FRESH PEAR CAKE
This is the recipe that I like to use with the fresh pears that I get from my trees in late August. It's also lower in fat and cholesterol than most regular cakes.

Steps:
- Combine the pears and the sugar and let stand for one hour.
- Preheat oven to 325 degrees F (165 degrees C). Spray a 10 inch bundt pan with non-stick cooking spray.
- Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture.
- Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves. Stir in the pear mixture. Pour batter into the prepared bundt pan.
- Bake at 325 degrees F (165 degrees C) for 1 hour and 10 minutes. Remove from oven ant let cool on a wire rack for 10 minutes before removing form pan.

FABULOUSLY SWEET PEAR CAKE
This is a recipe of my great-great grandmother's. It is wonderfully sweet and fresh. It's so delicious, it never lasts long!

Steps:
- Peel and slice pears thin. Mix sliced pears with white sugar, brown sugar, and nuts and let sit for one hour. After sitting puree pear mixture in a blender.
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch pan.
- By hand stir in until just blended; the flour, salt, and baking soda. Add dry ingredients to pear mixture and add oil, vanilla and eggs. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour and 15 minutes.

- Mix all cake ingredients by hand in order given.
- Pour in a greased 9 x 13 inch pan or springform pan.

- Pour over cake and return to oven for 4 minutes.

- Preheat oven to 350 degrees F.
- Butter a 8x8-inch pan.
- Sift together flour, baking powder, salt.
- In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
- Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
- Add milk alternatively with the dry ingredients, starting and ending with flour.
- Pour half of the batter into baking pan.
- Cover with pears, then pour the remaining half of the batter, covering the pears completely.
- Bake for 35-40 minutes, or until toothpick inserted comes out clean.
- Let cool completely.

- Preheat oven to 350 degrees Fahrenheit.
- Grease a bundt pan.
- Mix all ingredients, except currant jelly, with an electric mixer.

PEAR POUND CAKE
Steps:
- Preheat the oven to 350 degrees. Butter an 8 x 5inch loaf pan. In a mixing bowl, cream 6 tablespoons of the butter with the sugar and the vanilla until light and smooth. Sift together the flour, salt, baking powder, and nutmeg and toss together until evenly mixed. Add half of the flour mixture and the egg to the butter mixture and mix well. Add the rest of the flour mixture and the buttermilk, beating them in well. Fold in the pears and the pecans. Scoop the batter into the prepared pan and bake for about 45 minutes, or until the center is firm and golden and a skewer inserted into the center comes out clean. Cool on a rack for 10 minutes, then turn out of the pan and finish cooling. When cool, invert onto a serving plate and cut into slices.
PEAR CAKE
Steps:
- Preheat the oven to 350 degrees. Grease a 9-inch-round layer-cake pan with butter and sprinkle with the bread crumbs. Turn the pan upside down and tap it or shake it lightly to get rid of all the loose crumbs.
- In a bowl, beat together the eggs and milk. Add the sugar and salt and continue beating until well combined. Add the flour, mixing thoroughly with the other ingredients.
- Peel the pears, slice in half and scoop out the seeds and core. Cut lengthwise into thin slices. Add to the bowl, mixing them well with the other ingredients; the batter will be very thick.
- Spoon the batter into the pan, leveling it off with the back of a spoon or a spatula. Dot the surface with the butter.
- Bake in the top rack of the preheated oven for 45 minutes, or until the top is lightly golden.
- Remove it from the pan as soon as it is cool and firm enough to handle. It may be served lukewarm or cold.
LIGHT PEACH UPSIDE-DOWN CAKE
This makes a beautiful cake. I made it this week for a lunch at work. The recipe comes from the February/March 2002 Taste of Home's Light and Tasty magazine. I made some minor adjustments to reduce the amount of sugar.

Steps:
- Preheat oven to 350°F.
- Spray a 9 inch round baking pan with nonstick cooking spray and set aside.
- Drain peaches, reserving 2 tablespoons of the juice.
- Pat peaches dry between layers of paper towels and cut the peaches in half lengthwise.
- In small bowl, combine the brown sugar, cinnamon, nutmeg, reserved juice and 1 tablespoon of the melted butter.
- Spread into prepared baking pan and top with peaches.
- In a large bowl, combine the flours, sugar, baking powder, baking soda and salt.
- In separate bowl, combine the buttermilk, egg or egg substitute, vanilla and remaining butter.
- Add to dry ingredients and stir until blended well.
- Spoon over peaches and bake in preheated oven for 30-35 minutes or until toothpick inserted near center comes out clean.
- Cool for 10 minutes before inverting onto serving plan.
- Best served warm.
- Please note: Cooking time includes the 10 minute standing time.

- Coat a 10-in. fluted tube pan with cooking spray and sprinkle with flour. In a large bowl, beat the sugar, yogurt, oil, egg whites and egg until well blended. Combine the flour, baking soda, cinnamon, salt, nutmeg and cloves; gradually beat into yogurt mixture until blended. Stir in pears and pecans., Transfer to prepared pan. SOUR CREAM PEAR CAKE
Fresh pears are abounding, especially on my trees! Why not use some in a very moist fresh pear cake that everyone will love! I took this to a party last night and everyone was asking for the recipe as it was disappearing fast from the plate. Perfect as a coffee cake too!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Generously butter a 9 inch Bundt or tube pan. Sprinkle cinnamon sugar into the pan, and tilt to coat the buttered surface. Shake out the excess.
- In a medium bowl, stir together the cake flour, baking powder, baking soda and salt. Set aside.
- In a separate bowl, cream together 3/4 cup of butter and white sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each. Stir in the vanilla and sour cream, mixing just until blended. Gradually stir in the flour mixture until fully incorporated. Fold in the chopped pears using a rubber spatula.
- In a small bowl, stir together the brown sugar, cinnamon, ginger and pecans. Spoon 1/3 of the batter into the prepared pan. Sprinkle with 1/3 of the pecan mixture. Repeat layers two more times, ending with the pecan mixture on top.
- Bake for 50 to 60 minutes in the preheated oven, until the top of the cake springs back when lightly pressed, or a knife inserted into the crown comes out clean. Cool the cake in the pan for 15 minutes, then run a knife around the outside edge of the cake. Carefully invert onto a cooling rack. If the cake won't come out of the pan, tap it firmly with a knife on the bottom and sides of the pan. Set aside to cool completely.
- When cool, transfer the cake to a serving plate using two spatulas. Drizzle with the caramel ice cream topping before serving.
