¼ cup water
1 (14.5 ounce) can chicken broth
1 cup long grain rice
1 teaspoon curry powder
½ teaspoon garlic powder
¼ teaspoon ground cinnamon
⅛ teaspoon paprika
2 pinches ground cloves
1 small onion, coarsely chopped

Steps:

  • Bring water and chicken broth to a boil.
  • Combine rice, curry powder, garlic powder, cinnamon, paprika, and cloves in a bowl; stir to mix. Add spiced rice and onion to the boiling broth. Cover and cook until rice is tender, 20 to 25 minutes.

An easy rice recipe to serve with any Indian curry dish. It's important to rinse the rice thoroughly and not skip the 30 minutes soaking time. From Cooking School India Cookbook

200 g basmati rice (7 oz)
2 tablespoons ghee
4 cardamom pods
2 whole cloves
3 black peppercorns
1/2 teaspoon salt
1/2 teaspoon saffron thread
400 ml water (14 fl oz)

Steps:

  • Rinse the basmati rice for several changes of water, until the water runs clear.
  • Leave the rice to soak for 30 minutes. Drain and then set aside until ready to cook.
  • Heat the ghee in a large heavy-based saucepan.
  • Add the cardamons, cloves and peppercorns. Fry, stirring for one minute.
  • Add the rice andstir-fry for a further 2 minutes.
  • Add theremaining ingredients to the rice mixture and reduce the heat.
  • Cover the saucepan and leave to simmer over a low heat for 20 minutes, until all the water has evaporated.
  • Transfer the rice to a large, warmed serving dish and serve hot.

¼ teaspoon saffron threads or ground turmeric
6 cups boiling water
½ cup vegetable shortening
2 medium onions, chopped
2 (1 inch) pieces cinnamon stick
4 whole cloves
1 teaspoon ground ginger
2 tablespoons ground cumin
1 teaspoon garlic powder
10 cardamom seeds
4 ½ cups long-grain white rice
1 cup plain yogurt
2 teaspoons salt

Steps:

  • Place saffron threads into boiling water, set aside to steep.
  • Melt the vegetable shortening in a large pot over medium-high heat. Stir in the onions, and cook until golden, about 5 minutes. Season with cinnamon sticks, cloves, ginger, cumin, garlic powder, and cardamom seeds. Cook for 3 to 4 minutes to release the flavor, stirring constantly.
  • Pour in the rice and cook for 10 minutes, stirring constantly. Add the yogurt, saffron water, and salt. Bring to a simmer, then reduce heat to low. Cover pot with a cloth folded into 4 layers. Place a lid over the cloth and cook until the rice is done, about 20 minutes. Remove the cinnamon sticks, cloves, and cardamom seeds before serving.

This spicy rice serves eight so is ideal if you've got friends coming over for curry

500g basmati rice
6 tbsp vegetable oil
2 tsp cumin seed
8 cloves
3 onions , chopped
3 green chillies , split lengthways, but not cut all the way through
3 bay leaves
700ml vegetable stock
250g frozen pea

Steps:

  • Wash the rice, then soak in enough cold water to cover for 15 mins. Meanwhile, heat the oil in a large pan with a lid, add the cumin seeds and cloves, then fry until fragrant. Stir in the onions, then reduce the heat and cook with the lid on for 10 mins, stirring occasionally or until soft. Add the chillies and bay leaves, then increase the heat and fry until the onions are golden.
  • Drain the rice, then add it to the onions and spices, stirring to coat the grains with oil. Cover the rice with stock and bring to a simmer. Scatter the frozen peas on top, put the lid on, then cook on a very low heat for 12-15 mins - don't be tempted to remove the lid.
  • Turn the heat off and leave, with the lid on, for another 5 mins. Lightly fluff up the rice with a fork before serving.
