4 lemons
1.5 cup water
4.25 cup sugar
0.5 6 ounce package (1 foil pouch) liquid fruit pectin

Steps:

  • Finely shred enough lemon peel to make 1 tablespoon. Squeeze juice from lemons to make 3/4 cup. Combine peel, juice, and water; set stand 10 minutes. Strain to remove any pulp and peel; measure 2 cups juice mixture.
  • In a Dutch oven, combine the 2 cups lemon juice mixture and the sugar. Cook over high heat, stirring constantly, until mixture comes to a full rolling boil that cannot be stirred down. Quickly stir in pectin. Return to a full rolling boil; boil for 1 minute, stirring constantly. Remove from heat. Quickly skim off foam with a metal spoon.
  • Ladle into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids. Process in a boiling-water canner for 5 minutes (start timing when water returns to boil). Remove jars; cool on a wire rack. Makes 4 half-pints.

  • In a saucepan, combine sugar, corn starch and salt.
  • Stir in water gradually.
  • Cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Continue to cook at a boil for 1 minute.
  • Remove from heat and add lemon peel and butter.
  • Stir in lemon juice and food coloring.
  • Allow to cool before using.
  • *If the filling is too soft, refrigerate.

1 ounce glucose
1/4 teaspoon cayenne pepper
12 ounces dark chocolate, chopped
2 ounces butter, room temperature
1/2 recipe Lemon Jelly, recipe follows
30 chocolate shells
Melted dark chocolate, for sealing
1/2 ounce pectin
23 ounces sugar
20 ounces lemon juice
2 ounces glucose
1/4 ounce citric acid

Steps:

  • In a medium saucepan, bring the cream, glucose, and cayenne to a boil. Pour over the dark chocolate. Stir until emulsified. Add the butter. Allow to cool to 80 degrees F. Place in a pastry bag.
  • Pipe a small amount of the cold Lemon Jelly into a chocolate shell. Pipe the ganache over the jelly. Allow to set overnight in a cool place.
  • Seal the ganache with melted dark chocolate. Refrigerate for 10 minutes, then turn out of the mold.
  • Mix the pectin with the sugar. In a medium saucepan, bring the lemon juice to a boil. Add the sugar and pectin mixture. Add the glucose. Boil to 225 degrees F. Remove from the heat and add the citric acid. Allow to cool, and then refrigerate.

  • Cook and stir 1 minute longer until thickened.
  • Remove from the heat; cool to room temperature.
  • Unroll cake; spread cooled filling to within 1 inch of edges.
  • Roll up again.
  • Cover and chill for 1-2 hours before serving.
  • Sprinkle with powedered sugar before serving, if desired.
  • Store in the refrigerator.

  • In 1 1/2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in water. Cook and stir over medium heat until mixture thickens and boils. Boil and stir 1 minute longer; remove from heat.

Steps:

  • To make lemon curd:.
  • In 2 quart saucepan combine butter, sugar, lemon juice and egg yolks.
  • Cook over lowest heat possible, stirring constantly until mixture is thick enough to evenly coat the back of a spoon.
  • Do NOT let your mixture boil, the eggs will curdle.
  • Pour into small bowl and stir in lemon peel.
  • Refrigerate until ready to use.

  • Heat oven to 400°F.
  • Coat bottom and sides of 11x17 in jelly roll pan with 1 tbsp of melted butter.
  • Line pan with wax paper, allow to extend over the sides.
  • Brush paper with remaining butter and sprinkle with 2 tbsp of all purpose flour, tipping to spread evenly.
  • Turn pan over and tap to remove extra flour.
  • With beater or wire whisk beat sugar and eggs together until light and fluffy.
  • A little at a time, sift self rising flour over eggs.
  • Fold gently together with rubber spatula, do NOT overmix.
  • Pour batter into lined pan and spread evenly.
  • Bake on middle rack for 10 minutes or until top is a light golden color and has began to lift from the sides of the pan.
  • Remove from oven and dust evenly with superfine sugar.
  • Turn it out on a sheet of wax paper and peel away paper.
  • Spread lemon curd mixture on top and gently, starting at edge, roll into a cylinder.
  • Cool.
  • To serve, cut into 1/2 inch slices.

  • Beat the eggs with a rotary beater until thick, about 4 minutes. Gradually beat in 1 cup sugar. Beat in all at once water and vanilla.
  • Sift together and beat in all at once flour, baking powder and salt. Beat just until smooth. Pour into prepared pan.
