Yield 2 pounds or 10 to 12 (4-inch) sausage links

Number Of Ingredients 7

1 1/2 teaspoons fennel seed
2 teaspoons kosher salt
1 1/2 teaspoons black pepper
1 tablespoon chopped parsley leaves
2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
5 feet of 36 millimeter collagen casings (do not allow to get wet at any time)
Shortening, to lubricate nozzle of stuffer

Steps:

  • Toast fennel seed in medium sized, heavy saute pan over medium heat, constantly moving seeds around in pan until they start to turn light brown, about 5 minutes. Set aside to cool. Once cool, grind seeds and combine with salt, pepper, and chopped parsley in medium mixing bowl. Add pork and blend thoroughly. Refrigerate for 1 hour. Using the fine blade of a grinder, grind the pork. After lubricating stuffer or stuffing attachment with shortening, load casing onto attachment, clipping end with a clothespin. Stuff meat into casings, trying to avoid air pockets. After stuffing is finished lay out on counter and tie off end. Pinch and twist to form 4-inch sausages. Wrap in parchment paper and refrigerate for 2 to 3 hours. Store in refrigerator for use within 2 to 3 days or freeze for up to 3 months. If freezing, wrap in aluminum foil. If using immediately, saute over medium heat in a heavy saute pan with 1/4-inch of water. Bring water to boil, put on lid and cook for 10 minutes. Remove lid and continue cooking over medium heat, turning every 2 to 3 minutes until golden brown. Sausage should reach an internal temperature of 150 to 156 degrees F.

2 (14 ounce) cans Italian-style stewed tomatoes, chopped, undrained
2 cups water
3 teaspoons beef bouillon granules
2 celery ribs, chopped
3 tablespoons dried onion flakes
1 teaspoon italian seasoning
1/2 teaspoon garlic powder
0.5 (28 ounce) jar spaghetti sauce
1 (15 ounce) can great northern beans
1 (4 ounce) can tomato paste
4 -5 Italian sausages, pre-cooked
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste

Steps:

  • Place water, beef boullion, onion flakes, stewed tomatoes, celery, Italian seasoning, garlic powder, spaghetti sauce in a large sauce pot or soup pot. Bring to boil and simmer until celery is tender. Meanwhile, cook sausage, cut into slices and set aside. Add tomato paste and beans to soup base. With hand blender (or in regular blender), puree most of the soup mixture until thick. leave some chunks of tomato whole. Add sausage pieces, salt and pepper to taste. Serve with crusty bread, croutons and top with parmesan cheese.

20 Italian sausages
4 large green peppers, thinly sliced
1/2 cup chopped onion
1 can (12 ounces) tomato paste
1 can (15 ounces) tomato sauce
1 cup water
1 tablespoon sugar
4 garlic cloves, minced
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon salt
20 sandwich buns
Shredded mozzarella cheese, optional

Steps:

  • In a large Dutch oven, brown sausages a few at a time; discard all but 2 tablespoons drippings. Saute peppers and onion in drippings until crisp-tender; drain. , In the same pan, combine the tomato paste, tomato sauce, water, sugar, garlic, basil, oregano and salt. Add the sausages; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. Serve on buns. Top with cheese if desired.

One of my earliest and most vivid food memories was when my uncle Bill would make his famous dried Italian sausage every Christmas Eve. They'd be fried after Midnight Mass and served on bread with roasted red peppers. This fresh version was inspired by those. If you can manage not to eat them right away, letting them dry for a day or two really deepens the flavor, and firms up the texture as well, in true Uncle Billy fashion.

3 pounds pork shoulder
4 cloves garlic
1 ounce kosher salt, divided
2 tablespoons whole fennel seeds, toasted
1 teaspoon anise seed
2 teaspoons freshly ground black pepper
2 teaspoons red pepper flakes
1 teaspoon ground cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried marjoram
½ teaspoon ground coriander
½ teaspoon ground mustard
¼ teaspoon ground allspice berries
1 tablespoon white sugar
2 tablespoons cold water
sausage casing, soaked in water until soft

Steps:

  • Cut pork shoulder into cubes. Place in a bowl and refrigerate while preparing the other ingredients.
  • Grind garlic with a pinch of salt in a mortar to make a paste. Add fennel, anise, and black pepper. Bruise spices lightly with a pestle to release the flavors. Add red pepper flakes, cayenne pepper, oregano, marjoram, coriander, mustard, allspice, sugar, and a splash of water. Stir to combine.
  • Add the spice paste to the pork cubes. Mix thoroughly by hand. Add the remaining salt. Cover and refrigerate until flavors meld, 8 hours to overnight.
  • Process the cold pork through a meat grinder on the slowest speed.
  • Push a casing onto the stuffing tube of your meat grinder. Feed the sausage meat through the filling tray. Run the meat through the casing on the slowest speed until all the casing is used up. Tie casing at the end into a knot. Pinch and twist the meat to create links if desired.
  • Place sausage onto a wire rack set over a sheet pan. Refrigerate uncovered for 24 hours.
  • Preheat a charcoal grill for medium heat. Separate the links and grill them until browned, about 5 minutes per side.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

This is one of the few recipes we have from my husband's mother. I have no clue why "bisque" is in the title, as that is traditionally a milk/cream based soup and there isn't a bit of that in it. It is one of our favorites and company has liked it, too. I'm putting it here because the strip of paper it was written on almost 30 years ago, is getting a bit tattered! Also, we usually double this recipe, as it freezes really well. This is also a great recipe to use up the leaves of your celery stalks. The leaves have a sharper flavor than the stalk does, which add to this dish.

1 tablespoon olive oil
1 lb sweet Italian sausage
1/2 cup onion, chopped
28 ounces tomatoes, diced
2 potatoes, diced (3 c.)
1/4 cup parsley, flat leaf, chopped
1 cup celery, diced
2 tablespoons celery, leaf chopped
2 cups beef stock
1 bay leaf
1/2 teaspoon thyme (or to taste)
1/4 teaspoon black pepper (or to taste)
1 tablespoon lemon juice (or to taste)
1 tablespoon salt (or to taste, and held in reserve)

Steps:

  • Heat a 4 quart pot, and add the olive oil. On Medium heat, brown the sausage, breaking up the clumps. (If your sausage is fatty, you may need less oil.) Add onion and sauté another 5 minutes or until the onion is translucent.
  • Add next 10 ingredients, tomatoes through lemon juice, and bring to a boil. Reduce the heat and simmer, uncovered, about 40 minutes or until potatoes are tender.
  • Add more lemon juice and the salt as needed.
  • Serve with a crusty bread. Freeze the left overs, if there are any.

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
  • Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
  • Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.
