1 teaspoon grated orange zest
1 cup orange juice
1/3 cup honey
1 lemon, scrubbed, thinly sliced and seeded
1 cinnamon stick
12 dried apricots, diced
1/2 cup dried cherries
1 tart apple, peeled, cored and chopped
1 1/2 cups fresh pineapple chunks
splash brandy

Steps:

  • Stir together orange zest, orange juice, honey, lemon and cinnamon stick in a nonreactive saucepan.
  • Stir in apricots and dried cherries, and heat over medium-low heat. When mixture simmers, remove it from heat, and set it aside to cool to room temperature, about 30 minutes.
  • Place fruit mixture into a large bowl, and stir in apple, pineapple and brandy. Serve immediately, or chill before serving.

2 cups water
3/4 cup sugar
3/4 cup orange juice concentrate
3/4 cup lemonade concentrate
1 (20 ounce) can pineapple tidbits, drained
2 medium firm bananas, cut into slices
1 1/2 cups watermelon, chunks
1 1/2 cups green grapes
1 1/2 cups quartered strawberries
1 1/2 cups cubed peaches
2 kiwi, peeled, quartered and sliced

Steps:

  • In a small saucepan, bring water and sugar to a boil, stirring constantly. Remove from heat and stir in orange and lemonade concentrates. In a large bowl, combine the fruit. Add juice and mix well.
  • Place about 1/2 cup fruit mixture in a 5-oz disposable cups. Top each with four kiwi pieces. Cover. Freeze until firm.
  • Cups may be frozen up to 1 month. Remove from freezer about 1 3/4 hours before serving.

1 can frozen orange juice
1 cup water
1 cup sugar
2 tablespoons lemon juice
3 medium bananas
1 (16 ounce) package frozen strawberries
1 can mandarin orange
1 can crushed pineapple

Steps:

  • In large bowl prepare pineapple juice concentrate according to package directions.
  • Add orange juice concentrate, water, sugar, lemon juice and fruit.
  • Spoon 3/4 cupful into each plastic cup.
  • Place cups in pan and freeze.
  • Remove from freezer 40-50 minutes before serving.
  • Or place in microwave for approximately 15-20 seconds prior to serving.
