I got this recipe out of a Taste of Home Summer Appetizer magazine I bought. It looks fabulous and I want to serve it for a get together I am having.

1 (16 ounce) package mixed frozen berries, thawed and chopped
2 medium peaches, diced
2 medium kiwi fruits, peeled and diced
3 tablespoons sugar
2 tablespoons lemon juice
1 1/2 teaspoons lime zest
cinnamon tortilla chips
8 flour tortillas (7 inches)
3 tablespoons butter, melted
3 tablespoons sugar
1 1/2 teaspoons ground cinnamon

Steps:

  • In a large bowl, combine the first six ingredients; set aside.
  • Brush both sides of tortillas with butter. Combine the sugar and cinnamon; sprinkle over both sides of the tortillas. Cut into six wedges.
  • Place on ungreased baking sheet. Bake at 400 degrees for 6-8 minutes on each side or until crisp.
  • Drain salsa; serve with tortilla chips.

1/2 teaspoon ground cardamom
Five 10-inch flour tortillas
Cooking spray
2 Granny Smith apples, grated
1 Bartlett pear, small-diced
Juice of 1 lime
3 tablespoons mint preserves
8 ounces strawberries, chopped
4 ounces raspberries, chopped
1 ounce bourbon
2 sprigs fresh mint, chiffonade

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the sugar and cardamom in a small bowl. Spray the tops of the tortillas with cooking spray and sprinkle with the cardamom sugar. Cut each tortilla into 10 to 12 wedges and place on a cookie sheet in a single layer. Bake until crispy and golden, about 12 minutes. Remove from the oven and let cool.
  • Meanwhile, make the salsa by combining the apples, pear, lime juice and preserves in a medium bowl. Fold in the strawberries, raspberries and bourbon. Cover and chill in the refrigerator for an hour to allow all the flavors to marry.
  • Before serving, garnish the salsa with the mint. Serve with the tortilla chips.

For all of the ingredients... if you really like that ingredient, add more of it. If you hate one ingredient, don't add it. Have some peppers on hand? Toss 'em in. Go wild!

1 (20 ounce) can pineapple tidbits (you could probably put in less pineapple)
2 mangoes
1/2 white onion
1 (15 ounce) can black beans, drained & rinsed
0.5 (15 1/4 ounce) can corn
8 -10 strawberries
1/2-1 jalapeno
1 tomatoes
1/2-1 bunch cilantro
2 -3 tablespoons lime juice
salt

Steps:

  • Dice or chop up everything but the beans, pineapple tidbits, corn (since they're already 'chopped') and lime juice (obviously).
  • Combine all the fruit and veggies in a big bowl. If you are planning to chill the salsa, add the strawberries right before serving.
  • Add the cilantro, lime juice and salt. Stir it up.
  • Break out the chips and enjoy!

2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar

Steps:

  • In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
