4 small boneless skinless chicken breasts (1 lb.)
1 can (15.5 oz.) pinto beans, rinsed
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup TACO BELL® Thick & Chunky Salsa
1/4 tsp. black pepper
2 cups instant white rice, uncooked
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
1/4 cup chopped fresh cilantro

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
  • Add beans, broth, salsa and pepper to skillet; stir. Bring to boil.
  • Stir in rice and VELVEETA; top with chicken. Cover; cook on medium-low heat 5 min. or until rice is tender. Sprinkle with cilantro.

3 cups cooked diced chicken
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 teaspoon oil
1 pound Velveeta cheese
1 can (10 ounce size) Mexican-style stewed tomatoes or Rotel brand mixed tomatoes and chilies
1 can (10.75 ounce size) cream of mushroom soup
1 can (10 ounce size) cream of chicken soup
1 cup sour cream
1 large bag nacho-flavored tortilla chips, crushed
salt
black pepper
garlic powder
paprika
1 cup Cheddar cheese

Steps:

  • Saute onion and bell pepper in oil. Mix onion, bell pepper, Velveeta, soups, sour cream. Heat on stovetop or in microwave. Stir to blend and season to taste with salt, pepper and garlic powder. Layer in a large baking dish Alternating the crushed chips and the chicken, with the sauce mixture. Sprinkle the cheddar and paprika on top. Cover in foil, bake at 350 degrees F for 45-60 minutes. Be sure to check it to make sure its not burning since it is cheesy and ovens vary.

1/2 lb Velveeta Mexican cheese, cubed
4 skinless chicken breasts, cubed
2 cups fat free sour cream
4 cups instant rice
3 1/2 cups water
3 chicken bouillon cubes
1 tablespoon extra virgin olive oil

Steps:

  • Coat bottom of skillet with oil.
  • Add chicken. Cook approximately 10-15 minutes on med-hi heat or until chicken is white clear through. Set aside.
  • Boil the water with bouillon until cubes are dissolved, then add rice. Remove from heat and cover 5 mins or until rice is set. (If there is any excess water, this is okay. Leave in for mixing).
  • Transfer chicken and rice to a large stock pot. Add velveeta cubes and sour cream. Mix well. Over medium heat, stir frequently to prevent sticking on the bottom until cheese is no longer lumpy. Serve hot. Refridgerate leftovers. REHEAT WELL.

lg. 3 or 4 boneless chicken breasts, cooked and cut up into one-inch pieces
1 can cream of chicken soup
1/4 large stick Velveeta, cut up in cubes
1 package Velveeta Shredded Cheese

Steps:

  • Preheat oven to 350°F. Combine everything except shredded Velveeta.
  • Spread in Large GLASS baking pan sprayed with cooking spray. Top with Shredded Velveeta and cover with foil.
  • Bake for 30 minutes and then remove foil and bake 5 to 10 more minutes.

1 ½ cups converted long-grain white rice
½ large white onion, sliced
1 (24 ounce) jar salsa
1 (4 ounce) can chopped green chilies
1 (1 ounce) packet dry taco seasoning mix, divided
2 skinless, boneless chicken breast halves
1 (15 ounce) can black beans, drained

Steps:

  • Pour the chicken stock into a slow cooker, and stir in the rice, onion, salsa, green chilies, and half the taco seasoning. Rub the remaining taco seasoning over the chicken breasts, and place into the cooker. Place the lid on the cooker, and set to high setting.
  • Cook until the rice is thickened and most of the liquid has been absorbed, about 3 hours. About 20 minutes before serving time, turn the cooker to warm setting. Remove the chicken breasts, and slice them. Stir the chicken and the black beans into the slow cooker. Return lid to cooker, allow the beans to heat, and serve.

1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons canola oil
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup chicken broth
1 cup salsa
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon chili powder, optional
1/4 teaspoon pepper
1-1/2 cups uncooked instant rice
