Time 2h

Number Of Ingredients 15

2 ¼ pounds boneless chuck roast, trimmed and cut into 1 1/2-inch pieces
¾ teaspoon salt
½ teaspoon ground pepper
2 tablespoons canola oil, divided
1 small yellow onion, chopped
3 medium carrots, diagonally sliced into 1-inch pieces
3 stalks celery, cut into 1-inch pieces
1 tablespoon tomato paste
1 (12 fluid ounce) bottle stout beer (such as Guinness)
2 teaspoons chopped fresh thyme
4 cups low-sodium beef broth
1 ½ pounds baby Yukon Gold potatoes, halved
2 tablespoons cornstarch
2 tablespoons cold water
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish

Steps:

  • Sprinkle beef all over with salt and pepper. Heat 1 tablespoon oil in a large heavy pot over medium-high heat. Add half of the beef; cook, turning to brown on 2 or 3 sides, about 3 minutes per side. Transfer the browned beef to a bowl; repeat the process with the remaining beef and 1 tablespoon oil.
  • Add onion, carrots and celery to the drippings in the pot; cook, stirring often, until the vegetables begin to soften, about 4 minutes. Add tomato paste; cook, stirring constantly, for 1 minute. Add beer and thyme; cook, scraping the bottom of the pot to release any browned bits, until the liquid is slightly reduced, about 2 minutes. Add broth and the beef (with any accumulated juices in bowl); bring the mixture to a boil over medium-high heat. Reduce heat to medium-low; cover and cook until the beef is mostly tender, about 1 hour, 10 minutes. Stir in potatoes; cover and cook until the beef and potatoes are tender, 15 to 20 minutes.
  • Whisk cornstarch and cold water in a small bowl. Increase heat to high; add the cornstarch mixture and cook, stirring constantly, until thickened, about 2 minutes. Remove from heat; stir in parsley. If desired, garnish with additional parsley.

Time 4h30m

1 1/2 pound chuck roast (cut into 1 1/2 inch pieces or pre-cut stew meat)
1/4 cup flour
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
2 pounds Yukon Gold potatoes (halved or quartered depending on size)
1 pound baby carrots
2 tablespoons butter
1 yellow onion (diced)
3 cloves garlic (minced)
3 cans beef broth (approximately 40 ounces)
1 small can tomato paste
2 tablespoons Balsamic or red wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch (+ 2 Tbsp cold water)
1 tablespoon dried thyme
1 teaspoon dried parsley flakes
2 bay leaves
Fresh parsley (for garnish)

Steps:

  • Cut roast into 1 1/2 inch bite size chunks and place them in a gallon size resealable bag or other airtight container. Add flour, salt, and pepper. Shake bag until the meat is coated with flour.
  • Heat olive oil in a large heavy bottom skillet or pot. Add coated meat and brown each piece on all sides.

Pour all the contents of the skillet over the meat and vegetables in the crock pot. Add thyme, parsley flakes, and bay leaves.
  • Cook on low for 7-8 hours or on high for approximately 4 hours. 30 minutes before serving check the taste of the broth and add salt, pepper, or seasonings as needed. Allow to cook for another 30 minutes after adding seasonings.
  • Remove bay leaves before serving. Garnish with fresh parsley.

INSTANT POT® IRISH BEEF STEW

Instant Pot® Irish Beef Stew image

This hearty beef stew cooks in an Instant Pot®. It's full of vegetables and seasonings and has a savory sauce. I find herbs and seasonings lose their potency while under pressure, which is why I add most of them at the end.

Time 3h10m

Number Of Ingredients 14

2 tbsp olive oil
2.5 lb / 1.25 kg beef chuck (, boneless short rib or any other slow cooking beef (no bone))
3/4 tsp each salt and black pepper
3 garlic cloves (, minced)
2 onions (, chopped (brown, white or yellow))
6 oz / 180g bacon (, speck or pancetta, diced)
3 tbsp flour ((all purpose/plain, Note 3 for GF))
440ml / 14.9 oz Guinness Beer ((Note 1))
4 tbsp tomato paste
3 cups (750 ml) chicken stock/broth ((or beef broth - Note 4))
3 carrots (, peeled and cut into 1.25 cm / 1/2" thick pieces)
2 large celery stalks (, cut into 2cm / 1" pieces)
2 bay leaves
3 sprigs thyme ((or sub with 1 tsp dried thyme leaves))

Steps:

  • Cut the beef into 5cm/2" chunks. Pat dry then sprinkle with salt and pepper.
  • Heat oil in a heavy based pot over high heat. Add beef in batches and brown well all over. Remove onto plate. Repeat with remaining beef.
  • Lower heat to medium. If the pot is looking dry, add oil.
  • Cook garlic and onion for 3 minutes until softening, then add bacon.
  • Cook until bacon is browned, then stir through carrot and celery.
  • Add flour, and stir for 1 minute to cook off the flour.
  • Add Guinness, chicken broth/stock and tomato paste. Mix well (to ensure flour dissolves well), add bay leaves and thyme.
  • Return beef into the pot (including any juices). Liquid level should just cover - see video or photos.
  • Cover, lower heat so it is bubbling gently. Cook for 2 hours - the beef should be pretty tender by now. Remove lid then simmer for a further 30 - 45 minutes or until the beef falls apart at a touch, the sauce has reduced and thickened slightly.
  • Skim off fat on surface, if desired. Adjust salt and pepper to taste. Remove bay leaves and thyme.
  • Serve with creamy mashed potatoes!!

TRADITIONAL IRISH BEEF AND GUINNESS STEW

Traditional Irish Beef and Guinness Stew image

Experience the deliciously robust flavor of this world famous stew! You can make it on the stovetop or in your slow cooker.

Provided by Kimberly Killebrew

Categories     Main Course     Main Dish

Time 2h50m

Number Of Ingredients 20

6 ounces bacon (,diced)
2 pounds beef chuck
3 tablespoons all-purpose flour
2 medium-large yellow onions (,chopped)
3 cloves garlic (,minced)
4 medium firm (,waxy potatoes (e.g., Yukon Gold), cut in 1-inch pieces)
2 large carrots (,chopped in 1/2 inch pieces)
2 ribs celery (,chopped in 1/2 inch pieces)
1 large parsnip (,chopped into 1/2 inch pieces)
1 bottle ((1 pint or 16 ounces) Guinness Extra Stout)
1 cup strong beef broth
2 tablespoons Worcestershire sauce
1/4 cup tomato paste
1 tablespoons dried and ground porcini mushrooms ((optional and not remotely traditional, but oh so amazing))
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 bay leaves
Salt and pepper to taste

Steps:

  • Cut the beef across the grain into into 1-inch pieces. Sprinkle with some salt, pepper and the flour and toss to coat the pieces. Set aside.
  • Fry the bacon in a Dutch oven or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
  • Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
  • Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes. Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes. Return the beef and bacon to the pot along with the remaining ingredients and stir to combine. (**At this point you can transfer everything to a slow cooker if you prefer. Follow the remaining steps and then cook on LOW for 6-8 hours or on HIGH for 3-4 hours.)Bring it to a boil. Reduce the heat to low, cover and simmer for 2 hours. Add salt and pepper to taste.
  • Serve with some crusty country bread or Irish soda bread. This soup is even better the next day.

  • If you stew meat doesn’t already come cut up, cut it at this time. Pat it dry with a paper towel. Season with salt and pepper. Also, chop your onion, and mince the garlic, set aside.
  • Heat a large, heavy-bottomed stew pot, or Dutch oven, with a tight fitting lid, over medium heat. Heat 1 tablespoon of the oil. Add 1/3 of the beef chunks to the skillet. Sear the meat for 2 to 3 minutes on one side, flip, and sear for another 1 minute. Remove the beef to another dish. Repeat, until the remaining beef is seared. NOTE: you don’t want to add all the beef at once, otherwise it will overcrowd the pan, and the beef will steam. I seared mine in three batches. Only use the second tablespoon of oil if the pan gets dry.
  • once all the beef has been seared, and removed from the pan, add the onion and a little kosher salt. Sauté the onions for 3 minutes, or until they begin to look tender. Add the garlic and sauté for 1 more minute.
  • Melt the butter and add the rice flour, or all purpose flour, and cook the flour for 1 to 2 minutes, or until the flour looks lightly browned.
