I am addicted to baked tofu!! Thank you Mollie Katzen and The Enchanted Broccoli Forest for the excellent marinade recipe! The tofu never lasts long enough to make it into a stir-fry at my house. I end up eating it by itself. I love it hot or cold. And of course absolutely everything to do with this recipe can be adapted to taste or what you have in the kitchen. Enjoy!

1 (16 ounce) package firm tofu or 1 (16 ounce) package extra firm tofu, in water
3 -4 tablespoons soy sauce
1 -2 minced garlic clove, to taste
1 tablespoon fresh grated ginger, to taste
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 -2 teaspoon honey (optional) or 1 -2 teaspoon sugar (optional)
1 tablespoon olive oil

Steps:

  • Drain tofu and cut into 1" cubes.
  • Mix all other ingredients together except olive oil.
  • Pour marinade over tofu and cover.
  • Refrigerate overnight or longer (I've left it for 3 nights).
  • Lightly grease baking pan or sheet with olive oil.
  • Arrange tofu in single layer on sheet, making sure not to forget the garlic and ginger from the marinade dish.
  • Bake at 350 degrees for 50-60 minutes, flipping tofu at least once during the process, until brown and slightly crispy.

This marinated tofu is hands down the best tofu I've ever tasted! It's super flavorful, simple to make, and very versatile. I like to serve it on a bed of rice with stir fried vegetables, or even sliced in sandwiches. Perfect addition to salads, too!

16 ounces extra-firm tofu
4 tablespoons low sodium soy sauce
3 tablespoons rice vinegar
1 tablespoon pure maple syrup
1 teaspoon sesame oil
2 garlic cloves, minced
1 tablespoon fresh grated ginger, OR 1/2 teaspoon dried ginger
2-3 tablespoons neutral oil, such as canola

Steps:

  • Quick press the tofu: Cut the tofu into cubes. Place them evenly on a flat surface such as a cutting board lined with paper towels or a clean towel. Cover with a layer of paper towels, set a baking sheet on top and then something heavy, like a large book or cast iron skillet. Press like this for 15 minutes while you make the marinade.
  • Make the marinade: In a small bowl, combine the soy sauce, rice vinegar, maple syrup, sesame oil, garlic and ginger.
  • Marinate the tofu: Place the pressed tofu pieces in a shallow dish. (In the photos above I doubled the recipe, so I used a 9 x 13 inch dish, but for one batch you will need a smaller dish, such as an 8 x 8 inch.) Pour the marinade over the tofu. Let it marinate for at least 1 hour, covered, in the refrigerator. If you want to leave it overnight, it will be even more flavorful.
  • Cook the tofu: In a large skillet, cast iron preferred, add a few tablespoons of a neutral oil, such as canola oil and heat over medium-high heat. You can omit the oil if needed, but you will need a very good non-stick pan so the tofu pieces don't stick. Remove the tofu pieces from the marinade and add to the pan. Do not discard the marinade sauce. Fry the tofu until golden brown on each side.
  • Once the tofu pieces are browned, pour any leftover marinade sauce into the pan with the tofu, and stir to coat. This makes the tofu even more flavorful! The tofu will quickly absorb the sauce. Remove from heat, and serve with rice and stir fried vegetables such as baby bok choy, mushrooms and carrots.
  • Store leftover tofu in a covered container in the refrigerator for 3-4 days. It's also good cold, as a high protein snack or in sandwiches and salads.

Steps:

  • Wrap the tofu in paper towels and press under a heavy skillet for 15 minutes. If it's still pretty wet, replace the towels and press it again.
  • Mix the soy sauce, vinegar, and oil in a container that is small but big enough for all the tofu.
  • Cut the tofu in half inch slices and place in marinade.
  • Turn it over after about 15 minutes.
  • Preheat oven to 350°F.
  • Wipe some of the oil from the marinade on your baking sheet.
  • Arrange the tofu slices in one layer and bake for 15 minutes.
  • Turn them over and bake another 15 minutes.

1 pound of tofu, extra firm
1/2 cup of soy sauce
1/4 cup of water
1/2 cup of brown rice syrup
2 tablespoons of brown rice vinegar
2 cloves of garlic, minced
2 teaspoons of grated ginger
2 tablespoons of toasted sesame oil
5 bunches of scallions, sliced thinly
1 tablespoon of toasted sesame oil
3 tablespoons of white miso
1 teaspoon of mirin or white wine

10 green scallion parts, blanched

Steps:

  • Preheat oven to 450 degrees.
  • Slice tofu into 1/4-inch thick slices. Places slices into a shallow baking dish with the above marinade ingredients. Be sure to coat each slice of tofu well. Marinate for at least 15 minutes or up to 1 hour. Place the tofu slices on a lightly oiled baking sheet and bake 30 minutes or until deep golden brown and crispy on the outside. The marinade can be saved to use again. Be sure to boil the marinade before each additional use.
  • Heat the toasted sesame oil on a skillet and add the scallions. Saute for 3 to 5 minutes on medium heat until they become soft and becoming translucent. Turn the heat down to low and add the remaining ingredients except the blanched scallion greens) incorporating the scallions into the miso. Heat through for 2 minutes, adding a little water if necessary.
  • Make Asandwiches@ with the tofu slices, slathering one piece of tofu with the miso scallion mixture and placing another piece of tofu on top. Cut the sandwiches in half for hors d=oeuvres size or leave whole for main course. If desired, place a piece of nori on top of the tofu Asandwich@. Tie the piece together to form a package with the blanched scallion ribbons. Serve at room temperature.

1 tablespoon unsalted butter, melted
1 tablespoon maple syrup
1/2 teaspoon curry powder
1/2 teaspoon garlic powder

1 block extra-firm tofu, well-drained and cut into 1-inch cubes
Kosher salt and freshly ground black pepper
Serving suggestions: cooked brown rice, steamed broccoli and cubed mango

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, mix together the ketchup, butter, maple syrup, curry powder, garlic powder and onion powder. Add the tofu and gently toss to combine, taking care not to break up the pieces, and season with salt and pepper.

SPICY BAKED TOFU

This healthy, protein-packed tofu dish is filled with flavor. This is a spicy dish. I don't find it overly spicy but I like heat in my faux-meat! I served this with wilted garlic spinach and a fresh salad on the side. Remember that tofu is a concentrated protein, so you don't need as much tofu as you would meat. This dish is great reheated! If you want to be really creative, try grilling your tofu for an even more delicious result!

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.

Yonan says the freezing creates a much more satisfying texture to the tofu, and it also absorbs more of the marinade. The baked tofu can be eaten right away with veggie sides, or it can be cooled and used in salads, stir-fries or other dishes. Freezing time for the tofu is not included in the prep time.

14 ounces extra firm tofu
1 tablespoon toasted sesame oil
1 tablespoon low sodium soy sauce

  • Serve immediately or cool and refrigerate for up to a week in an airtight container.

1 lb firm tofu
1/4 cup soy sauce
1/2 cup water
2 teaspoons freshly grated gingerroot
2 large garlic cloves

Steps:

  • Drain tofu and press for thirty minutes to remove excess water.
  • To prepare marinade, mix the soy sauce and water, then add ginger, garlic, and cumin. 1 tsp cayenne pepper can be added for a spicy kick. Put marinade into a medium-sized, flat plastic container for marinating.
  • Slice tofu into 6 equal-sized "cutlets" and lay flat, side-by-side, in marinade. The container should be small enough so that the marinade covers at least half of the tofu.
  • Cover and refrigerate for 4 hours, turning the tofu pieces over halfway through.
  • Cover a pan with tin foil and place marinated tofu on foil, brushing extra marinade over each piece.
  • Bake at 350 for 20 minutes, remove and flip tofu, then bake for an additional 20 minutes, or until the edges appear golden brown.
  • Serve warm or refrigerate and serve chilled later.
