No-Churn Mango-Coconut-Lime Ice Cream image

Provided by Food Network Kitchen

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 7

3/4 cup thawed frozen mango pulp
1/3 cup sweetened condensed milk
Grated zest and juice of 1 lime
1/4 cup confectioners' sugar
1/4 teaspoon coconut extract
1 5-ounce can unsweetened coconut cream, chilled

(There may be a few small chunks of coconut cream.)
  • Fold about half of the whipped cream into the mango mixture with a rubber spatula until combined, then fold in the remaining whipped cream until no white streaks remain.
  • Spoon the mixture into a freezer-safe 9-by-5-inch loaf pan or 2-quart baking dish. Cover with plastic wrap and freeze until firm and scoopable, at least 6 hours or overnight. Let soften about 20 minutes at room temperature before scooping.

JACK FRY'S KEY LIME PIE ICE CREAM

Jack Fry's Key Lime Pie Ice Cream image

This recipe looks so delicious! It was given to the Courier Journal Newspaper by a chef that worked at Jack Fry's Restaurant in Louisville, KY and I just happened to come across it by chance! I do not have an ice cream freezer yet myself, so I don't know how long the passive cooking (freezing) time would be. I wanted to save this recipe for the day when I do get an ice cream freezer...

Provided by Stacky5

Categories     Frozen Desserts

Time 30m

Yield 8 serving(s)

Number Of Ingredients 6

1 1/2 cups heavy whipping cream
6 large egg yolks
1 (15 ounce) can sweetened condensed milk
1/2 cup bottled key lime juice (NOT regular lime juice, but specifically KEY LIME juice)
17 ounces jar marshmallow cream
4 crumbled graham crackers

Steps:

  • In a heavy saucepan, bring cream to a simmer. Place the egg yolks in a bowl.
  • Slowly beat the hot cream into the egg yolks. Pour the mixture back into the pan, and place over low heat. Stir constantly with a wooden spoon until the custard thickens slightly, 8 to 10 minutes. Be careful not to let the mixture boil or eggs will scramble. Remove from heat.
  • Pour hot custard through a strainer into a large, clean bowl. Allow the custard to cool slightly. Then stir in the sweetened condensed milk and key lime juice. Cover and refrigerate until cold.
  • Stir the cold custard well, then freeze in your ice-cream freezer according to manufacturer's instructions.
  • Fold the marshmallow cream and crumbled graham crackers into the ice cream when it is finished.

NO-CHURN LABNEH AND LIME ICE CREAM WITH GRANOLA

No-Churn Labneh and Lime Ice Cream With Granola image

Tangy labneh gives this ice cream serious Froyo vibes. With the crushed granola, you could almost eat it for breakfast.

Provided by Sarah Jampel

Yield Makes about 2 quarts

Number Of Ingredients 7

½ cup labneh (Lebanese strained yogurt) or 1 cup plain whole-milk Greek yogurt
¾ cup (75 g) granola
1 (14-oz.) can sweetened condensed milk
Zest and juice of 2 limes
¾ tsp. kosher salt
1½ cups heavy cream
Special Equipment: 2 layers of cheesecloth

Steps:

  • If using Greek yogurt, set a fine-mesh sieve over a bowl; line with cheesecloth. Place yogurt in sieve and let drain in refrigerator 4 hours (you should have ½ cup); discard drained liquid in bowl.
  • Pulse granola in a food processor to break up a bit. (Or roll up in a kitchen towel and gently crush with a rolling pin.)
  • Whisk labneh (or strained yogurt), condensed milk, lime zest and juice, and salt in a medium bowl until smooth.
  • Using an electric mixer, beat cream in a medium bowl, starting on low speed and gradually increasing to medium-high as it thickens, until billowy and stiff peaks form, about 4 minutes.
  • Add a dollop of whipped cream to labneh mixture and mix in with a rubber spatula (this is just to lighten it so that the next stage-folding-is easier). Add remaining whipped cream and fold in, running spatula down sides and along bottom of bowl, then lifting up through center and over top while rotating bowl to integrate without deflating, until very few streaks of labneh mixture remain. Fold in granola; scrape ice cream base into a loaf pan that's at least 8½x4½". Cover with plastic wrap or an airtight silicone lid and freeze until solid, at least 8 hours.
  • To serve, transfer loaf pan to refrigerator and let ice cream soften 10 minutes before scooping into bowls.
  • Do Ahead: Ice cream can be made 1 week ahead. Keep frozen.

LOW FAT KEY LIME ICE CREAM (NO CHURNING)

Low Fat Key Lime Ice Cream (no Churning) image

This "ice cream" was actually an accident--I was making a pie filling and put it in the freezer instead of the fridge, and it came out better than when in the pie! After a few modifications, this is what it has become. I'm sure you could do it with any flavor juice (orange, lemon) but it's so good with lime that I've never tried anything else! The recipe as is comes out very tart (like a good Key Lime pie); the amount of lime juice can be adjusted to taste.

Provided by chirospasm

Categories     Frozen Desserts

Time 4h5m

Yield 8 serving(s)

Number Of Ingredients 4

12 ounces frozen limeade concentrate, thawed
2 tablespoons key lime juice or 2 tablespoons lime juice
14 ounces sweetened condensed milk
12 ounces fat-free cool whip, thawed

Steps:

  • In large bowl, combine limeade with lime juice and stir well.
  • Add sweetened condensed milk, and stir until smooth and uniform.
  • Fold in cool whip until smooth, being careful not to stir to the point that the cool whip breaks down.
  • Pour into individual bowls or one large freezer-safe container.
  • Freeze four hours or until set.

KEY LIME WITH GRAHAM CRACKER GELATO

Key Lime with Graham Cracker Gelato image

Tangy, tart, and refreshing, with a bit of graham cracker crunch-just like the pie. One of Ciao Bella's most popular recent flavor creations, this started as a seasonal offering for our chef customers and became wildly successful in our gelaterie. The popularity of Key Lime with Graham Cracker Gelato was a bit of a surprise because its flavor is decidedly tart, while Americans tend to have sweeter palates. There's always a fine line between creating what chefs appreciate and what customers will like, but in this case everyone was happy. This flavor is so popular that in less than a year it became our number-one retail gelato flavor in New York City.

LEMON LIME ICE CREAM

Lemon Lime Ice Cream image

The French "creme anglaise" method of ice-cream making gives ice cream a rich, voluptuous flavor and texture.

Provided by Martha Stewart

Yield Makes 2 quarts

Number Of Ingredients 6

1/2 cup milk
3 1/2 cups heavy cream
1 cup sugar
2 large unblemished lemons
3 unblemished limes
6 egg yolks

Steps:

  • In a nonreactive pan, combine the milk, 1/2 cup of the cream, the sugar, and the grated zest of 1 lemon and 1 lime. Heat the mixture, without letting it boil, just until the sugar is dissolved, about 8 to 10 minutes. Set the pan aside for 10 minutes.
  • Whisk together the egg yolks, and slowly whisk in milk-and-cream mixture. Return to pan and cook over a low flame, stirring with a wooden spoon, until mixture thickens to a custardlike consistency, about 8 minutes. Do not let it get too hot or the eggs will curdle.
  • Pour through a strainer into a large nonreactive bowl. Add the grated zest of the remaining lemon and 2 limes. Let stand for 10 minutes. Squeeze all the lemons and limes; add 3/4 cup of the combined juices and the remaining 3 cups cream. Chill, then pour into an ice-cream maker and freeze according to manufacturer's instructions.
