A great shrimp appetizer! Serve with crackers or toasted French bread.

1 (10.75 ounce) can condensed tomato soup
2 (.25 ounce) envelopes unflavored gelatin
½ cup cold water
6 ounces cream cheese, softened
1 cup mayonnaise
1 pound cooked shrimp
1 cup minced celery
½ cup green onions, minced

Steps:

  • Heat soup in a small saucepan or in a microwave oven.
  • In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
  • In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
  • Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.

I usually make this recipe for parties and family gatherings. It never lasts long, because folks go straight for it.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 package (8 ounces) cream cheese, cubed
1 envelope unflavored gelatin
3 tablespoons cold water
1 cup finely chopped celery
1 cup mayonnaise
3 tablespoons lemon juice
4 green onions, finely chopped
1/2 pound cooked shrimp, peeled, deveined and coarsely chopped
Lettuce leaves and additional shrimp, optional
Assorted crackers

Steps:

  • In a saucepan, heat soup and cream cheese over medium heat until cheese is melted, stirring frequently. Remove from the heat; set aside to cool., In a small microwave-safe bowl, sprinkle gelatin over water; let stand for 1 minute. Microwave on high for 40 seconds; stir. Let stand for 2 minutes or until gelatin is completely dissolved. Stir the gelatin mixture, celery, mayonnaise, lemon juice and onions into soup mixture. Fold in shrimp., Pour into a 5-cup ring mold coated with cooking spray. Cover and refrigerate for 8 hours or until set. , Invert onto a serving plate. Fill center with lettuce and shrimp if desired. Serve with crackers.

1 (10 ounce) can tomato soup
8 ounces cream cheese
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2-1 cup salad dressing (miracle whip)
6 ounces small shrimp or 6 ounces broken shrimp, chopped
1 envelope gelatin

Steps:

  • Heat soup and stir in gelatin until dissolved.
  • Add cream cheese and beat until smooth.
  • Add remaining ingredients and mix well.
  • Pour into oiled molds, I usually use small margarine tubs.
  • Chill.
  • Unmold and serve with crackers.
  • Enjoy!

Always a party favorite, and a pound of shrimp goes a long way. Fresh or pasteurized lump backfin crab can be substituted for the shrimp. It is a very low-fat appetizer, yet no one realizes it! Cooking time includes 3 hours refrigeration time. Do Not Freeze.

1 lb shrimp, fresh,peeled
1 envelope unflavored gelatin powder
1/2 cup water, from cooking shrimp
8 ounces fat free cream cheese
8 ounces fat-free thousand island salad dressing
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
2 tablespoons grated onions, including juice from grating
1 tablespoon grated red bell pepper
1/2 cup finely minced celery
3 -5 drops hot sauce (optional)

Steps:

  • Spray a 1-quart or several smaller molds with non-stick cooking spray.
  • Bring 3 cups water to boil.
  • Add peeled shrimp and simmer just until shrimp turn pink.
  • Drain, reserving 1/2 cup water.
  • Cool shrimp and finely dice.
  • Set aside.
  • Finely dice celery; grate onion and bell pepper.
  • In glass bowl, add 1/4 cup reserved shrimp cooking liquid, gelatin and cream cheese.
  • Microwave on medium-high about 1 minute.
  • Stir.
  • Repeat microwave process again for 1 more minute.
  • Stir.
  • Watch carefully and stop microwave process when cream cheese is almost, but not quite, melted as you do not want to cook it- just melt it.
  • Add remaining 1/4 cup of reserved shrimp cooking liquid and stir to make creamy mixture.
  • Cool.
  • Add shrimp and remaining ingredients to cheese mixture.
  • Stir to mix well.
  • Pour into prepared molds and refrigerate several hours until set- at least 2 hours for 1-quart mold.
  • It can be refrigerated for up to 2-3 days before serving.
  • To serve, loosen edges of mold with a knife.
  • Unmold onto a plate lined with lettuce leaves.
  • Surround with assorted crackers and a knife for spreading.
  • Or serve crackers in separate basket.

1 (8 ounce) package cream cheese
½ cup sour cream
¼ cup mayonnaise
4 (4 ounce) cans small shrimp, drained
1 ½ cups seafood cocktail sauce
1 green bell pepper, diced
4 green onions, diced
2 cloves garlic, minced
1 tomato, diced
2 ½ cups shredded mozzarella cheese
crackers

Steps:

  • In a bowl, combine the cream cheese, sour cream, and mayonnaise until well-blended. Spread into a 9x13 inch baking dish. Scatter the shrimp generously over the top of the mixture.
  • In another bowl, stir together the cocktail sauce, green pepper, green onions, garlic, and tomato.
  • Working in layers, spread a portion of the cocktail sauce mixture over the shrimp. Sprinkle with a portion of mozzarella cheese. Repeat process until all ingredients are used up, finishing with a layer of mozzarella cheese on top. Serve with assorted crackers for dipping.

1 (8 ounce) package cream cheese, softened
½ cup sour cream
¼ cup mayonnaise
3 (4 ounce) cans shrimp
1 cup cocktail sauce
2 cups shredded mozzarella cheese
1 green bell pepper, chopped
3 green onions, chopped
1 medium tomato - peeled, seeded and chopped

Steps:

  • Mix cream cheese, sour cream and mayonnaise together. Spread the mixture onto the bottom of a 12-inch round pizza pan. Sprinkle the shrimp on top of the cream cheese mixture, and then evenly pour the seafood cocktail sauce over the shrimp. Sprinkle cheese, chopped pepper, green onions and tomatoes to finish. Refrigerate until you are ready to serve.

This is a recipe that my sister, Garnet has made for years. It is really good and tasty and can be easily changed from a spoonable dip to a molded salad. Cooking time is chilling time. I decided to add a note here to encourage others to try this wonderful recipe. I recently hosted a wedding shower for my future DIL. I added 2 envelopes of Knox gelatin dissolved in about 1/4 cup of water so that the consistency would be good on Crescent Rolls for sandwiches. It was the hit of the party. Everyone loved it.

8 ounces cream cheese, softened
8 ounces mayonnaise (Hellman's or Best Foods preferred)
1 (10 1/2 ounce) can condensed cream of mushroom soup, undiluted
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon msg
1/4 teaspoon onion powder
3 dashes Worcestershire sauce
1 cup chopped celery
2 green onions, chopped (scallion style)
3 (4 ounce) cans crab (or both) or 3 (4 ounce) cans shrimp, drained but saving the liquid in a separate container (or both)
4 (1/4 ounce) envelopes unflavored gelatin, with (optional)
4 tablespoons cold water, until softened, then microwave until a few seconds to dissolve (optional)

Steps:

  • Combine the first eight ingredients in a mixing bowl and blend well.
  • IF MOLDING mix the gelatin as instructed above and add to the bowl after microwaving.
  • Add 1/2 cup of the crab/shrimp liquid to the bowl and mix.
  • Mix in the celery and onions.
  • Add the crab/shrimp.
  • Refrigerate until well chilled or molded if necessary.
  • NOTE*** You can also make this recipe with imitation crab or shrimp but the flavor will not be as strong since you will not be able to add the canning liquid.
