. There are countless variations with differing amounts of salt and sugar and other additions which flavor the seasoned vinegar chefs call sushi-su. Different vinegars affect the flavor of the finished sushi and vinegar recipes vary by region. This one contains a multi-purpose version for sushi-su that can be used as a base for pickling brine or salad dressing as well.

1/2 cup rice vinegar (4% acidity)
2 tablespoons plus 1 1/2 teaspoons granulated sugar
Kosher salt
1 gram dashi kombu (about a 1-inch square), optional
1 3/4 cups uncooked white short-grain or medium-grain rice

Steps:

  • For the seasoned vinegar: Heat the vinegar in a small saucepan over medium-low heat until just steaming (it will be about 100 degrees F). Do not boil the vinegar. Remove from the heat.
  • Add the sugar and 2 teaspoons salt and whisk until dissolved. Add the dashi kombu if using.
  • For the rice: Rinse the rice in a large bowl under cold running water until the water runs clear, about 5 minutes. While rinsing, gently agitate the rice with your hands to wash off extra starch. Drain the rice in a fine-mesh colander.
  • If using a rice cooker, set to the "white rice" or "sushi rice" setting; do not use the "quick cook" setting. Add the rinsed and drained rice and 1 1/3 cups of water to the cooker, gently move from side to side to evenly settle the rice and press start. If using the stove method: Add the rinsed and drained rice and 1 1/3 cups of water to a medium pot. Gently move the pot from side to side to evenly settle the rice. Put a piece of aluminum foil over the top of the pot before placing the lid on to create a tight seal. Bring to a boil over high heat (it is best to lower the heat just before it boils, when it begins to steam).
  • Lower the heat to low and steam the rice for 25 minutes; do not open the lid. Remove the rice from the heat and let sit covered for 10 minutes more.
  • Removed the dashi kombu from the seasoned vinegar if using. Transfer the cooked rice to a large bowl and immediately sprinkle the vinegar mixture evenly over the hot rice (see Cook's Note). Using a rice paddle or spatula, gently cut the vinegar mixture into the rice and alternately fold the rice so vinegar doesn't pool on the bottom of the bowl. Make sure the vinegar is evenly distributed throughout the rice.
  • Spread the rice in a baking dish and let sit until it is cool enough to handle and sticks together in a ball, 5 to 10 minutes. Use the rice within 2 hours or refrigerate in an airtight container for up to 1 day. You can use the rice at room temperature or gently reheat it using the "warm" function on a rice cooker.

2 cups long-grain white rice, rinsed
3 cups low-sodium chicken stock
Miss Brown's House Seasoning, recipe follows
1 tablespoon unsalted butter
1 large sweet onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 cup finely chopped collard greens
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Heat 2 tablespoons of the oil in a large pot over medium-high heat. Add the rice and cook, toasting until the rice begins to smell nutty, 2 to 3 minutes. Add the chicken stock and some House Seasoning. Bring it to a boil; cover, reduce the heat to low and cook until the rice is tender and has absorbed all the liquid, 20 to 25 minutes.
  • Meanwhile, heat the butter and remaining tablespoon oil in a large skillet over medium-high heat. Add the onion, pepper, garlic and a generous pinch of House Seasoning. Cook until just tender and beginning to brown, about 5 minutes. Add the collards and cook until softened, 6 to 8 minutes.
  • Once the rice is cooked and the liquid is absorbed, turn off the heat. Remove the lid and add the onions and collard green mixture. Fluff and stir gently with a fork to combine.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
