This is a fast and easy soup that I keep on hand at all times. Great for when an unexpected guest comes over. Inexpensive and freezes well, too. Warms your belly on those chilly days of winter.

5 zucchini, sliced
5 cups water
7 cubes chicken bouillon
1 (8 ounce) package cream cheese, softened and cut into 4 sections

Steps:

  • Stir zucchini, water, and chicken bouillon cubes together in a stock pot; bring to a boil. Reduce heat to medium, place a cover on the pot, and simmer the mixture, stirring occasionally, until the zucchini is tender, about 20 minutes.
  • Drop cream cheese into the soup; cook and stir until the cheese melts, about 5 minutes.
  • Blend the soup with an immersion blender until smooth.

This is a light soup that can be served hot or cold and is perfect for zucchini lovers. I have seen other versions that call for heavy cream and more butter, but honestly, this soup doesn't need it.

4 cups zucchini, cubed
1 medium onion, diced
2 (14 ounce) cans fat-free low-sodium chicken broth
2 tablespoons margarine
1/2 cup 2% low-fat milk
1 dash nutmeg
salt and pepper

Steps:

  • Heat pot over medium heat, spray with cooking spray.
  • Add onions and cook until they start to turn translucent.
  • Add chicken broth and zucchini.
  • Increase to medium/high heat.
  • Cook 10-15 minutes, until zucchini is tender.
  • In batches if necessary, puree mixture in blender and return to pot.
  • Add butter, 1/2 cup of milk, and dash of nutmeg.
  • Season to taste with salt and pepper.

5 zucchini, sliced
2 carrots, peeled and grated
1 medium onion, diced
8 ounces cream cheese, cubed
1 garlic clove, minced
seasoning salt, to taste

shredded zucchini
onion, carmelized

Steps:

  • In a large saucepan or stockpot, cook zucchini, carrots, onions in chicken broth about 20 minutes or until vegetables are tender. Transfer to a blender or food processor in small batches; blend well.
  • Add cream cheese a little at a time and continue blending until cream cheese is melted.
  • Adjust seasonings to taste and serve hot or cold. Garnish with shredded zucchini and caramelized onions.

1 pound bulk Italian sausage
3 cans (28 ounces each) diced tomatoes, undrained
3 cans (14-1/2 ounces each) beef broth
2 pounds zucchini, diced
2 medium green peppers, diced
2 cups thinly sliced celery
1 cup chopped onion
2 teaspoons Italian seasoning
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon pepper
1/4 teaspoon garlic powder
3 cups cooked macaroni

Steps:

  • In a Dutch oven or soup kettle, brown and crumble sausage; drain. Add tomatoes, broth, zucchini, green peppers, celery, onion and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-1/2 hours or until vegetables are tender. Add macaroni; heat through.

This soup is so easy... but so good. A friend gave it to me years ago so I could use up the zucchini in the garden. It freezes well too for those cold winter nights..but makes a great light summer meal.Garnish with sour cream and or parmesan cheese ( I prefer the sour cream).

3 slices uncooked bacon, cut up
2 (14 ounce) cans chicken broth

Steps:

  • Put all ingredients in pot, cook on medium low heat until tender ( approximately 35-45 minutes).
  • Let cool slightly.
  • Blend soup mixture in blender.
  • Reheat.
  • Serve with dab of sour cream/ parmesan cheese or both on top.
  • One word of caution, do not fill the blender too full with hot soup, the lid will explode from heat expansion., I know I learned this the hard way.

1/4 cup margarine or 1/4 cup butter
1 cup onion, sliced
1 cup potato, diced
3 cups shredded zucchini
1/2 cup shredded carrot
1 quart chicken broth or 1 quart chicken stock
1/4 teaspoon pepper
1/4 teaspoon garlic powder
sour cream, as garnish (optional)

Steps:

  • In a 2-quart pot sauté onion and carrots in butter until onion is clear.
  • Add potatoes, zucchini, broth, pepper and garlic powder.
  • Bring to a simmer.
  • Simmer 1/2 hour or until potatoes are tender.
  • Puree all in a blender or food processor.
  • Serve hot or chilled.
  • Add a dollop of sour cream, if desired.

1 1/2-2 lbs sweet Italian sausage
1 (28 ounce) can diced tomatoes
2 (14 ounce) cans beef broth
1 -2 onion, chopped
1 green pepper, chopped
2 -3 thin sliced unpeeled zucchini (you'll have to eyeball this one, because zucchini come in so many sizes!)
2 fresh minced garlic cloves
1 tablespoon chopped dried parsley
1 teaspoon dry basil
1 teaspoon dry oregano
1 -2 cup water

Steps:

  • Fry sausage in a soup pan, drain
  • Add all other ingerdients except water.
  • Add water in a cup at a time, I add 2 cups, then if after cooking the soup looks a bit thick, I add more.
  • Reduce heat and allow the soup to simmer 2-3 hours, or until the zucchini is tender and transparent.
  • Serve with a yummy crusty Italian bread, or garlic bread!

6 sprigs fresh mint, divided

1 tablespoon cornstarch

salt and pepper to taste
1 teaspoon lemon juice, or to taste
2 sprigs fresh basil

Steps:

  • Heat 2 tablespoons olive oil in a large saucepan over medium heat and cook onion until soft and translucent, about 5 minutes. Add tomatoes and cook for 2 minutes, stirring constantly.
  • Pour water into the saucepan and bring to a boil. Add 4 sprigs of mint and zucchini. Reduce heat to low and simmer soup, covered, for 15 minutes. Remove mint.
  • Stir together cornstarch and cold water and add to the soup. Increase heat to medium and whisk cornstarch mixture so soup thickens. Season with salt and pepper. Remove from heat and set aside to cool.
  • Chill soup in the refrigerator until cold, about 2 hours. Before serving, add lemon juice and garnish with remaining mint, basil, and remaining olive oil.
