BOURBON BARBECUE PORK RIBS

Salt and pepper
No-Cook Low Carb Bourbon Barbecue Sauce, recipe follows
29 ounces no sugar added tomato sauce
6 ounces no sugar added tomato paste
2 ounces bourbon
2 tablespoons white vinegar
2 tablespoons liquid smoke
1 tablespoon Worcestershire sauce
1/2 tablespoon hot sauce
3/4 cup sugar substitute (recommended: Splenda)
1/4 cup brown sugar substitute, optional (recommended: Sugar Twin brand)
2 tablespoons red onion, finely chopped
1 small clove garlic, minced
1/4 teaspoon garlic powder
1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon onion powder

Steps:

  • Preheat oven to 290 degrees F.
  • Season the ribs liberally with salt and pepper on both sides and place in a proportionate size deep roasting pan. Add 1 cup barbecue sauce and 2 cups water over the ribs until almost completely submerged; if not add a bit more sauce and water or use a smaller pan. Cover tightly with aluminum foil, place on center rack of the oven, and bake for about 2 hours or until meat is almost falling off the bone. Remove, drain liquid immediately, and coat cooked ribs with fresh barbecue sauce. It is best to make the ribs a day ahead up to this point. Refrigerate overnight and bring to room temperature before grilling.
  • Preheat a grill to high. Place ribs on grill and grill for just a few minutes on each side. Serve.
  • Combine sauce ingredients in a bowl and whisk well to combine. Reserve.

2/3 cup granulated sugar
6 tablespoons unsalted butter, melted
1/3 cup packed light brown sugar
2 large eggs
4 ounces semisweet or bittersweet chocolate, chopped and melted
1/4 cup bourbon
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
2 tablespoons cocoa powder
Pinch of kosher salt
One 9-inch chocolate graham cracker crust
2 cups heavy cream
1/4 cup confectioners' sugar
2 tablespoons bourbon
1 tablespoon vanilla extract or vanilla bean paste
1/4 teaspoon cream of tartar
Chocolate shavings, for garnish

Steps:

  • For the pie: Preheat the oven to 350 degrees F.
  • In a large mixing bowl, mix together the granulated sugar, butter and brown sugar with a mixer or a whisk. Beat in the eggs and mix until well incorporated, about 1 minute. Stir in the melted chocolate, bourbon and vanilla. In a small bowl, sift together the flour, cocoa and salt; fold the flour mixture into the egg mixture. Pour into the pie shell and bake until set, 30 to 40 minutes. Let cool to room temperature.
  • For the whipped cream: In a stand mixer, whisk the heavy cream on medium speed until peaks begin to form. Add the confectioners' sugar, bourbon, vanilla and cream of tartar. Continue to whisk until the cream begins to hold medium firm peaks.
  • Spread the whipped cream over the pie and garnish with chocolate shavings.

MISSISSIPPI BEEF SHORT RIBS

Recently the internet went wild for a delicious Mississippi pot roast wherein beef is braised in a slow cooker with butter, pepperoncini, and packets of powdered au jus gravy and ranch dressing. Guessing that the MSG from the latter two ingredients explained all the rage, I decided to mimic the flavors using from-scratch seasonings and boneless short ribs. It came out really well, especially when served over mashed potatoes with a garnish of parsley.

2 ½ pounds boneless beef short ribs
salt and freshly ground black pepper to taste
1 pinch cayenne pepper
1 tablespoon olive oil
1 large onion, sliced
⅓ cup sliced fresh mushrooms
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon freshly ground black pepper
1 teaspoon dried dill weed
½ teaspoon dried rosemary
½ teaspoon dried thyme
2 tablespoons finely grated Parmigiano-Reggiano cheese
1 tablespoon all-purpose flour
⅔ cup chicken broth
1 tablespoon soy sauce
½ teaspoon Worcestershire sauce
6 whole pepperoncini peppers
¼ cup unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Season short ribs with salt, pepper, and cayenne. Heat oil in a pan over high heat. Add short ribs and sear until well browned, 3 to 5 minutes per side. Transfer beef to a baking dish.
  • Reduce heat to medium-high and add onion and mushrooms to the pan. Season with salt. Saute until mushrooms are golden brown, about 5 minutes.
  • Meanwhile, combine kosher salt, garlic powder, onion powder, pepper, dill, rosemary, thyme, and Parmesan cheese in a small bowl. Sprinkle seasoning mixture evenly over the beef.
  • Sprinkle flour over the onion and mushrooms. Stir to coat and cook for 2 minutes. Pour in chicken broth, soy sauce, and Worcestershire sauce. Stir and bring to a boil; remove from heat. Pour mixture over the beef and cover with pepperoncini. Place butter on top. Cover baking dish with foil.
  • Bake in the preheated oven until meat is fork-tender and falls apart easily, about 2 1/2 hours.
  • Spoon sauce from the bottom of the pan onto the beef to serve. Skim off excess fat as desired.

2 to 3 tablespoons grapeseed oil, for searing
1 whole Beef Striploin, trimmed with some fatback remaining
Bourbon Mushroom Sauce, recipe follows
5 tablespoons butter, divided
1 tablespoons garlic, minced
1 cup cremini mushrooms, sliced
1 cup onion, finely diced
4 tablespoons all-purpose flour
1/4 cup bourbon
3 cups beef stock
Salt
1 tablespoon cracked black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 300 degrees F.
  • Add oil to saute pan. Season meat on all sides with salt and pepper. Sear meat on all sides, about 2 to 3 minutes each side. Place meat on sheet tray with a rack. Roast meat for 30 to 40 minutes. Crank oven up to 450 degrees F. and roast for an additional 15 to 20 minutes until crust forms and meat is nicely colored. When done, allow to rest before slicing. In a small bowl reserve juice for Bourbon Mushroom Sauce.
  • In a large saucepan over medium-high heat, add 4 tablespoons butter. Add garlic, mushrooms and onion and cook for 4 to 5 minutes until nicely Add flour and mix well to form pasty roux.

2 pints vanilla ice cream
2 tablespoons Bourbon
1 chocolate crumb pie shell
1/2 cup chopped pecans
2 pints coffee ice cream
sweetened whipped cream or Cool Whip
4 ounces unsweetened chocolate, coarsely chopped
1/2 cup brown sugar
1/4 cup granulated sugar
3/4 cup heavy cream
1/4 cup light corn syrup
2 tablespoons butter
1/2 teaspoon vanilla extract
3 tablespoons Bourbon

Steps:

  • Soften the vanilla ice cream in the refrigerator for about 20 minutes, then spread it evenly in the prepared crust.
  • Top with half the bourbon fudge and half the pecans and freeze for about an hour.
  • Soften the coffee ice cream, and spread over the now firm first layer.
  • Mound the coffee ice cream in the center as necessary.
  • Top with the rest of the fudge and pecans.
  • Decorate with whipped cream and cover loosely.
  • Freeze overnight or at least four hours and serve with warm fudge sauce To make the sauce combine first 5 ingredients in a microwaveable bowl and microwave about 3 minutes, whisking every minute or so.
  • When the mixture has thickened somewhat, whisk in last three ingredients.
