Perfect for tea parties, this is quick and easy! This recipe is from In the Royal Manner : Expert Advice on Etiquette and Entertaining from the Former Butler to Diana, Princess of Wales.

12 slices brown bread (or bread of choice)
2 tablespoons butter, softened
6 ounces strawberry jam (or other favorite jams-you may mix it up if you like and try different kinds)

Steps:

  • Cut the crusts from bread, then lightly spread each slice with the butter.
  • Spread six slices with jam, and then sanwich them together with the remaining buttered bread.
  • Using a round pastry cutter, stamp out four circles from each sandwich.
  • Arrange on a serving plate and serve as soon as possible.

From Beranbaum's 'Rose's Christmas Cookies' book, this makes a TON of tiny ginger cookies! Great for holiday parties and open houses. I'd made these as part of a cookie tray for our holiday house tour supporting the historic district in which I live. It takes a while to pipe out all the cookies, but you can get LOTS on one sheet. They last for months in an airtight container - I had mine in plastic zip bags. Times are estimates. Makes at LEAST 25 dozen tiny chip-like cookies.

1 1/2 cups all-purpose flour
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup light brown sugar, firmly packed
1 large egg
1/4 cup unsulphured molasses (preferable Grandma's)
12 tablespoons butter, softened

Steps:

  • In a medium bowl, sift together the flour, ginger, cinnamon, cloves, baking soda and salt; Whisk to mix evenly.
  • Cream together brown sugar, egg, molasses and butter.
  • On low speed, beat in flour mixture until well blended.
  • Scrape mixture into freezer bag, close securely, and cut off small corner; Pipe 1/8 teaspoons dots about 1” apart on greased cookie sheet.
  • Bake at 325F about 5 minutes or until browned.
  • Cool on sheets 3 minutes, then on rack.
  • Keep them separate so they do not stick to each other.
  • Stores in an airtight container several months.

1 can tomato soup
3/4 cup apple cider vinegar
1 teaspoon prepared mustard
1/2 cup salad oil
1 cup sugar
salt and pepper

Steps:

  • To prepare the marinade, Combine ingredients in a saucepan and then heat until boiling.
  • Stir until sugar is dissolved.
  • When the marinade is cooled, combine with vegetables and chill for approximately 30 minutes.
  • Serve as a relish, side dish or over fresh greens.

  • Ackee & Saltfish. Jamaica’s national dish is a bit of an oddball. Made in part with the yellow flesh of boiled ackee (a round, reddish fruit that originated from West Africa) sautéed with salted codfish, onions, tomatoes, chilis and various spices.
  • Coconut Drops. Sticky, sugary coconut drops are a go-to when your sweet tooth starts making demands. About the size of the palm of your hand and the texture of peanut brittle, coconut drops are often homemade and available for a quick bite in grocery shops, general stores, and markets.
  • Fish and Festival. We cannot stress this enough. Special diets notwithstanding, you cannot leave Jamaica without indulging in a big plate of fish and festival!
  • Run Down or Dip and Fall Back. Rest assured you won’t be doing a military drill after ordering a classic run dung. Instead, you’ll get a bowl of savoury, creamy, and fragrant fish stew made from large pieces of cod or mackerel, yams, tomatoes, and onions cooked in coconut milk.
  • Curry Goat. Another iconic Jamaican dish that is served almost everywhere on the island. Curry was introduced to Jamaica by Indian immigrants who came to work on the sugar plantations.
  • Oxtail. Whether made into stew or marinated with jerk sauce, Jamaican oxtail dishes are local favourites. Although rich and meaty, oxtails are incredibly tough and filled with cartilage.
  • Pepper Pot Soup. A classic creole-style soup made with callaloo, a mix of chopped leafy greens, mainly amaranth. Pepper pot comes in different variations and can be served without meat ingredients.
  • Gizzada. Also known as pinch-me-round, these mouth-tinglingly sweet tarts with pinched crust are stuffed with grated coconut and nutmeg fillings.
