2 pints strawberries, with stems if possible
1 1/2 cups semi-sweet chocolate chips (or milk chocolate chips)
2 tablespoons corn syrup
6 tablespoons butter

Steps:

  • Wash strawberries and pat dry.
  • Place on paper towels until they reach room temperature.
  • Melt chocolate chips, corn syrup and butter in a double boiler, stirring occasionally.
  • Remove from heat and dip each strawberry into chocolate, coating 2/3 of strawberry.
  • Allow excess chocolate to drip off into pan.
  • Place stem side down on waxed paper covered baking pan or cookie sheet.
  • Refrigerate until set, about 15-20 minutes.

16 large fresh strawberries with leaves
½ cup brandy-based orange liqueur (such as Grand Marnier®)
1 pound bittersweet chocolate, chopped
2 tablespoons shortening
2 tablespoons heavy cream
¼ cup brandy-based orange liqueur (such as Grand Marnier®)
1 (1 ounce) square chopped white chocolate

Steps:

  • Rinse strawberries and dry thoroughly. Use a syringe or clean marinade injector to inject about 2 teaspoons of brandy into each berry. Place them on a baking sheet, and refrigerate for about 30 minutes.
  • In a metal bowl over a pan of simmering water, combine bittersweet chocolate and shortening. Stir occasionally until melted and smooth. Stir in heavy cream and 1/4 cup of brandy. Place white chocolate in a separate bowl, and when the dark chocolate has melted, place the bowl of white chocolate over the pan of simmering water, stirring occasionally until smooth. Be sure to remove from heat as soon as it is mostly melted, white chocolate can be sensitive.
  • Dip strawberries into chocolate, and let the excess drip off into the bowl before placing on waxed paper to set. When the strawberries have all been dipped in chocolate, dip a fork into the white chocolate, and drizzle back and forth over berries to stripe.

6 ounces bittersweet chocolate, chopped
1/2 cup sweetened condensed milk
1/3 cup Kahlua
2 pints strawberries, cleaned and dried
1/2 cup whipping cream (optional)

Steps:

  • In a double boiler, melt chocolate over simmering water.
  • Don't let the bottom of the bowl touch the water.
  • Stir in the milk and remove from the heat.
  • Add the Kahlua and whisk until smooth.
  • Cool until thickened.
  • Wash and rinse the strawberries.
  • Dry them thoroughly and set aside.
  • After the chocolate sauce is cooled, dip the strawberries and enjoy.
  • The whipped cream is for dipping after the chocolate.
  • This recipe goes very well with pineapple slices or champagne (my personal favorite!).

My friends & I used to make this to drink on hot summer nights - great grown-ups icecream shake! I add the Baileys to taste, 1/2c is just an approximation - depends whether the girls are in a good mood or not! For Aussies & Kiwis you can substitute the chocolate for 8 regular toffee pops or Tim-Tams.

5 scoops vanilla ice cream (I use a large scoop)
2 1/2 cups whole milk
12 large strawberries, hulled & chopped in half
1/2 cup dark chocolate, roughly chopped
1/2 cup Baileys Irish Cream
1/2 cup Kahlua

Steps:

  • Put the chocolate & milk in the blender & pulse until the chocolate is only slightly chunky (i.e. you won't choke when you swallow it).
  • Add the strawberries, icecream, Baileys & Kahlua & pulse until well combined.
  • Serve straight away with long spoons (as this can be quite thick - depending on the icecream you may need to add a little extra milk).

8 ounces cream cheese (can be slightly reduced fat)
2 tablespoons Kahlua (or equivalent)
1 tablespoon maple syrup
2 -4 tablespoons brown sugar (satisfy your sweet tooth (I use 2)
6 tablespoons heavy cream
8 cups strawberries, hulled
4 tablespoons caster sugar
2 teaspoons maple syrup
2 teaspoons balsamic vinegar
1/4 cup pecans, chopped and toasted (or more)
8 sprigs of fresh mint (optional)

Steps:

  • For the Kahlua cream, put the ingredients (except the heavy cream) in a food processor. Process until combined, scraping down sides as needed. Add the cream and process again briefly. Refrigerate until needed.
  • If strawberries are different sizes, cut the largest ones in half. Otherwise leave whole.
  • When you are ready to make the berries and pecans, preheat oven to 350 degrees. *If you decide not to roast the berries, you can stir the berry ingredients together and put them in the fridge to marinate for a few hours. and skip steps 5 and 6.
  • Chop pecans. Spread them on a baking tray. Toast them in the oven for about 8 minutes. Cool.
  • Put berries in an oven-proof pan (such as glass) on a sheet of baking paper. Sprinkle with castor sugar, maple syrup and balsamic vinegar. Stir well.
  • Roast strawberries in oven for 15 minutes, shaking the pan or stirring every 5 minutes.
  • Dish the berries into bowls and spoon over any pan juices. Serve immediately, topped with a good dollop of Kahlua cream. Garnish with toasted pecans. Add mint sprigs (if desired).

3 cups confectioners' sugar
GLAZE:
1/4 cup butter, cubed

Steps:

  • In large heavy saucepan, melt butter over medium-low heat; stir in cocoa until blended. Whisk a small amount of hot mixture into egg yolk; return all to the pan, whisking constantly. Cook, stirring constantly, until mixture thickens and a thermometer reads 160°, 2-3 minutes. Remove from heat. Stir in cracker crumbs, confectioners' sugar and vanilla. Press into a greased 13x9-in. pan., For filling, in a large bowl, combine butter and Kahlua. Stir in confectioners' sugar. Spread over crust. Refrigerate until set., For glaze, in a microwave, melt butter and chocolate; stir until smooth. Spread over filling. Refrigerate until set. Cut into bars.

24 -36 medium strawberries
1 cup semi-sweet chocolate chips
2 tablespoons heavy whipping cream or 2 tablespoons Kahlua
4 ounces cream cheese, room temperature
1/4 cup powdered sugar

Steps:

  • Wash your berries,cut off stems and hollow out a bit to resemble a small cup.
  • Place chocolate chips and cream or Kahlua into a small bowl and nuke for 30 seconds on high.If not melted continue for 10 seconds each time until melted.
  • Set aside until cooled just a bit.
  • In a separate bowl,beat cream cheese and powdered sugar until fluffy.
  • Add the chocolate mixture to cream cheese mixture and beat until combined.
  • Put the finished mixture into a Ziploc bag and fill those strawberries up. Heap the chocolate onto the top a bit.
  • Put them into the fridge for at least an hour and they last up to 24 hours -- if you can keep your hands off of them for that long. :).

2 tablespoons grated orange zest
1 teaspoon ground cinnamon
1 (12 ounce) package mini chocolate chips
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with cooking spray; dust with flour.
