HOMEMADE HOT DOG SAUCE BY GRANDPA BOB

Provided by Pamela Shank

Categories     Sandwiches/Burgers

Time 2h20m

Yield 24 servings

Number Of Ingredients 16

1 lb ground chuck (80/20)
1 lb ground sirloin
2-3 cups cold water
2 teaspoons chili powder
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons kosher salt
2 teaspoons coarse black pepper
2 teaspoons onion powder
2 teaspoons dried garlic flakes
2 teaspoons dried onion flakes
1/4 to 1/2 teaspoon red pepper flakes
1 teaspoon garlic salt
1 cup ketchup
1 Tablespoon Worcestershire sauce
1 cup brown sugar

Steps:

  • Place ground meats in a large dutch oven. Add enough water to just cover the meat. Bring to a boil, uncovered. Stir frequently to break meat into small pieces. Reduce heat to a simmer.
  • In a small bowl, combine the chili powder, paprika, cumin, salt, black pepper, onion powder, garlic flakes, onion flakes, red pepper (START with lesser amount), and garlic salt. Stir into the meat after it comes to a boil.
  • Cook meat for 1 1/2 hours on a low simmer, uncovered, stirring frequently.
  • Remove from the heat. Remove grease with a large spoon. Leave some on to maintain consistency. More will cook off when it is warmed up. We leave about 1/4 cup.
  • In a medium size bowl, combine the ketchup, Worcestershire sauce, and brown sugar. Stir into the meat, and continue to simmer over a low heat for 30 minutes, stirring frequently. Taste to see if any spices need adjusted, such as adding more salt and the rest of the red pepper. Allow these to simmer the last few minutes.
  • Stir well prior to serving. Makes enough for 24 regular size hot dogs.
  • Freezes well
  • ***Best if made a few hours or a day prior to serving to allow flavors to blend well.

Ospidillo Cafe Michigan Hot Dog Chili Sauce No. 14 image

A regional hot dog sauce with a little heat. It does not lack for flavor and this recipe makes a nice big batch for family reunions, etc. My personal favorite.

Provided by Bone Man

Categories     Sauces

Time 2h30m

Yield 40 serving(s)

Number Of Ingredients 15

2 lbs ground chuck
16 ounces tomato sauce
2 cups water
1/4 cup barbecue sauce (K.C. Masterpiece, or hickory smoked)
2 tablespoons dried onion flakes
1 1/2 tablespoons chili powder
1 tablespoon dried ancho chile powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce
3 medium onions, chopped
1 chicken bouillon cube (Maggi cube)
1/4 cup fresh parsley, chopped fine
1/4 cup prepared yellow mustard
1 tablespoon honey

Steps:

  • Brown and drain the ground chuck and put into a large cooking pot.
  • Add all ingredients, except for one cup of water and the bouillon cube. Bring the sauce to a slow boil over low heat.
  • Mash the bouillon cube in the cup of water and add to the sauce. (If you do not have a Maggi bouillon cube, just use 1 1/2 regular chicken bouillon cubes).
  • Allow the sauce to simmer, covered, over very low heat, stirring occasionally, for 2 hours.
  • Serve over hot dogs.
  • My personal preferences for ingredient brands are Heinz mustard and Tupelo honey but any brands will do.

DETROIT CONEY HOT DOG SAUCE

Detroit Coney Hot Dog Sauce image

To make the Classic Detroit Coney Dog - Bun, pork & beef dog, yellow mustard, this sauce, white onion, It freezes well, so make a big batch.

Provided by Ambervim

Categories     < 4 Hours

Time 1h30m

Yield 1 Batch

Number Of Ingredients 17

1 lb ground chuck
1/2 lb ground beef heart
3 tablespoons all-purpose flour
1 large onion, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
4 teaspoons chili powder
1 teaspoon paprika
1 teaspoon cumin, ground
1 teaspoon cinnamon
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper, ground
1 1/2 cups chicken broth (or beef)
4 ounces tomato paste
2 teaspoons cider vinegar
1/2 teaspoon hot pepper sauce

Steps:

  • Mix the chili powder, paprika, cumin, oregano, salt, and pepper in a small bowl.
  • In a large skillet over medium-high heat, cook the ground beef and beef heart for 5 minutes or until brown. Crumble it as it cooks so it is brown all over.
  • Pour the meat into a strainer and drain the fat into a small sauce pan. Discard all but 3 tablespoons of fat.
  • Whisk the fat and flour together over medium heat. This makes a roux. Cook it, stirring frequently, until it turns amber, about 15 minutes. Then whisk in the chicken stock, tomato paste, and vinegar. Simmer on low while you --
  • Add the onion, garlic, and red bell pepper to the ground meat in the skillet and cook for another 5 minutes.
  • Push everything aside and add the spices and cook in contact with the bottom of the pan for 2 minutes, stirring so the spices don't stick to the bottom. This "blooms" the flavor. Then mix them in with the meat.
  • Add the roux mix ingredients and stir it inches Simmer for at least 15 minutes, an hour is better.
  • Pour 1/3 of the mix into your blender and puree it until it is pasty, and mix it back inches If you prefer you can use a stick blender to get the mix thick.
  • Taste and add more of whatever you want.

MICHIGAN HOT SAUCE

Michigan Hot Sauce image

Recreate the Northern New York roadside stand staple in your own kitchen! This sauce is a key ingredient for an Upstate New York Michigan, which is a red hot (usually a Glazier hot dog) on a New England Style Roll, with meat sauce, mustard, and onions.

Provided by Jennifer Morrisey

Categories     Main Courses

Time 3h15m

Number Of Ingredients 8

1 29-ounce can of tomato sauce
2 pounds hamburger
4 tsp. chili powder
2 tsp. dried onion
2 tsp. garlic powder
3-4 Tablespoons hot sauce, such as Frank's
2 tsp. black pepper
2 tsp. cumin

Steps:

  • Mix all ingredients together, except meat.
  • Add meat raw and mash with a potato masher while the sauce is cooking. It is important to mash the meat while it is raw, to get the consistency right! Michigan sauce, traditionally, is a very thick sauce that doesn't have meat chunks.
  • Simmer 2-3 hours, stirring and mashing with the potato masher occasionally.

  • For the chili: Add the beef, onions, and all the spices right on the top. I do this because when the burger cooks, it sets the spices right into the meat. It's my favorite way to cook beef.
  • Once the beef is cooked, add the tomato sauce, vinegar, and ketchup to the pan. Do not drain the beef. Stir to combine. Put a medium simmer for around 5 minutes. It does not take long to thicken up.
